INSTRUMENT MASAMUNE SESSION5 2021 "FUKUNOKA Junmai Ginjo Fukunoka : 100 Rice polishing ratio : 50% Alcohol content: 15 degrees This sake is brewed with "Fukunoka", a new breed of sake from Fukushima prefecture. We bring this sake to the sushi restaurant we sometimes visit. The label is different from usual, it is multi-colored and beautiful. I was talking about how my arms might curl up imitating the woman on the label😅 when I opened the bottle. It has a light and fruity ginjo aroma. In the mouth there is a light fizzy feeling, a light sweetness and sourness, and then a light bitterness that fades out. The sweetness, acidity, and bitterness are blended into the clean water. There is no heaviness, depth, or harshness, and it can be drunk smoothly and dryly. It does not interfere with the flavors of sushi, grilled ayu fish, or fried foods, but it supports them. I ate a lot of it😅. If two people drank, the instrument was empty at the time. Delicious. Happy.

Horaiizumi Junmai Yawaguchi Genshu "A" 13% Genshu Raw Sake Raw material rice: Yumesansui Yeast No.6 Alcohol content 13 degrees Rice polishing ratio 55%. It seems to be a special order sake only for three liquor shops in Nagoya, OHTAKE, Chitashige, and Shusendo Horiichi. All three are wonderful liquor stores. When the bottle is opened, a fruity and gentle ginjo aroma like apple 🍎 is quietly smelled. In the mouth, the sweetness of the rice spreads and at the same time, the beautiful acidity tightens up, and you can feel the long aftertaste. It's a bit contradictory, but that's the way it is😅. It's clean and refreshing, but with a solid flavor that makes it a perfect low-alcohol raw sake (another lost comment😅). It's delicious. Happy.

Rice : Yamadanishiki produced in Hyogo Polishing ratio : 50 Yeast : No.7 yeast This is the drink of the plan to enjoy the fireworks at 18:30 on October 1st. I got drunk and opened it 😭. I'm not sure what to make of it. I'm not sure what to make of it. I'm not sure. It's a fruity, fresh ginjo aroma. In the mouth, there is a fresh sweetness that is typical of Kaze no Mori, and a light impression with a sense of foam. After that, the flavor and depth of Yamadanishiki spreads quickly. There is also an elegant acidity and a slight bitterness that gives the impression of a solid structure. At room temperature, the umami opens up even more. It has a depth and lingering taste that you would not expect from a low alcohol beer. I think it's a very good sake to drink while watching fireworks in the fall. Everyone, please enjoy 😭. Delicious. Happy.

Raw rice: Sakemai Rice polishing ratio: 50 Alcohol: 15 degrees This is the first time I've purchased Hanaup🌸. I've only had it once before at an outing. I was looking forward to this Hanabusa after reading the reviews on Sakenowa. It's a great beer. and a good sound😄. The aroma is fruity and beautiful. In the mouth it is smooth and mellow with a juicy sweetness and a deep flavor. I thought it would be sweeter, but it is elegant. Then, there is a hint of sourness and a slight accent of bitterness. It disappears nicely without being sticky. It was a beautiful bottle, but I could also taste the flavor of the rice. I drank it over about 10 days, but it was most balanced and delicious on the second and third days😄. Delicious. Happy.

In order to maintain my health and keep drinking, I resumed my walk that I had stopped after I got injured. The reward for today's walk was Matsunoya, a traditional dengaku and nanameshi restaurant in Inuyama City😄. Tofu Dengaku, rice with vegetables and a bottle of Kuneki Honjozo brewed by a nearby brewery in Konan. It's been a long time since I've had dengaku, but it still tastes like thick red miso. It's not particularly good, it's just a taste of the countryside, but it's something I like to eat after a few years. It's not particularly good, it's just a simple country taste, but after a few years you start to like it. When you taste it, you will feel a dry sensation in your mouth, and it will cut off your mouth and nasal cavity from the red miso and sansho. It is a perfect match for Dengaku and Heki. It was a meal that made me want to walk a little more😄. Delicious. Happy.

Yamagata produced Ryu no Boshi 80%. Rice polishing ratio 50%. Alcohol content 15 degrees I was contacted by an izakaya that I used to go to before Corona, so I went out drinking with my senpai after a long time. We drank a lot of rare sake such as Jyushiro, Kudokigake Kanezushishi, and so on. All of them are delicious and delicious😭. Nagoya also reopened the law to prevent the spread of the disease. The bottle was served to me, I had to drink a lot. I paid a lot of money 💴🥲. It's hard for bars, it's hard for breweries, it's hard for farmers who make sake rice, it's hard for fish wholesalers. It's hard for me when I can't drink good sake anymore. There is a lot of trial and error involved in finding a solution to the Corona disaster, which is a powerful enemy that no one understands, but I really hope you can do your best. I'm going to drink a lot at home today to support them! It tastes good. I'm happy.

