At my favorite sushi restaurant, which I had not been to for a while.
I was in the mood for a dry sake, so I had the Hidakami.
As expected, it was crisp, dry, and light, but the umami of the rice came through well, making it an excellent match for the dish.
All the dishes were delicious, but I have to give the MVPs to the young sweetfish tempura for the snack and the amaebi for the nigiri because it was better than expected. As an extra? The homemade salted fish that was bizarrely good. The salted fish was salty and fresh, with a low-sodium, liver-dark flavor. Satisfied!
