In such a mood, I thought an authentic sake would be perfect. It is not flashy, but has a clear, clean mouthfeel with a strong umami of rice. It is sweet and bitter. Then acidity, spiciness, and a light sharpness. Perfect 😁. It's nice to be in vogue, but sometimes it's nice to savor a quality sake like this one.

LOL! It is Kitashizuku 😁. The aroma is citrusy and clean, but it has sweetness and umami. It is dry from the first sip, and the end is light with a bitter taste. It is delicious. It is also perfect with a rich hot pot. It is also good for drinking after a meal.

はなMerry Christmas 🎄 is not really in the spirit, but to bring out the spirit a little, we had lobster with a bright red color and out-of-season white rice wine to make it refreshing in a champagne-like way. As expected, the refreshing acidity and elegant sweetness of this quintessential tasake 😁. I imagined it to be a bit more dry and crisp, but this is just as good 😋. A low-alcohol, well-balanced honor student. Mild aroma of muscat, slight effervescence, slightly dry? It's more of a food sake than a stand-alone sake, as expected! The nabe was also well done😊The milt, which I thought might be too much, was easily sold out. LOL!

はなWe went to a new restaurant opened by the owner of our favorite sushi restaurant. And it was my wife's treat tonight. LOL! Oh, they have a rare sake from Hitakami, a special A Yamada-Nishiki. This makes me so excited. I don't need to comment any more😊. It's gorgeous, tasty, sharp, and has it all. It's a quintessential perfection. The food is also great. All the snacks are good, but the natural tiger globefish milt. Nigiri, or rather, a bowl of rice topped with half-boiled salmon roe and nodoguro. This is a must visit again in the near future 😁.

はなMy throat has been bad for a while now, and I've had to cut back on drinking at night, but now that it's feeling a little better, I'm going to disinfect it with alcohol. LOL! It got cold at once, so it was a good day for hot sake. I chose Ippo Junmai. It's been quite a while since I've had it, but it's still delicious. It has the aroma of rice and malted rice, but the flavor is balanced without being harsh. It is a good sake that can be paired with anything and never gets old. It was still early in the evening, so I enjoyed it with some shirako ponzu until dinner.

はなPapa! I want yakiniku! Yes, I really want to have sake and sashimi, but my father doesn't have a choice. So, it's the second round from....... LOL! I want to drink after the yakiniku. So, it's a little bit out of season, but I'm going to drink Hidakami draft. The stability of Hidakami, the gorgeousness of Jun Daijyu, and the refreshing mouthfeel are perfect for my mood 😁. The side dish was aji (horse mackerel). It is not in season now, but I think it tastes better in early fall because of the fat 😅. The extra photo is of a neighborhood yakiniku restaurant. LOL!

はなI'm tired from all the hard work I've been doing. I chose Laughing Four Seasons because I like to smile when I have a leisurely drink once in a while. It's hard to describe. It's just delicious. Laughing As the name suggests, it is chaotic, elusive, and complex. However, the acidity is clean and has no unpleasant taste. It is not sharp, but the intended aftertaste is bittersweet. I guess you could say it gives you a smile rather than a smile ☺️. The accompaniment is my favorite oysters. They will become more and more delicious from now on.

Since the temperature is autumn-like, I will match it with lukewarm sake 😊. It's been a long time since I've had a rice wine, and I think this is my first Yamahai. I love this brand, but this is too good 😁. The mellow aroma that rises, probably due to the lukewarm temperature. Soft and mellow mouthfeel. The acidity is like a squeeze. A crisp aftertaste. Perfect balance. Warning: Don't drink too much by accident.

はなTonight, tired from working on a holiday, we will pair a sumptuous sea bream hot pot with a delicious sake 😁. It's a raw sake designed by Bishu. I often drink Yukino Kayasha, but this is my first time. The aroma is firm, melon-like, and gorgeous. It has a refreshing, sweet and delicious taste. The first time I tried it, I was surprised to find that it had a very high level of sweetness, like a surge of sweetness. It has a complex flavor, like wasanbon, or brown sugar with a slight bitterness. It leaves a slight bitterness and the aftertaste is mild. Well, it's good😊. The sweet sea bream, well, it's the one that doesn't need words. LOL!

It is a clean, sweet and delicious sake, but it is very drinkable as is typical of Saku. It is complex with acidity and bitterness, but it is still round and mild, maybe because it is hiyaoroshi. はなWent to Asakusa for some business. I had a drink at a local sushi restaurant 😁. They had Jyushidai, so I ordered it anyway. LOL! I don't have much to say about it now. I have the impression that the flavor is more pronounced if you let it sit for a little longer than if you just opened it, but I was lucky enough to have it at the right time. The dishes in general were seasoned with a little salt, but the grilled swordfish was fresh, and the nigiri was superb, with the prawns cooked perfectly. It was a good holiday 😊.

I decided to drink it dewy-leaf style because it was a good opportunity, and it is nice. The aroma is strong, with an impression of melon. It is 80% polished rice, so it has a strong flavor. The acidity and bitterness of the dewy leaf style and the freshness from the windy forest shuwashu are a great match, and the finish is complex yet light and not tiring to drink. It is quintessential 😊. It's a nice marriage that doesn't lose to the strong flavors of the motsu nabe.

I expected it to be quite punchy because of its 18% alcohol content, but it has a nice sharpness and is refreshing. From the fresh lychee-like aroma, it has a soft, mellow flavor, and after a moment, it is crisp and spicy. I drink it slightly chilled, but as it gradually returns to room temperature, a slight bitterness emerges, making the flavor more three-dimensional and complex. However, the sharpness is good so you will not get tired of drinking it 😁. It's also perfect with the fatty fall flavors 😊.

The soft, sweet, fresh aroma, the menthol-like coolness, and the fragrance of the wooden vat, all of which heighten our expectations 😊. However, the punch in the mouth is quite strong. It has a high alcohol strength, umami, and a crisp, dry, and sharp taste. It is not a so-called summer sake, but I am satisfied with it in a different way than I expected. Also, I know it's not important, but I recently purchased the glass in the photo, and I personally love it because it is the ideal shape and size for sake. Isn't it pretty good? I think it's pretty good, don't you?

はなMy brother in Hiroshima sent me a gift of conger eel and local sake 😊. Saijotsuru super dry sake and special dried conger eel overnight. How could they not go well together? LOL! The sake has no artificial flavors, is crisp and spicy, and has a mellow umami flavor. It is an orthodox dry sake, and you will never get tired of drinking it. It is a good sake to drink during a meal, or even after a meal, and you will not get tired of drinking it slowly. The name "Saijo" is not a date 😁.

I would like to warm it up, but it is still hot, so I drank it cold. The mellowness of Yamahai is fully felt even when it is cold. The mouthfeel is soft, sweet, and delicious, but then the spiciness kicks in. The impression is that the mellowness and bitterness remain slowly. It has a deep flavor that is typical of Yamahai 😊. Now, I love shirasu (baby sardines). It is good all year round, but from now until fall, it is exceptional. The fat is getting fatty and it is very nice.

We decided on a refreshing summer sake, so we went with a draft of Kangiku. The aroma is subdued even for a summer sake, but the fragrance is gorgeous with green apples, and the taste is fresh and juicy! The taste is fresh and juicy! It is what is called "amauuma," but the lingering aftertaste is slightly bitter and you will not get tired of drinking it. It is delicious. The sweetness becomes too much when the temperature rises, so it is best to drink it cold 😊.