AKABU's EARTH series, "MOUNTAIN" ⛰ following "SEA" and "AIR". Rice polishing ratio: 60 Rice: 100% Gin Ginga Alcohol level: 14 degrees When you open the bottle, it is quite energetic😄. The aroma is a subdued, fruity ginjo aroma. In the mouth, a refreshing sourness envelops a clear and slight sweetness. The aftertaste fades out as it is. There is almost no bitterness or astringency. The beautiful sourness wraps up the whole, and it is light and refreshing. You can drink it up in no time while watching the Olympics on your summer vacation😅. Delicious. Happy.

Rice polishing ratio: Koji rice 60%, Kake rice 70%. Alcohol content 13 degrees Junmai-shu of the instrument. When we drank it last November, the alcohol content was 15 degrees. When the bottle is opened, it has a fluffy aroma of rice. When poured into a glass, there is some quiet foam. When you put it in your mouth, the soft sweetness spreads and the bitterness goes away quickly and quietly. There is no sense of fizziness. The taste is well balanced and dry. This is the first time I bought Eiko Fuji. It is made by Fuji Shuzo, which is not sold in many liquor stores in Nagoya, though I have been drinking it sometimes in bars. Rice used : 78% Miyamanishiki from Yamagata, 22% Yamadanishiki from Okayama Rice polishing ratio : 50% Alcohol : 17.4% Yeast : Association No.10 "It is a very limited edition sake that is only shipped once a year. When you open the bottle, the fruity ginjo aroma like a ripe pineapple stands out gorgeously. The taste is rich and sweet. Then, the solid sourness and bitterness melt into the sweetness. It is powerful and rich. For a snack, I went to a pickle shop near my house, Jutawaraya Fuso Sohonke, and picked up some Nara pickles. "It's not too much, but it's good 😄. After about 3 days, the taste opened up again and the balance got better. I spent a few hot nights with this sake. Delicious. Happy.

Rice used: Yamadanishiki Rice polishing ratio 60%. Alcohol 15 degrees Nabeshima is a stable sake that I like to have in the fridge all the time, but I haven't had it lately, so I bought this bottle. It is a special junmai-shu made from 100% Nabeshima Yamada Nishiki. It seems to be a test brew. It's not a big beer, but it's good😄. It's not gorgeous, but it has a fruity and gentle Nabeshima-like ginjo aroma😊. In the mouth, it has an elegant sweetness that is a bit subdued for a Nabeshima, rice flavor, light but firm acidity, and bitter accents that tighten up the bitterness and flow down the throat. It is refreshing. It's a stable sake that goes well with anything, and it's Nabeshima. It's a great way to start the day, but it's also a great way to start the day. The results of my physical checkup are not good but considering I'm drinking this much at my age, I'm okay with it. I'll get some more Nabeshima! It's delicious. I'm happy.

Raw rice : Omachi! Rice polishing ratio : 50 Alcohol content : 16 After a long time, my junior and I went to a sushi restaurant🍣. It was a little bit of a celebration for my junior colleague's appointment as a board member. We brought in a bottle of Sai Rai and had fun drinking and eating😄. When I opened the bottle, it was surprisingly quiet. The aroma is a fruity ginjo aroma that is elegant and crisp. In the mouth, a cute and fresh sweetness spreads. It has a beautiful sweetness and umami. The fizzy feeling is unexpectedly slight. The refreshing acidity colors the sweetness. The bitterness is faint, and the sweetness and umami are the core, but it goes down the throat nicely. I thought it was good but not good for sushi, but as it gets to room temperature the umami and sourness expands. It's good😄. Maybe I'm just getting drunk😅. It's more powerful than the label suggests. I'm not sure if it's just the fact that it's Omachi that's dragging me down😅. It was fun 😄. Good night 😄. Thanks to the owner of the sushi bar, Sai Rai😄. I can't wait for more nights like this to become a regular thing. Delicious. Happy.

Rice : Omachi grown in Okayama Rice polishing ratio : 50 Alcohol content : 16 This is the last bottle of Zijima that I won at Horiichi Shusendo during a time when I had a strong hiki. Junmai Ginjo made with Omachi rice from Okayama Prefecture polished to 50%! Great specs! When you open the bottle, you hear a bonk and a heavy, pleasant sound typical of an ippon bottle😄. Already lovely. The aroma is a beautiful fruity ginjo aroma. In the mouth, the silky and elegant sweetness spreads. It's already delicious 😋 The freshness is unbelievable for a hired sake. This is not a light sake, but one with a powerful umami texture! Quintessential Omachi ✖️ Jikan ✌🏻. The subtle bitterness and clean acidity are well balanced and layered. It's a shame to let it fall down your throat, but the feeling of it falling down is also wonderful😋. I can't wait. Elegant and crisp. The balance is superb. It has a beautiful, well-rounded laser chart, calm and elegant, but with a solid core of strength. I'm a believer so my comments are slightly biased😅. The thin moon this evening is red and low and beautiful along with the castle. I'm not sure what to make of it. I'm sad that I won't be able to find any more Zijima in my fridge 😭 but it's still good 🤣. Delicious. Happy.

