Today is Sunday, but tomorrow is also a vacation. So I'm happy to drink at home every day! I chose Akatake's raw, and my personal favorite, Omachi, which is great. The rich aroma and fruity mouthfeel are typical of Akatake, followed by the rich flavor and acidity of Omachi. The aftertaste is rough in a good way. I'll let you soak it up for a while while I'm poking around the Torotaku for a simple appetizer. LOL!

Tonight was the debut of Nanamizu, which I had been curious about. From the opening of the bottle to the first sip, the impression was a typical sweet and savory type. But later on, it became crisp and dry, with a nice crispness. As I got used to drinking it, I could feel the juiciness after the sweetness and deliciousness, which made it even more to my liking. I'd like to try the others as well. Yum! For my entree, I went with the pickled sea bream, thinking of the chazuke (rice with tea) that is served at the end of the meal.

It's the first day of a consecutive holiday, and I want to soak up the evening with my favorite brand. So, I drank Senkou, and then I drank Hajime. There is no hint of the aroma from the beginning to the end, and it is quiet as if time has stopped. After a moment, the elegant fruitiness and the lychee acidity stand out and are very fresh. The lactic acid aftertaste characteristic of Senkou appears gently without changing the refreshing impression. This is delicious.

My brother (the chef) sent me a surprise conger eel. The strength of the stable Saku + Omachi is still very good. It's not particularly fragrant or complex, but it's like a modern orthodox style where everything is in harmony. It is a little sweet, but not so sweet as to interfere with the meal, and has a wonderful stability.

Is it something that has been talked about recently? It is the first time to drink Miya Kanbai. I thought it was a common sweet and savory type from the elegant ginjo aroma, but the impression changes from the middle part of the bottle with the thick sweetness and bitterness. There is no doubt that it has a modern taste, but I thought it was a rare type with a thick body. It is not suitable as a food sake because it is a complete sake on its own. It's just very unique and I'd like to try the others.

Tonight we will have Kamoshiki, one of my favorite brands these days. It is relatively new, Tsukihaku, and I was looking forward to it. Expectations are high for the elegant and refined ginjo aroma typical of Kamonishiki. Laughter It has a smooth and clear taste, and it has less miscellaneous taste. The aftertaste is dry and crisp. It has no habits and is a good choice as a sake for eating among Kamonishiki. I paired it with seasonal kibinago.

We're moving today! A toast and congratulations to myself and my family? A toast with Jikan. The aroma is more elegant and the mouthfeel is sweeter than usual, perhaps due to fatigue. But it doesn't end there. The bitterness is complex, like grapefruit, and the acidity is crisp. It finishes with a slight lingering aftertaste.

I've been drinking a lot of hot sake lately, but tonight it's relatively cold. So it's been a while since I've had an honourable chrysanthemum, Anastasia Green. Shupon! I opened the bottle with vigor. The aroma is gorgeous from the start, and it is juicy, sweet, and delicious, with the sourness and bitterness of grapefruit and plum to finish it off. It is low in alcohol and easy to drink, but the sweetness is rather strong, so it is difficult to use it as a food sake. It is better to drink it alone or with strong flavored snacks.

For some reason, I'm in the mood to choose gyutan tonight. As a result of worrying, it is Shinsei after a long time. I decided to pair it with No.6 R. There is no need to say much about it now, it is one of the perfect sake. It has a fine aroma and mouthfeel reminiscent of fruit, especially green apples and plums. It is delicious and light. However, compared to the S, it has a slight miscellaneous taste that makes you feel like you are drinking sake. I guess it's a matter of taste. The pairing is good👍 It's going to be a great night.

This is my favorite BAKEREN, and tonight is the first time to drink it raw. The aroma is fresh and sweet, but not overpowering. The moment you put it in your mouth, the impression remains the same, but soon after, the dryness and acidity hit you hard. It is a hybrid of elegance and ruggedness, and I think it is a legitimately delicious sake.

I'm in the mood for a light drink tonight, and my choice is Hope by Senkou. Shupon! When I opened the bottle with vigor, I was greeted with a refreshing Muscat aroma, just like a white wine, and lactic acid bacteria a little later. While my expectations were rising, I was surprised to find a strong acidity. I thought it might be a little hard, so I let it sit for a bit and mixed in some air, and it changed completely to a refreshing sake with pleasant acidity and a dry sharpness. It's an assemblage, but it's not very complex and has a simple impression. It seems to be a good match for dishes with strong flavors.

This is my new favorite restaurant. Tonight is the first time for me to try the raw one that I learned from a certain person. It was even better than my high expectations. The aroma is modest and elegant melon. However, when you put it in your mouth, you can taste the voluminous flavor, sweetness, and sourness peculiar to the raw. And it is juicy like biting a fruit with a lot of water. For such a wonderful sake, simply pair it with raw shirasu.

Tonight, we're having an unseasonal Hanami Ro-Man. I thought it would be good as a summer sake because of its low alcohol content, but I was right. It has a refreshing mouthfeel, but it also has a strong umami and richness. The aftertaste is long, with sweetness and bitterness, and then the acidity brings it all together. It does not have a good sharpness, but the acidity makes it refreshing. Pair it with bonito, which reminds you of the arrival of autumn.

The first one since New Year's Eve is Junmai Ginjo made with Banshu Yamadanishiki. It has a fruity aroma with a strong hint of peach, perhaps because it has been heated once. It is impressive. When you sip it, you think it's sweet and umami, but soon after, it becomes crisp and spicy. The taste is strong but crisp. It's good to drink by itself, and it's also good as a food sake. After all, Collage is good.... For the side dish, I had some scallops that looked good, so I made a Japanese style carpaccio and served it with Hokkaido's sea urchin.

It's been quite a while since we've had Atago no Matsu, a Junmai Daiginjo made from Hakutsuru Nishiki. This is a fine shokuchu sake. It is crisp and spicy, and has a good sharpness. It has a sweet and sour taste, and the aroma is elegant. It goes well with any kind of food and can be enjoyed by itself. I felt that it is a sake with a high degree of perfection.

Meat on a weekend when you're tired! So I imagined red wine, and opened a bottle of sake for Shah. Well, red is just the color of the bottle, lol. Unusual for a Denshu? You don't feel the green apples so much, but the freshness of lychee and white grapes. It's dry in spite of the aroma. Because it is a Denshu, it has a deep umami flavor, but the acidity stands out and it is crisp. It has been well adjusted to summer. This is a great sake!

A nice gift of sake and snacks from my brother who is a chef, this Kamonishiki is badass. It has a fresh aroma from the gas feeling, and it is juicy and fresh with a firm flavor. I have drunk many kinds of summer sake, but this is the best. It is perfect on its own or with a meal. The combination of homemade dried conger eel and chirimen sansho is also a warning for drinking too much. lol

Nabeshima after a long time is summer sake Summer moon. It is a summer sake. It is a summer sake with a gassy mouthfeel. At first I thought it might be sweet because of the lychee aroma, but the acidity stands out and it is crisp, dry and sharp. I think it is a good sake to drink while eating a good meal to keep up with the heat. It's a sake I'd like to try at least once more if I have the chance this summer.
