I kept it in the fridge for a while and drank it. Small carbonated bubbles in the glass, although I don't feel much carbonation. The fruity aroma is mild and lightly sweet. I wondered what the aroma was, but it was banana-like. The next day, the aroma is stronger and the taste seems to be more intense. The sugar content is 10.5, which is supposed to be slightly dry, but it tastes quite sweet. The aftertaste is refreshing. It has a clean, umami taste, but it is a little sweet.

This is an active nigori sake that requires care when opening the bottle. It never spills, probably because it has been stored for a long time. However, when the bottle is opened, it bubbles like champagne and is quite shwashy when poured into a glass. The supernatant is quite sweet even though it is carbonated. I guess it is because I like dry wine. The aroma is slightly aged, like caramel. Even if you carefully mix the nigori ingredients, it is still sweet with a slight bitterness added to the aftertaste.

It is a special junmai with a 60% milled rice ratio, and since it was packed in January and left to drink for about six months, the freshness is a little weak. The sugar content is more than 12%, but it is not so sweet. When chilled, the taste is surprisingly refreshing, and when warmed to about 20°C (68°F), the acidity and umami come out and the flavor becomes fuller. The aftertaste of acidity and bitterness is surprisingly good. It can be served cold as it is, or warmed up with various dishes.

It is surprisingly dry, although I thought it would be quite sweet. The label on the back of the bottle states that the sake has a sake rating of +4. The aroma is sweet, but the dryness is not bad. The taste leaves a sour and astringent aftertaste, and to tell the truth, I would prefer a refreshing sake without such a taste.
