A good drink at the end of a hard week. I have found a good hobby. LOL! I drink a clear bottle of Muhgo while saying things like, "I've never felt the scent of Seme rising in the air. It has been a long time since I have felt the seme aroma rising from the bottle. The aftertaste is dry and bitter. Although it is a draft, it is not too light and has a fine quality.

Tonight is a day off from drinking - I was shopping for dinner and found what a rare find it is! If that's the case, there's no way to avoid it. Let's have a light drink. LOL! After much deliberation, I chose Yamamoto's Forest Green. As I had hoped, the sake has a clean, yet distinctly Akita-like quality, with a strong sense of rice flavor. The last part of the bottle finishes with a slight bitterness, which I personally like very much. I personally like it very much. It is perfect as a food sake and has a complete taste.

Thanks again for a great week! So let's get to drinking! Tonight we will have a figure that has not been seen for a long time. The mouthfeel is as always superb, and it's just so soft. It is smooth, sweet, and soaks in easily. It's perfect for a tired weekend, isn't it? LOL! By the time the sweetness has worn off, the acidity has risen to the point of dryness. There is no sweetness and the aftertaste is short, which seems to be a characteristic of Comet. Yum!

Today is the entrance ceremony for my 6-year-old son. I am deeply moved by the fact that he was so small. I decided to make No. 6, X-type, tonight, because of the combination of the age of 6 and the unknown possibility of X. The standing aroma is modest but noble grapefruit. The taste is complex, but you can't feel it, and it goes down your throat like a clear stream. If it were not for the slight acidity that lingers on the palate, one would almost forget that it is sake. It is a perfect sake for a long talk about memories without getting tired of drinking it. It is a good sake.

Tonight we had Korean food at the request of my family, and I wondered if it would be difficult to make sake. I thought it would be a good match, but I decided to give it a try and tried Kamonishiki, which seemed to go well with it! Well, this time it was Gohyakumangoku junodai, and how could it not be delicious? It is a stable Kamonishiki, but it is a little light and dry. It is a rather light and dry wine as a pairing. It is a new discovery.

Today I overcame a hell of a squeeze at the gym, and so I end up drinking. LOL! Tonight we will have Toyobai. What can I say, it is a harder sake than I had imagined. From the mild ginjo aroma, the taste is very well-balanced, with a trinity of sweet, spicy, and acidic flavors that together create a voluminous deliciousness. It gives the impression of a solid sake. I paired it with a seasonal dish of firefly squid and horse masked skinned squid with liver, both of which were reportedly caught this morning in Toyama Bay. It was perfect👍.

The temperature suddenly dropped and I was having trouble finding something to wear, but today is warmer than it has been in a long time. and I drink for some reason or another. LOL! Tonight is the first time in a long time that I have had an instrument Masamune, a good low-alcoholic drink that can be drunk neatly. It is soft on the palate and smooth as a sphere by the time it passes down the throat. The lingering aftertaste, however, is slightly bitter, and one feels satisfied with a fine sake. It's going to be a good weekend.

At my favorite sushi restaurant, which I had not been to for a while. I was in the mood for a dry sake, so I had the Hidakami. As expected, it was crisp, dry, and light, but the umami of the rice came through well, making it an excellent match for the dish. All the dishes were delicious, but I have to give the MVPs to the young sweetfish tempura for the snack and the amaebi for the nigiri because it was better than expected. As an extra? The homemade salted fish that was bizarrely good. The salted fish was salty and fresh, with a low-sodium, liver-dark flavor. Satisfied!

The last in the Mie Prefecture series is Takijumo. This is, after all these years, an ultra-orthodox dry wine! From the clear aroma, to the mouthfeel, to the delicious rice flavor, to the crisp dryness, it's just as I imagined. It is not flashy, so I will keep my comments short. It's a really fine sake that you'll want to keep a bottle on hand.

If the morning is slow tomorrow, I will drink. LOL! Mie Prefecture Series #3: Tonight, we are at Amplevue in Sangu. The bottle looks like a white wine, but is it? The aroma is of white grapes or green apples, and the impression is refreshing, but the taste is rich, quite sweet, but the aftertaste with acidity is surprisingly short and not too sweet. What a white wine this is! LOL! If it were called Riesling, it would fit right in. This is a bottle of sake that will make you learn that there is such a sake as this.