When my children were small, I raised many beetles and stag beetles in three wardrobe boxes in my garage for many generations. I didn't let the kids touch them, but I enjoyed them myself😅. This is a great beer. As expected, the aroma is citrusy. When you put it in your mouth, the beautiful and crisp acidity of Senkou spreads. I bought it because I was attracted by the copy of "Beautiful sake, shining in nanairo" written on the bottle of beautiful Tanabata specs. Back in 1990, there was a manga I loved called "Natsuko's Sake". In the manga, Natsuko, the daughter of a sake brewer and a copywriter, wrote this copy when she was not satisfied with the taste of the sake she was asked to make. Nowadays, unlike back then, there are many more wonderful sake and liquor stores. It was also made into a drama by Eimi Wakui. She was so cute! I met this sake by chance at Sake Sento. Seven breweries in Miyagi share the role of brewing. This 7th year episodeVII is the last Rice used: 100% Yamada Nishiki Rice polishing ratio 45%. Alcohol content 16 degrees The ban will be lifted at 7 PM on July 7th! Please make sure to open the bottle at the exact time. It has a mild and fruity ginjo aroma with no showiness. When you put it in your mouth, you will feel a clear sweetness, but soon a beautiful acidity will cover it and you will feel a moderate bitterness. It leaves a lingering aftertaste and falls down the throat. I had it with mascarpone + nori seaweed + wasabi soy sauce, which I saw on "Ariyoshi's assault on Kaneo-kun". I wanted to check in during Tanabata, but I fell asleep😅. I'm not sure what to make of it, but I'm sure it's worth it. It reminds me of the commercial where Wakui-san's bath towel falls off and he says, "It's so good, isn't it? he said😄. Memories are good for a tummy tuck😄. Delicious! Happiness

Alcohol content: 16-17%. Rice polishing ratio: 60%. Junmai Ginjo Unfiltered Raw Sake This sake was recommended to me by Kakamigurayu-ya. This is a sake from a brewery that I've seen occasionally, but have never tried. Maruichi Sake Brewery is a local brewery in Aichi Prefecture. It's a very small brewery with only 200 stones in production, but they've won the gold medal at the National New Sake Competition 9 years in a row, and the first place at the Echigo-ryu Technical Championship 4 times. I didn't know that. It's amazing! When you open the bottle, it has a mild and fruity ginjo aroma. In the mouth, the gentle sweetness is surrounded by a lively acidity. The umami is deep and well balanced. The bitterness is faint. The aftertaste does not drag. It is a sake with a solid structure that is fresh and full of life. As a local, I hope it will become popular. It's delicious. Happy.

Sake Rice: Miyamanishiki Polishing ratio: 70% Yeast: 1-6 Alcohol: 16 degrees Soga Pale et Fissure Rear Saké Naturel On the back of the bottle it says, "This is a sake that makes no sense to Ichigen-sama. The arrogant feeling is good. When you open the bottle, you get a clear fruity aroma, lactic acidity, and a hint of rice. and a hint of rice. When you put it in your mouth, you can taste the flavor of rice and bitterness. The sourness is firm, and the elegant sweetness quietly mixes. Unlike other sogas, the rice polishing ratio is 70%. You can feel the miscellaneous taste of rice. You can feel the miscellaneous taste of the rice, but this is also the umami and depth. You will not get tired of drinking it. The impression is darker and richer than the other two bottles. Even if you don't cut down on the rice, you can make a delicious sake in a different direction. Sake is very deep. By the way, the Soga Sauvignon Blanc that we opened together has a beautiful light yellow color with a hint of pink. It has an elegant aroma of citrus. When you taste it, you will feel a slight swoosh. It has a refreshing acidity, a hint of sweetness, and a lingering citrus bitterness. It's different from sake, but I think it has the same taste direction. I'm sure you'll agree that it's a great way to start a new year, but it's also a great way to start a new year. It's delicious. Rice polishing ratio: 59 Sake rice: Miyamanishiki Alcohol content: 16 Obuse Winery "Soga Pere Effis Saké Erotique Numérosis" yeast #6 was used. This is the second Numérosy, the last one was made by Domaine Ikeda and the ingredients were from Nobutoku Dendo. This time Numérosis is a normal lot. Open the bottle. It has a quiet ginjo aroma with some fruity and lactic acidity. It is not gorgeous, but refreshing. When it is included in the mouth, the fruity and elegant sweetness and umami spread around the umami acidity with a soft spicy taste, and the slight bittersweet accent is pleasant. The bitterness and spiciness are stronger in Numeroan than in Numero Sis. I remember that the Domaine Ikeda of Numérosyis I drank before was a little sweeter and more fruity. I didn't feel much of a sense of traditional sake, but it was a well-balanced and mellow sake. Unlike the wine on the bottle, this sake was brewed with a sincere approach to the rice and yeast. It's not as surprising as it was when I drank it before, but it's good - all of them are good, but I like the No.6 because it's easy to understand. I want to drink it again next year. It's delicious. Happy.
