It seems to be a test brew of malic acid + four-stage brewing. The aroma is slightly apple-like. The taste is apple-like, muscat-like sourness and sweetness. The aftertaste is sweet and sour like muscat and refreshing, which is my favorite taste 😋. I think the acidity mellows out after a few days. Unfortunately, I can't remember those sweet and sour days like the endorsement says too long ago😅.

The aroma is apple-like. The taste is silky sweet, apple-like with a slight creaminess. The soft, lingering taste on the palate and in the nose is a nice touch 😊. That was my impression when I first opened the bottle. After the third day, the mouthfeel becomes mellower and softer. After that, the taste becomes slightly astringent and slowly becomes umami, which is a wonderful taste 😋.

Dewa Sanzan unfiltered, Nakakumi Dewa Sanzu is our favorite Kamo Nishiki kafuda sake. It is probably the one I drink the most. This time, it is not the raw sake I posted before, so I'll post it again. When opened, it has a sweet aroma like strawberries. It also tastes like strawberries, very juicy and delicious. ❗️ The sweetness starts to settle down after about the 5th day, and a slight citrus sweetness may appear. It's great both when opened and after a while 😋.

It has been a long time since I have had Hiwada. I had a feeling I had had this Junmai Ginjo with a raw yeast yeast. I don't think I had ever had it😅. It tastes like a prince melon with a hint of banana. It has a thin, wrinkled umami taste with a clean aftertaste. But the next day, the aroma gradually increases and it tastes like chocolate. This is a bottle that you should take your time and enjoy the changes in taste.

This is the first time to drink at home in Nabeshima. It's a Nabeshima club, but it's also a house drinking club😄. The bottle was carefully opened in the refrigerator to cool it down, but the lid didn't fly off, which was a relief. The aroma is slightly melon? The taste is like a pineapple with a faint tingling sensation. It's not too sweet, but there is a slight astringency in the aftertaste, so you can enjoy it without getting tired of it. As the temperature rises, you can feel a good amount of sweetness and astringency at the same time. Personally, I like the balance of sweetness and astringency that becomes tame after about the third day 😊. It was so good I would buy it again if I see it 🍶.

The first Yoshida Kurau. The bottle was opened with a spontaneous sound 😄. As the bottle label says, it has a fizzy and tangy feeling. The aftertaste is silky and smooth, with a hint of sourness and umami. The minerality...I honestly don't know😅. As the day goes by, the sourness is only in the aroma, not so much in the taste, and the peachiness comes out and it's sweet 😋. I think it's a good sake to enjoy the taste change in a few days instead of drinking it all right away 😊.

NIKKOMARU - Nama sake, unadjusted, freshly brewed. I have had Nikomaru before, but this time I drank it again because it was unadulterated sake. I couldn't drink only the supernatant because the bottle was black and I couldn't see the lees 😅. The taste is sweet like melon with a slight tingling sensation. The taste is melon-like sweetness with a slight tingle, and a hint of sweetness remains while the sharpness disappears. After some time, it has a slight sweet and sour taste like green apple. And the aftertaste is also nice 😋.

《Nama Hashiroshi Junmai Daiginjo Hi-ire》. The label is gold and gorgeous 🌟. When opened, there is a faint aroma of alcohol. The taste is sweet like melon, with a slight sourness, followed by a melon-like sweetness. As the day goes by, the sweetness becomes less and less, and the taste becomes more and more sour and umami-driven. It is delicious both when opened and after a long time, and has a wonderful lingering taste.

Too cosy instrument Masamune. Junmai is my first time😊. The aroma is a hint of melon🍈. The taste is also melon, but not very melon ❗️ but meh and delicious melon! In addition to melon, it also has juiciness like pineapple and green apple, very nice ❗️😋.

This is my first time at Wataya😊I feel like I'm drinking a lot of Miyagi sake these days. The aroma is a bit of alcohol. The taste has a sourness at first, followed by a slight astringency and a nice umami that gradually comes through. After some time, the acidity softens and it feels like a green apple. The sourness and umami are so delicious that I can't stop 😄.

Thirteen nights (I think 😅) because the alcohol content is 13 degrees. There is quite a bit of lees accumulated at the bottom. So first, only the supernatant. The aroma is grape-like. When I put it in my mouth, I felt a tingling and fizzy sensation, and then an apple-like sweetness 😋. When you mix the lees, the richness increases and you may taste melon flavor as well as apple flavor. The aftertaste is refreshing and light. The low alcohol content makes it easy to drink 😋😋.

The label is just as sparkling and beautiful as the name 😊. They said it was brewed with edible rice called Niji no Kirameki. I wonder if Shirakikyu is the right name for it 😅. I was thinking 😅. The aroma is slightly smoky? There is also a weak fizziness. The acidity is quite strong when freshly opened from the fridge 💦. Sweet and sour with a green apple taste? After the second day and as the temperature rises, the acidity lessens and it has a nice muscat-like, plum-like sweet and sour taste 😋. Might be a flavor I like a lot once it settles down😊.

Junmai Ginjyo Ippatsu Kiiru Bottle Enclosure This is the first Tatsusen. The dragon on the label is cute. As written on the back of the label, it has a soft mouthfeel. The rice-umami feeling comes through gradually, and the aftertaste is also very umau-umau. It has a slight apple-like sweet-sourness to it that makes it easy to drink. I would like to try another Tatsusen because it was so good 😄❗️

This is the first time I drink Sanzen Sakura at home. The aroma is faintly melon. The mouthfeel is very smooth, and I think I can taste a slight sourness behind the sweetness of the melon. The melon taste at first becomes less intense after about the third day, but the aftertaste is more pronounced. Local sake makes me happy when I drink it 😊.

The fragrance of a good fragrance. (Kojien) The aroma is sweet with a hint of jasmine at the back. It has a juicy sweet melon and banana flavor with a slight fizziness. After a few days, the initial melon-banana taste weakens, but the aftertaste is long and lingering.

Miyamanishiki, directly drawn, freshly pressed, undiluted sake, Nakadori. I've had Masumi a few times, but MIYASAKA is new to me 😊. The aroma is fresh and sweet. It has a fizzy and tangy aroma, and the taste is sweet like muscat and green apple, followed by sourness. As the temperature rises, the acidity is less pronounced and the juicy sweetness becomes more dominant. Personally, I like the sweetness and tartness at about the third day. I drank it all in 3 days, so I don't know after that... 😅

Junmai Hi-ire This is my favorite sake from Maruishi Brewery. It is my first time to drink something other than Ni-Usagi, so I am looking forward to it. When the bottle is opened, there is a nice sound and a fizzy feeling. On the palate, there is a sweetness like muscat and a refreshing acidity. A slight astringency in the back for a moment. The aftertaste is delicious with a silky feeling followed by a whiff of sweetness 😋. From the second day on, the juiciness becomes muted and mellow, but good 😆.
