This is a "low-temperature fermented ginjo-brewed junmai nama sake. It has a clean, dry sharpness and a powerful flavor unique to nama sake. It has a strong personality and flavor that makes it very drinkable. Although it is a nama sake, it can be enjoyed cold or hot. (From the Furuki Sake Shop website) I thought Nada was the only sake from the Kinki region, so I ordered this sake from Osaka. It is really refreshing, but leaves a delicious aftertaste. Rather than resetting the palate from the previous dish, it was more like savoring the lingering aftertaste of the previous dish with the sake. It was delicious.

This Honjozo has a mild banana-like aroma with a great sharpness. It has a more evolved flavor than Atago no Matsu Honjozo, as it has the ability to wash down dishes and enhance the next dish. You will enjoy it until the very last glass. -The secret story behind the birth of the separately brewed honjozo In the days of the old brewery, there was a tank in which only the very best quality was produced, and that was tank No. 63. The sake brewed in the No. 63 tank was sold as "separately brewed" and that was the beginning of its birth. The name "Sixty-three" is also written on the label strip. Currently, we offer selected quality sake as Betsujikomi Honjozo. (From Shinzawa Brewery's website) We had this at Kimboshi in Akihabara. It was a very nice restaurant with reasonable prices for both food and sake. Personally, my favorite sake from the Shinzawa Brewery is an oddball called Hiryu, but this Atago no Matsu was refreshing and delicious.

Yumeko" is a rice suitable for sake brewing that was bred at the Fukushima Prefectural Agricultural Experiment Station with Hachitan-Nishiki No. 1 as the mother and Dewa-Sanzan as the father, and after 10 years of selection of superior individuals, it made its debut. It is a large-grained, soft rice with a large heart white that easily absorbs and melts water, and is highly suited for sake brewing. Tenmei Yume no Aroma 40" is made with "Yume no Aroma" from Aizu Sakashita, the local area, and brewed with our own yeast NATSUKI and Utsukushima Dream Yeast F701. Both of these yeasts won gold medals in the Junmai Daiginjo category at the Fukushima Prefecture Spring Competition, and the Utsukushima Yume Yeast brewed with NATSUKI won the prefectural governor's award. The aroma is fresh and mild, the mouthfeel is smooth and mild, and the juicy, pleasantly voluminous taste with the delicious flavor of rice has a soft, feminine image. The aroma, delicate flavor, mouthfeel, and sharpness of the aftertaste are well-balanced and full-bodied, giving it a different appeal from the standard Tenmei. Yamadanishiki grown by contract farmers in the town of Ounan-cho, Shimane Prefecture, where the brewery is located, is used to brew this beer. It is bottle-fired once to seal in the gorgeous aroma and flavor derived from the yeast. It is a pure rice sake with a natural flavor that expresses the softness of the ultra-soft water, the mellow flavor of Yamadanishiki, and the natural sweetness and flavor of the rice without any embellishment. It is completely different from the light, dry wines of Niigata to date. It has a fresh aroma, sweetness and umami that fills the mouth, and the first sips are fruity. After a while, astringency and acidity appear. The sweet aftertaste is impressive. The "Kosher Certified" sake, chosen around the world, is also perfect for entertaining guests from abroad." (From Sake-no-Kadoya's website) I went to Yoshiike in Ueno to look for sake while buying snacks. It was sweet and refreshing. I have a stupid tongue and a poor vocabulary, so this is my limit. However, for a sweet sake, it goes well with the squid and sea urchin snack I bought it with! This is a sake I can recommend! On a different note, today's Takarazuka Kinen was jumping up and down with the title holder racing so strongly, but Deep Bond finished 4th and her ticket flew 😭 Triple Crown mare is still strong even after her injury. I would love to visit the Central Japan horse racing track someday.

A bottle given to me by a neighbor at my parents' house. It is very easy to drink, as expected of a junmai daiginjo-shu, but nothing is left after drinking. Ginjo aroma! Where is the ginjo aroma? My father and I were looking for it when we finished the bottle. If you don't like aftertaste and you like sake that can't be drunk like water, this may be for you.

Sake from the usual Bar Ashiage, where we drank a lot (literally). As expected of Shinsei, it goes in quickly and finishes refreshingly. It was a good sake. In addition to this, beer from Johata Mugishu was also available that day. The selection of sake was very good, but the Kujo onion and toburi ginger potato salad with bacon on top, pictured in the photo, was so delicious that it made my stomach growl. What kind of restaurant is this? It used to be a curry shop, but now I guess it is a Chinese restaurant.... I wonder if it is a Chinese restaurant now.......like the killer bean curd that brings tears to everyone's eyes while cooking.

I stopped by a liquor store by Ichikawa station on my way to work and unexpectedly found a liquor store's original sake, so I bought it without a second thought since I had to go home directly. The taste is very refreshing! And it has a slightly sweet lingering aroma that lingers. I don't have much vocabulary, but this is also good as a food sake. First time I've had the liquor store original, and it's damn tasty!

We believe that the maturation process of sake is not a regular progression like climbing a staircase, but rather like a biorhythmic wave, with color, taste, and aroma each repeating sine waves at different speeds. Our Dokkusu-aged sake maintains a temperature range that does not become overheated, and the addition of seasonal temperature changes creates more complex ripening waves, which over time create a mellow, soothing, and unique flavor. Named after the most famous horse of the 20th century, Symbol Rildolf. It is one of the top class breweries in Shimane. The brand name "Nanakanba" is named after the famous horse, Simbol Rudolf, from the brewery in Okuizumo, Shimane. It has a rich, robust, and never boring taste that goes well with food. It has a rich flavor and is a junmai sake that shows off the characteristics of the brewery." From the Tomozoe Honten website. This sake is produced by a relative of the Simbori farm that produced the famous horse Simbolildorf, which remains in the history of horse racing and is still talked about as being stronger than Deep Impact. It is a junmai sake, so it has a clear and tasty flavor. It is a good sake for everyday drinking at a reasonable price. And I was able to buy this Junmai Daiginjo-shu from the collaboration of the Seven Crown Horse's Uma Musume Simbolirudolfu! It was 5,500 yen for a four-pack, but a cheap purchase in Otaku Price terms. I'll write about it here when it arrives!

The pandemic (Spanish flu) that struck mankind about 100 years ago. And just the same 100 years ago. Sake and manufacturing technology were in the midst of a turbulent period. The sake named "100 years ago" is a crossroad of various feelings. The mixed fermentation of "No.1 yeast" and "No.2 yeast," which had already been discovered 100 years ago. Of course, the sake was brewed using the "ikuhashi-zukuri" method (which was the mainstream brewing method 100 years ago). We know that some may say, "Blending Fushimi (No.2 yeast) and Nada (No.1 yeast) is nonsense," but we dare to brew this futsukamono in this era. I drank it without any hesitation, and it was delicious with a gorgeous aroma! I went home and looked it up and was surprised at the price and difficulty of obtaining it. We use Domaine Sakura Yamadanishiki, which is cultivated from the beginning. The rice is grown only in rice paddies that have the same water vein as that of Senkou's brewing water.
