Meitama" is brewed on a trial basis every year at the Hiroshima Prefectural Food Industrial Technology Center and is not available on the market. This year, the sake was brewed with Hiroshima Prefecture's original sake rice, Moeibuki, which is resistant to high temperatures during the summer. The aroma is mild and refreshing. It is smooth and soft on the palate, with a hint of sweetness, just as the name "Moe" implies. This is an excellent product that is expected to become a regular sake rice. We enjoyed it with oden for the first time this year, a heavy favorite in winter.

Purchased before Obon vacation and opened today. The aroma is mildly sweet. There is no sense of gas, and the acidity is strong. I imagined it to be heavy because it is called Yamahai, but perhaps because of the low alcohol content, it is easy to drink. I enjoyed it with spare ribs in marmalade and vinegared cucumber and wakame seaweed.

I saw this sake on TV and was curious about it. Asahi rice, which is edible rice, is used for the premium rice. The aroma is fresh and pear-like. As the "be careful when opening the bottle" label says, there is a strong sense of gas. The taste is clean with a hint of citrus, but the full rice flavor spreads through the nostrils. We enjoyed it with sashimi of tuna and chicken grouper, Chinese vinegared ham and cucumber, and homemade gyoza.

Summer sake. It is served with a sake cup given to me by my son on Father's Day. It has a mild and natural gaseous taste. It has a refreshing taste typical of summer sake, but later a mellow rice flavor covers the nostrils. We enjoyed it with bigeye tuna sashimi, fried horse mackerel and squid, and Mugen cucumbers.

I looked for it, Tokushima sake. Purchased on a business trip to Takamatsu. Gorgeous and luscious melon aroma. The taste is reminiscent of the tropics, with hints of lychee and passion fruit. It is a sake version of Riesling, which has won a gold medal at the "Delicious Sake in a Wineglass Award". It was served with seasonal horse mackerel Nanbanzuke and simmered squid.

Sake prepared for Golden Week. It smells like sweet and sour strawberries. After the sweetness with moderate gasiness comes the rice flavor and bitterness unique to junmai sake. As the label says, it is a fresh sake perfect for early summer. It was served with sashimi (sea bream, yellowtail, tuna, squid, millet, red clam, hokki-gai, scallop) and grilled fish.

Purchased as a souvenir for myself on a business trip to Oki Island. The aroma is moderate and the mouthfeel is refreshing. The taste of rice comes through gradually later. Although dry, it is a gentle sake that evokes the spring scenery of the island. We enjoyed it with rice cooked with white clams, a Japanese-style chicken hamburger steak, and fried tofu.

Sake from Ishikawa Prefecture to support the disaster-stricken areas, even if only a little. The ginjo aroma is youthful. It has a slightly strong acidity and a refreshing taste. For a pure rice sake, the rice flavor is not that strong. We enjoyed it with a variety of izakaya menu items such as sashimi of tuna, salmon, and sea bream, mimigauro, deep-fried tofu, and Spanish salami.

Sweet muscat-like aroma. In the mouth, it tastes like fresh melon and pear. The alcohol-free mouthfeel soaks into the body like a sports drink. We enjoyed it with pork shabu-shabu (with yuzu pon and sesame pon).

This is the last daiginjo of the "Kuromatsu Shiraga" series that I received from my parents' house on New Year's Day. (The others are "Junmai" and "Ginjo".) The aroma is mild and the throat is clean. It has a light flavor and is easy to drink without any peculiarities. We enjoyed it with ehoumaki and soba noodles on the occasion of Setsubun, a national holiday in Japan.

Strong sweet aroma like pear. In the mouth, there is a mild gasiness and a mild sweetness compared to the aroma. The riceiness is not so strong, and the taste is elegant. We served it with yose-nabe (a Japanese hot pot) with pork and shrimp in shells.

My first sake from Osaka. The aroma is sweet and elegant, as is typical of ginjo-shu. On the other hand, it has a robust, deep grain flavor in the mouth. We enjoyed it with grilled salt-crusted swordfish and a bowl of rice topped with tuna and chirimen-jako (dried young sardines).

When the bottle is opened, a "pop! and a dry sound. It has been a long time since we have had a sake with a gaseous taste. It has a slightly sweet aroma, and in the mouth it has the expected gaseous and refreshing citrus flavor. The taste is dry and seems to go well with any meal. We enjoyed it with homemade roast beef with Japanese garlic sauce.

Hiyoroshi in autumn. The aroma is like ripe pears. It is soft to the taste, but the umami of the rice follows firmly afterwards. Since the weather has cooled down, we enjoyed it with yosenabe (a traditional Japanese hot pot) and roasted ginkgo nuts.

The aroma is soft, soft and sweet. On the other hand, the taste is extremely mild and smooth. In a good sense, it is not too assertive and goes well with any meal. A fluffy, subtle melon aroma. It has a sweet rice flavor without any cloying taste, and is soft and smooth. It is simply a gentle sake. We enjoyed it with my son's Father's Day gift of grilled mackerel from Hokkaido, grilled salmon, corn kakiage and vinegared octopus (today is the first day of the summer).

A bottle that was purchased during GW but could not be opened. This is the first time to drink this sake from Chiba. The color is cloudy and the aroma is almost imperceptible. It is super dry on the palate, and has a gaseous feeling. We had it with mizutaki pork on a slightly chilly day.

GW did not go out anywhere and relaxed at home. The first bottle in such a situation was a sake with a refreshing name, perfect for May. It has a soft, sweet aroma and a rounded texture. The taste is refreshing, but the lingering aftertaste is very strong. Although it is from a prefecture without a sea, we enjoyed it with simmered kinmedai (sea bream) and natural sea bream sashimi from the Setouchi area.

A hazy, spring-like haze. The aroma is soft and sweet. Slight gas and strawberry-like sweet and sourness fill the mouth. It is a perfect sake for spring. We served it with sweet and salty salmon and gizzard with leek ponzu sauce.
