Quite fizzy when poured. The sake stopper is not usable and the crown is inserted back in. Aomori apple juice, cherry smell. Fermented sour apple juice, wine-like but sweet and sour, rich and strong fizz, very sour and sweaty, sometimes tingling when it hits the throat. Dry, sour umami aftertaste. Refreshing with an elaborate taste like drinking Aomori apple juice or a refreshing vinegar drink. Delicious. Sentori makes me happy when I drink it. Vinegar when warmed. Looks more delicious when aged. Day 2. Failure. It's frozen. Gas is also escaping from the gap in the crown. Taste didn't change that much after freezing.

When paired with a meal, the bitterness and spiciness are emphasized, and when eaten with spicy food, the juiciness is emphasized. There is nothing to like but the euphoric taste that draws you into the world of Tazake and makes you feel euphoric. 3rd day. The acidity and sweetness do not change to overpowering, and the clean, juicy taste is delicious with the strength of the rice without the cloying taste of the rice. It is the best rice wine I have ever tasted.

The bitterness gradually lingers in the mouth. As time goes by, the sweetness and umami gradually swell and the juice flavor becomes stronger, giving it a robust drinking experience. When paired with food, it gives the impression of clean water with a delicious flavor. When drunk on its own, it has a bitter taste from the start, but the bitterness is less noticeable, supporting the food from behind and making the drink delicious. When paired with chocolate, the sweetness of the chocolate is a perfect match. It is so delicious that you would think it was a pairing! The second day. The juiciness of pineapple is up, sweet rice flavor, acidity is weak, and bitterness appears in the second half.

Tsuchida's only raw sake. I have a weakness for that kind of thing. The lid was too tight to open, so a bottle opener was used. Light yellow with whitish tints. Lactic acid, banana, fermented peach, and a sweet rummy smell when the temperature rises. The aroma is rich. First, the top clear. The taste is sour and astringent, and the sour umami from fermented rice rises sharply and then disappears suddenly. There is a lingering sourness and a hint of sweetness. The rice-fermented umami astringency is thick, grain and bitter. There is a slight effervescence, but it is not noticeable due to the sourness and mildness. Slowly diffuse and mingle with the rice wine. The wine has a subtle sweetness, fruitiness, and acidity, which become less pronounced and cohesive, making it easy to drink. The aftertaste is sour and bitter. The wine shows a rough side, but when paired with food, it gently follows the food, making both the alcohol and the food delicious and showing an unexpected side to the wine! I have had it without the lees and with food, and I could enjoy it with my eyes closed. When it was at room temperature and left to sit for a while, I smelled it and thought it was soy sauce? Four days later. The astringency is gone and the fruitiness is not too sweet. The firmness has been removed and it tastes good. When the lees are mixed, the cider has a nice rice flavor. It has a unique lingering sourness and is delicious on its own. It would be a shame to lose it.

When it reaches the back of the throat, the sourness can be felt well, but it is not too sour. The sourness is fresh and tart. Sometimes a little bitterness. Overall, it is clean and easy to drink. The acidity and umami taste are not too weak and satisfying. It is quite good. I started drinking it because I wanted to compare it with the same yeast as the Rainfall, but I was relaxed and satisfied with how good it was. There is no apple taste. I can drink it all without getting tired of drinking it. The third day. Sour. The taste is voluminous. As you drink it, you get used to it and don't mind the sourness so much.

On the palate, there is a balance of sweet and sour tones typical of Yonotori, but the presence of elegantly withered cedar barrels is impressive, rising in the mid-palate. The lingering sweetness, which is typical of kijo-zake, is also present for a moderate length of time before receding. The description says that the sake will mature well after about five years of storage. It has a sweet aroma with a hint of sourness. The smell of lactic acidity is in the back. Tastes of thick mango and sour pineapple. The accent-like unique flavor is probably the smell of dead cedar barrels. The sweet and umami taste comes and then fades away as if a wave recedes. A delicious sake with a fruity taste and a woody flavor that cuts through nicely. The second day. Ice cream with rum and the smell of fresh citrus fruits. Like mandarin orange juice. More like syrup than juice, thick and rich. A little bit of bitterness, but the sweet and sour taste is too much to drink. I can't taste the wood flavor. Day 3. frozen for 20 hours. It is not stiff, but becomes sorbet-like. It tastes sour and reminds me of sake. It is quite tasty cold. The sweetness is suppressed. I think it's a good idea to freeze it after each meal. It is the first time for me to get drunk after eating sherbet.

It has a light peachiness, a refreshing, yet tight acidity, a taste of rice, astringency, and finally a spiciness that spreads rapidly. It is delicious, but the price is too high. It is a good food sake, but the price is too high. It is too good to drink with chilled tofu. I like it. When I ate it with food, the spiciness I felt when drinking it alone was converted into umami, and the subtle sweetness and umami made me want to eat more. When I ate it with fish, I enjoyed the umami and savory taste. It is delicious. The smell gets stronger as the temperature rises. The second day. Juicy. Grape-like.
