The first drink after returning to Hiroshima for the Bon Festival was a sake from Saga. The aroma is a bit weak, but the mouthfeel is sweet and sour, like muscat, and the nose is full of sweet and sour notes. The soft gasiness of the sake relaxes in the mouth, and the taste of the rice is firm and refreshing. We enjoyed it with homemade roast beef and potato salad.

This is my second time living alone in Tokyo. Finally, I was able to get settled in and the first sake I tried was a sake from Yamanashi. It has a gentle aroma of rice, and when you put it in your mouth, the refreshing aroma reaches the back of your nose. It has a refreshing taste with a hint of citrus, and is truly a "summer" sake. We enjoyed it with sashimi of tuna, sea bream, salmon, and squid, chilled tomatoes, and edamame.

Sake received as a farewell gift for a personnel change. It was also served at the 2023 Hiroshima Summit. It has a sweet aroma and smooth taste. It has no corners at all and has a gentle and delicate taste. It was served with medium fatty tuna sashimi, grilled eggplant, and dashimaki tamago (rolled egg).

Sake bought by his wife as a Father's Day present. The ginjo aroma is light and fluffy. The taste is similarly soft and gentle, with a sense of rice and a lingering aftertaste. It is as light and gentle as its name. We enjoyed it with grilled sea bream, deep-fried eggplant, and egg tofu with brightly colored sprouts grown at home.

It is the first half of Golden Week. The pleasant weather calls for a refreshing sake, so Machida Shuzo. It has a pear-like sweetness and modest gas. The taste of rice is elegant and refined, and the Yamadanishiki taste comes through later on. It is a sake that can be enjoyed lingering in the mouth for a while. We enjoyed it with ama-salted salmon and Chinu sashimi.

The first sake of March, when the weather is colder. The ginjo aroma is mild. It has a clean, dry taste. As the label says, "Aiming to be the ultimate food sake," it is not too assertive, but it is a sake that makes its presence felt. We enjoyed it with hand-rolled sushi with assorted shellfish, my second son's favorite.

Kaze no Mori on Setsubun day after a long absence. This sake is brewed with Akitsuho, a sake rice rarely seen in Hiroshima. The aroma is mild, but in the mouth it has a punchy taste with firm gas. Many people comment that it is "dry," but it has a deep flavor with a lingering aftertaste. We enjoyed it with tuna, yellowtail, salmon, and other ehomaki rolls, and pork miso soup.

This is another Kumamoto sake rarely seen in Hiroshima. It has a gentle ginjo aroma and elegant gasiness. Although it is junmai (pure rice), the sense of rice is not so strong, and the aftertaste is refreshing. It is not flashy, but it is a sake with a wide range of taste that goes well with all kinds of dishes. We enjoyed it with osechi dishes and grilled sea bream.

I received this sake from my parents' house, which is hard to get in Hiroshima. It has a mild aroma like a jijusseiki pear. It has a mild aroma like 20th century pears, a clean texture, and a slightly dry taste. It has a slightly watery taste, but that is good because it is made with natural water from the Southern Alps. It was served with a motsu nabe (hot pot) made with bonito dashi broth.

Meitama" is brewed on a trial basis every year at the Hiroshima Prefectural Food Industrial Technology Center and is not available on the market. This year, the sake was brewed with Hiroshima Prefecture's original sake rice, Moeibuki, which is resistant to high temperatures during the summer. The aroma is mild and refreshing. It is smooth and soft on the palate, with a hint of sweetness, just as the name "Moe" implies. This is an excellent product that is expected to become a regular sake rice. We enjoyed it with oden for the first time this year, a heavy favorite in winter.

Purchased before Obon vacation and opened today. The aroma is mildly sweet. There is no sense of gas, and the acidity is strong. I imagined it to be heavy because it is called Yamahai, but perhaps because of the low alcohol content, it is easy to drink. I enjoyed it with spare ribs in marmalade and vinegared cucumber and wakame seaweed.

I saw this sake on TV and was curious about it. Asahi rice, which is edible rice, is used for the premium rice. The aroma is fresh and pear-like. As the "be careful when opening the bottle" label says, there is a strong sense of gas. The taste is clean with a hint of citrus, but the full rice flavor spreads through the nostrils. We enjoyed it with sashimi of tuna and chicken grouper, Chinese vinegared ham and cucumber, and homemade gyoza.

Summer sake. It is served with a sake cup given to me by my son on Father's Day. It has a mild and natural gaseous taste. It has a refreshing taste typical of summer sake, but later a mellow rice flavor covers the nostrils. We enjoyed it with bigeye tuna sashimi, fried horse mackerel and squid, and Mugen cucumbers.

I looked for it, Tokushima sake. Purchased on a business trip to Takamatsu. Gorgeous and luscious melon aroma. The taste is reminiscent of the tropics, with hints of lychee and passion fruit. It is a sake version of Riesling, which has won a gold medal at the "Delicious Sake in a Wineglass Award". It was served with seasonal horse mackerel Nanbanzuke and simmered squid.

Sake prepared for Golden Week. It smells like sweet and sour strawberries. After the sweetness with moderate gasiness comes the rice flavor and bitterness unique to junmai sake. As the label says, it is a fresh sake perfect for early summer. It was served with sashimi (sea bream, yellowtail, tuna, squid, millet, red clam, hokki-gai, scallop) and grilled fish.

Purchased as a souvenir for myself on a business trip to Oki Island. The aroma is moderate and the mouthfeel is refreshing. The taste of rice comes through gradually later. Although dry, it is a gentle sake that evokes the spring scenery of the island. We enjoyed it with rice cooked with white clams, a Japanese-style chicken hamburger steak, and fried tofu.

Sake from Ishikawa Prefecture to support the disaster-stricken areas, even if only a little. The ginjo aroma is youthful. It has a slightly strong acidity and a refreshing taste. For a pure rice sake, the rice flavor is not that strong. We enjoyed it with a variety of izakaya menu items such as sashimi of tuna, salmon, and sea bream, mimigauro, deep-fried tofu, and Spanish salami.

This is the last daiginjo of the "Kuromatsu Shiraga" series that I received from my parents' house on New Year's Day. (The others are "Junmai" and "Ginjo".) The aroma is mild and the throat is clean. It has a light flavor and is easy to drink without any peculiarities. We enjoyed it with ehoumaki and soba noodles on the occasion of Setsubun, a national holiday in Japan.
