A toast to Yoshinobu Yamamoto, a great junior in junior high school, for winning the MVP of the World Series. This sake is from Sado Island, Niigata. It has a mild aroma, and on the palate, it tastes like a rummy, with just the right amount of gas and a clean, crisp taste. It has a refreshing citrus and sweet pear taste. It was served with hamachi sashimi and chawanmushi (steamed egg custard).

Second visit to a liquor store with a selection of sake from all over Japan. Sanuki Kuraudei" by Kawazuru, my favorite brand in Kagawa. It is as low in alcohol as beer and has a sweet and sour taste like Chibo (a lactic acid drink made by Chichiyasu). It is a sake to enjoy the taste itself, rather than the aroma or the throatfeel. It has a completely different taste from the standard "Kawatsuru. We enjoyed it with a mille-feuille hot pot of Chinese cabbage and pork belly, and sashimi of sardine.

Hiyaoroshi in autumn. I happened to pick up a bottle of hiyaoroshi at the nearest liquor store on my way home from a visit to an antenna store in Kochi Prefecture. The aroma is not that strong, and the rich flavor in the mouth has a crispness that quickly fades away. However, the sharpness changes to a mellowness after the food is served, making it a model sake for a mealtime drink. We enjoyed this sake with surumeika (Japanese common squid), tuna, horse mackerel sashimi, stir-fried eggplant with sweet and spicy soy sauce, and edamame (green soybeans), the last remnants of summer.

A sip of this wine after returning to Hiroshima for a holiday weekend. The aroma is clean, sweet and sour, like green apples and white grapes. The firm flavor of Hokkaido sake rice "Comet," which I had never tasted before, was refreshed with each sip thanks to the moderate amount of gas. The sake was more refreshing with each sip. It was served with Hokkaido shime saba (mackerel), tuna, yellowtail, salmon, squid sashimi, and chawanmushi (steamed egg custard), all of which are produced in the same Hokkaido region as the sake rice.

Tokyo sake recommended by Jay & Nobby. We took the train and bought it at Fukuhara Sake Shop in Okachimachi. (They have a wide selection and will be our go-to place in the future.) Sweet and sour aroma like apple or pineapple. There is no gassy feeling, but you can feel the acidity on the tongue. It has a clean taste and seems to go well with all kinds of food. We enjoyed it with raw katsuo sashimi, which is not often found in western Japan, and rolled egg, which became a little salty due to adding too much white soup stock.

The first drink after returning to Hiroshima for the Bon Festival was a sake from Saga. The aroma is a bit weak, but the mouthfeel is sweet and sour, like muscat, and the nose is full of sweet and sour notes. The soft gasiness of the sake relaxes in the mouth, and the taste of the rice is firm and refreshing. We enjoyed it with homemade roast beef and potato salad.

This is my second time living alone in Tokyo. Finally, I was able to get settled in and the first sake I tried was a sake from Yamanashi. It has a gentle aroma of rice, and when you put it in your mouth, the refreshing aroma reaches the back of your nose. It has a refreshing taste with a hint of citrus, and is truly a "summer" sake. We enjoyed it with sashimi of tuna, sea bream, salmon, and squid, chilled tomatoes, and edamame.

Sake received as a farewell gift for a personnel change. It was also served at the 2023 Hiroshima Summit. It has a sweet aroma and smooth taste. It has no corners at all and has a gentle and delicate taste. It was served with medium fatty tuna sashimi, grilled eggplant, and dashimaki tamago (rolled egg).

Sake bought by his wife as a Father's Day present. The ginjo aroma is light and fluffy. The taste is similarly soft and gentle, with a sense of rice and a lingering aftertaste. The taste of rice is elegant and refined, and the Yamadanishiki taste comes through later on. It is a sake that can be enjoyed lingering in the mouth for a while. We enjoyed it with ama-salted salmon and Chinu sashimi.

The first sake of March, when the weather is colder. The ginjo aroma is mild. It has a clean, dry taste. As the label says, "Aiming to be the ultimate food sake," it is not too assertive, but it is a sake that makes its presence felt. We enjoyed it with hand-rolled sushi with assorted shellfish, my second son's favorite.

Kaze no Mori on Setsubun day after a long absence. This sake is brewed with Akitsuho, a sake rice rarely seen in Hiroshima. The aroma is mild, but in the mouth it has a punchy taste with firm gas. Many people comment that it is "dry," but it has a deep flavor with a lingering aftertaste. We enjoyed it with tuna, yellowtail, salmon, and other ehomaki rolls, and pork miso soup.

This is another Kumamoto sake rarely seen in Hiroshima. It has a gentle ginjo aroma and elegant gasiness. Although it is junmai (pure rice), the sense of rice is not so strong, and the aftertaste is refreshing. It is not flashy, but it is a sake with a wide range of taste that goes well with all kinds of dishes. We enjoyed it with osechi dishes and grilled sea bream.

I received this sake from my parents' house, which is hard to get in Hiroshima. It has a mild aroma like a jijusseiki pear. It has a mild aroma like 20th century pears, a clean texture, and a slightly dry taste. It has a slightly watery taste, but that is good because it is made with natural water from the Southern Alps. It was served with a motsu nabe (hot pot) made with bonito dashi broth.

Meitama" is brewed on a trial basis every year at the Hiroshima Prefectural Food Industrial Technology Center and is not available on the market. This year, the sake was brewed with Hiroshima Prefecture's original sake rice, Moeibuki, which is resistant to high temperatures during the summer. The aroma is mild and refreshing. It is smooth and soft on the palate, with a hint of sweetness, just as the name "Moe" implies. This is an excellent product that is expected to become a regular sake rice. We enjoyed it with oden for the first time this year, a heavy favorite in winter.

Purchased before Obon vacation and opened today. The aroma is mildly sweet. There is no sense of gas, and the acidity is strong. I imagined it to be heavy because it is called Yamahai, but perhaps because of the low alcohol content, it is easy to drink. I enjoyed it with spare ribs in marmalade and vinegared cucumber and wakame seaweed.

I saw this sake on TV and was curious about it. Asahi rice, which is edible rice, is used for the premium rice. The aroma is fresh and pear-like. As the "be careful when opening the bottle" label says, there is a strong sense of gas. The taste is clean with a hint of citrus, but the full rice flavor spreads through the nostrils. We enjoyed it with sashimi of tuna and chicken grouper, Chinese vinegared ham and cucumber, and homemade gyoza.

Summer sake. It is served with a sake cup given to me by my son on Father's Day. It has a mild and natural gaseous taste. It has a refreshing taste typical of summer sake, but later a mellow rice flavor covers the nostrils. We enjoyed it with bigeye tuna sashimi, fried horse mackerel and squid, and Mugen cucumbers.

I looked for it, Tokushima sake. Purchased on a business trip to Takamatsu. Gorgeous and luscious melon aroma. The taste is reminiscent of the tropics, with hints of lychee and passion fruit. It is a sake version of Riesling, which has won a gold medal at the "Delicious Sake in a Wineglass Award". It was served with seasonal horse mackerel Nanbanzuke and simmered squid.

Sake prepared for Golden Week. It smells like sweet and sour strawberries. After the sweetness with moderate gasiness comes the rice flavor and bitterness unique to junmai sake. As the label says, it is a fresh sake perfect for early summer. It was served with sashimi (sea bream, yellowtail, tuna, squid, millet, red clam, hokki-gai, scallop) and grilled fish.
