Sake that I asked Maru-san to buy for me
I received it at the Sakai Off-line Meeting
Hoshi-Izumi is my favorite brand.
There are only a few places in Kansai where you can buy it💦.
It appeared to be over a year old in the store.
I was told before purchase, so no problem there.
Lots of bubbles in the glass when poured 🫧.
Aged a little? It smells like it's advanced, but it's gassy and pleasantly sweet. Bitter taste in the second half. I was a little apprehensive about the date but it was delicious 😋.
If it had been fresh, would it have been rummy or citrusy?
After a week or more, I don't mind the aged feeling anymore.
I guess I got used to the aging feeling 🤣.

I bought this sake at a liquor store I wandered by.
It is a sake brewed with a first rice called Wakamizu.
The aroma is mild, with a hint of muscat.
The first sip has a unique sweetness like that of apricot curd, followed by a slightly strong bitterness.
The bitterness is a bit too much for me, so I finish the bottle after only about one gou.
The next day, the bitterness is gone and it tastes great 😊.

Sake from a sake brewery near Pekho-san's parents' home.
The brewery uses local rice called Yumeginka from the Chita Peninsula in Aichi Prefecture.
As the description says, "It is characterized by a light and soft taste.
It has a light mouthfeel with little depth and heaviness.
The taste is not umami or sweet, but rather it is united by spiciness, a slight acidity, and astringency.
It was served chilled.
The aroma I felt

I thought it might be somewhat dry, and at my husband's request for the first filleted pork cutlet in a long time, I had it with filleted pork cutlet and wonton casserole! Surprisingly, it has a subtle sweet aroma, a moderate sourness, and a tangy sharpness. It was quite ⭕️ with the hot filet mignon!

Sake from a brewery near my wife's (Peppho) parents' house
As the name suggests, it has a flavor reminiscent of white wine.
The rice flavor is not so strong, but the sweetness of the wine is strongly felt while the presence of rice is expressed by the acidity, a little astringency and bitterness.
I served it chilled.
The aroma I perceived was as follows.
-Aroma: A faint aroma reminiscent of noble rot wine.
-Aroma: A hint of sourness that passes through the nose.

Since it is wine yeast, I made ham in low temperature cooking! Added French bread on the way. Lightly baked with butter and maple syrup. It went very well with the liquor, which reminded me of sweet wine 💕It paired quite well with the bread.

Today, I traveled with my wife Bibi to Nagoya station to go back home, and after having a drink at a pub near the station, we went to each other's parents' house.
We went to a straw barbeque restaurant, and the food was good, but it took a long time to come out ... .
Hoshizumi is refreshing and seems to go well with any dish.
We started with the straw grill assortment.
I was going to drink at a hotel at night in Nagoya.
I bought it at Nagoya Takashimaya but missed drinking it and took it home.
We had it with eel from Mikawa.
The first time I drank Hoshi-Izumi, it had a sweet aroma and a strong citrus flavor in the mouth. It finishes refreshingly with a touch of umami and bitterness.
I felt less citrus flavor when paired with eel.
