The second cup is Takasago from Shizuoka. It is a Yamahai dry sake with a strong Yamahai character. It was a very typical Japanese sake. Tonight, there were four kinds of Takasago at the event.
It is a Junmai Daiginjo, but I felt some acidity due to the fact that it is a pure sake. The umami flavor spreads in the mouth and goes well with sushi.
We have come to Hakata. Let's have not only potato shochu but also sake. This is Junmai Daiginjo from Uguisu in the garden. This is "Kurogu" in particular. It has a nice aroma and a soft taste. It is quite delicious.
This is last year's 2023, which is a "orikarami" (a kind of rice cake). The taste is completely different. The slightly carbonated sweetness is pleasant. I had another glass.
This is a gem that I obtained in Kochi the other day. It uses Kochi yeast CEL24. It has a fruity sweet taste that is the opposite of the dry taste of Kochi. Interesting.
