This is the first time I bought Eiko Fuji.
It is made by Fuji Shuzo, which is not sold in many liquor stores in Nagoya, though I have been drinking it sometimes in bars.
Rice used : 78% Miyamanishiki from Yamagata, 22% Yamadanishiki from Okayama
Rice polishing ratio : 50% Alcohol : 17.4% Yeast : Association No.10
"It is a very limited edition sake that is only shipped once a year.
When you open the bottle, the fruity ginjo aroma like a ripe pineapple stands out gorgeously.
The taste is rich and sweet. Then, the solid sourness and bitterness melt into the sweetness.
It is powerful and rich.
For a snack, I went to a pickle shop near my house, Jutawaraya Fuso Sohonke, and picked up some Nara pickles.
"It's not too much, but it's good 😄.
After about 3 days, the taste opened up again and the balance got better.
I spent a few hot nights with this sake.
Delicious.
