It is getting colder, but we are still going for autumn sake. Kouko cold-aged sake. It has a sweet and sour taste that is typical of Koshi, with a moderately dry taste that is well controlled. Although it is hi-ire, it still has a subtle gasiness that adds a nice accent. After drinking it, we noticed that it has a strong umami flavor and is free of any clutter, which is hard to believe given the 80% milled rice ratio. It is a delicious sake that permeates the palate and relieves the fatigue of a week's work.

This is the first time I have tasted Manjusen since visiting the brewery in GW this year, and the first time I have tasted the Omachi version. The taste is clean and refreshing, as is typical of Manjusen, and the sweetness characteristic of Omachi has a slightly spicy nuance. The taste is mild with umami, and the aftertaste is dry with a slight bitterness. We enjoyed it with yellowtail sashimi.

This is the first time I have tasted Kamikimoto's "nama-hashiroshi" type. It has a sour and dry taste with a strong aftertaste. It tastes like a royal road sake. The sweetness is restrained, but it tastes exquisite as a food sake.

Kushira, Gosho City, Nara Prefecture, 80% polished rice nigori sake. I was afraid to open it because the label said to be careful of explosion, but nothing happened and I stirred it by myself. Although it is a low-polished sake, it has a clean taste with no cloying flavors. The sweetness is moderate with a bitter dry aftertaste. It tastes like a rice cider, and you can't stop drinking it.

This year's new sake has been arriving one after another, but I want to enjoy some more autumn sake. So today we have Gobashi hiyaoroshi. It is a straightforward sake with a low sweetness and a good acidity. It has a dry taste with the umami of rice on the palate. It is an orthodox sake, but it has a calm taste that goes well with any meal.

It's getting colder, so we're having our first nabe of the season. It is a good season. The sake to be paired with mizutaki is Itaru, a Japanese sake from Sado Island. It has a gorgeous ginjo-like flavor with a rich rice flavor and just the right amount of dryness. I like this unique flavor, which is distinctly different from the light and dry style of Niigata.

Taki Pride in Nabari City, Mie Prefecture. I had it during my summer vacation trip to Ise-Shima. When you take a sip, you feel a melon-like sweetness for a moment, followed by the sourness, bitterness, and dry aftertaste characteristic of Yamahai, which develops in a complex way. It goes well with meals and has a very unique taste, but it is my favorite type.

We drank Yonetsuru's nigori sake last year at this time of the year, and we cannot miss it again this year. The bottle was opened without any blowout, and it has a firm fizzy feeling with little nigori. The taste is sharp and dry, with a strong acidity. It is refreshing and crisp. We enjoyed it with homemade stew.

This is the first Hiragana Takachiyo. The aroma is fruity. The color of the label is said to represent fruit, but it is a little dry before it has yet to ripen, with a moderate sweetness and sourness, like a pear or grapefruit. It's a great swing from the sake-like flavor of the Kanji Takachidai. It is easy to drink and will be gone in no time.

I have always found it difficult to find sake that goes well with meat dishes, and then I found Hagi no Dew's concept sake. It is slightly carbonated, has a citrusy acidity, and a richness that is typical of sake. I guess you could say that it drains away the grease from meat and makes for a refreshing drink. Today I paired it with dumplings and it was a perfect match.

Tonight's sake is Takeyuki from Yuki City, Ibaraki Prefecture, because it was delicious when I drank it at a restaurant. It has a refreshing taste, followed by a full-bodied umami flavor. The fruity taste and the sake-like character are well balanced. Unlike the image of the name, the taste is delicate and refined. Another favorite has been added to my list.

It's been a while since I've had Miyagi sake, and this is my favorite hiyaoroshi from Kenkunichi. The sweetness of Yamadanishiki can be tasted straight away. It also has a dry taste that is typical of Kenkunichi. It is not a modern taste, but you can feel the richness of sake.

It's been a while since I've had a lot of sake from the west, so this is my first Tohoku sake in a while. This is my favorite Naraman from Fukushima. It's a perfect balance of sake-like and fruity with a dry sweetness. It felt luxurious even though it was a weekday.

Shinkame's hiyaoroshi, the standard type, is aged for two years or more, but this one has been aged only one summer, so it tastes a little lighter. However, the bitter flavor typical of Shinkame is still present. The sweetness of Yamada-Nishiki can be felt moderately, and it was the perfect combination with grilled Sanma, the king of autumnal delicacies.

Sogen純米八反錦 ひやおろし原酒

We were able to enjoy Sogen's hiyaoroshi again this year. Along with the rich sweetness and umami, it has the refreshing acidity of Hachitan-Nishiki and a moderately dry taste. It is a clear expression of Sogen's character. I read on the website that the brewery is gradually recovering from the earthquake on New Year's Day, but I am worried about the effects of the recent torrential rain. I am looking forward to this year's new sake.

I went to Chiebijin's Nakano Sake Brewery after discovering that my business trip to Oita happened to be close by. I bought a bottle of Nama-juku, which is raw sake that has been slowly laid down for half a year, as a souvenir. It has a flavor like aged wine, which is hard to believe it is made from rice. It has a rich sweetness with a strong umami flavor. The moderate bitterness is a nice accent that keeps you from getting tired of drinking it. We enjoyed it with pizza.

Suddenly it's chilly, just right for drinking autumn sake. We have a bottle of Tennyo with a fiery autumn label. I have had a few Tenjiku and thought it was mild, but this Hiyayoroshi has an amazing quirkiness. It has a smoky flavor, minimal sweetness, a strong bitterness, and a tingling, dry aftertaste. It's like a San'in sake, and is probably best served hot. I don't dislike it.

It is the second half of September, but it has been extremely hot every day, and autumn sakes are being released one after another. Today's sake is Kaiun Hiyoroshi, which has a refreshing muscat-like flavor with a solid core. The dryness and bitterness of the aftertaste are also a nice accent. It is a sake of the royal road.

Tagaji in Kurashiki City, Okayama Prefecture, and Omachi is the name of Okayama. It is slightly effervescent and has a rich spicy sweetness characteristic of Omachi. It has a tangy, dry aftertaste. It is wild and fresh like an unfiltered raw sake, and is quite a unique sake. We had it with pork gingerbread, but it seems to go well with meat dishes in general.

Okura from Kashiba City, Nara Prefecture, a brand I had been curious about and finally came across. I had heard that it had a peculiar taste, but it was indeed rich and aromatic with a unique flavor. However, it was not as bad as I expected and was easy to drink with a taste similar to that of Tamagawa. It was a good match with gyoza (Chinese dumplings).
