聚楽太閤原酒生酒初しぼり

It is a one year old sake from last December, which was found while sorting out items that had been stored at home for a long time. It is a raw sake with brewer's alcohol. It is not junmai. It has a sweet and calm aroma. Very sweet! Not only sweet, but also umami, moderate acidity and astringency. It was chilled, so I warmed it up, but it has moderate acidity. It is quite sweet with 14% sugar and 19% alcohol, so it can be served on the rocks or with a little water.

海の男

Junmai Daiginjo with a rice polishing ratio of 38%. I expected it to be sweet, but it was slightly dry as indicated by the sake degree of +4.5. The aroma was light and pleasant. It was drier than I expected, and the acidity and astringency of the aftertaste were unexpected.