The second in the Mie series, tonight's is a classic. This is the first in this IMPRESSION series, but it has a gassy, fresh aspect that makes you think it is a draft sake, and an elegant, profound sweetness and flavor that coexist in good balance. It is delicious.

I've been able to get a lot of sake from Mie through a little connection, so I'll be strengthening Mie for a while. LOL! The first one is Tamitsu, and it's my favorite Omachi. I'm so excited! The fruity rise reminiscent of pineapple, then the rich and thick umami, the complex flavors... I can't get enough! LOL! The aftertaste is short with some bitterness, and the sharpness is good. Very well-balanced and complete on its own, but also easy to pair with meals. I think it is a good sake.

I've been holding back for a while, and I want to drink more sake than ever. Tomorrow is my day off, so tonight I'll be toasting with Nanamizu's FOUR SEASONS WINTER. The strong fizzy and cloudy state of the sake is indeed an image of winter. When I sipped it with high expectations, what do I see? It has a refreshing grapefruit aroma, a surprisingly light and dry taste, and a crisp, slightly bitter aftertaste. I see, the color of Gohyakumangoku comes out strongly. I tried it with oysters with ponzu sauce, but I think it would be better with dishes with strong flavors such as sukiyaki.

It's been a long time since I've had sake due to my illness! This is the first bottle of Hououmita, which I had planned to drink sooner. The first impression of Hououmida is that it is gorgeous, but this one stands out especially for its fruitiness. From the Muscat aroma, it has a gorgeous sweetness and deliciousness, and it is clean and refreshing, so it is very tasty even after being sick. Laughter I paired it with a small bowl of pickled salmon and grated salmon roe.

I've been working out today, and I think my body needs some energy! So, it's been quite a while since I've seen Ozeki. It's so thick! This is the first time I've had an Ozeki in a long time. I thought Ozeki was well-balanced and easy to drink, but this is a new side of Ozeki. It's a very deep sake.

Today is Friday, and I got home early, so I'm still drinking. LOL! Tonight is the first Nabeshima I've had in a while. I still like it. It starts out sweet and delicious, but the bitterness is intense! This three-dimensional flavor is what Nabeshima is all about. The aftertaste is long and the bitterness increases as you continue drinking. The bitterness will increase as you continue to drink it. If you finish it with a snack or water at the right time, you will feel happy.

Basically, I don't drink on Sundays, but I can't help it when the wife buys me a kingfish. LOL! I love Senkou, and tonight I'll have the classic Kamenoo. It's flush and fresh, reminiscent of Kamonishiki, with a balance that reminds me of a perfect sphere. Too good. However, the aftertaste is bitter and has a hint of Senkou in it. I was used to choosing Senkou so that I wouldn't drink too much, but I guess this had the opposite effect.

Tonight was a rare request from my wife, she wanted to eat a bomb of sushi. Laughter So, I chose Mimurosugi. I was conscious of the fact that I wanted to make a "safe" sake, but the Mimurosugi is definitely the right choice. It has a mild but powerful ginjo aroma, and the perfect balance between the two makes it a royal sake. The taste is really luxurious, with a solid umami and a beautiful acidity.

I've been curious about Amami because of her surging popularity. Shupon! I opened the bottle with vigor. I was excited with anticipation, but was the semen aroma too strong? I was a little surprised, but after a few minutes, the aroma of muscat settled down. The taste is quite complex. It has a sweet, spicy, sour taste, and a moderately bitter aftertaste. To be honest, I thought it would be more suitable for everyone, but it has its own quirks that may divide people's likes and dislikes. Personally, I find the moderate sourness and bitterness to be pleasant, and it will be useful both as a stand-alone sake and as a sake with food. I think I'll try the Daiginjo as well.

I've started taking kickboxing lessons, and my whole body is banged up. At night like this, I decided to have my new favorite Kamonishiki, unfiltered Juntai. Kamonishiki is stable and delicious. The elegant aroma of lychee, the fresh and juicy flavor, and the sizzling sensation make me feel very luxurious. The finish is crisp and clean. It's so clean and crisp that it's not enough for a four-pack. LOL!
