We believe that the maturation process of sake is not a regular progression like climbing a staircase, but rather like a biorhythmic wave, with color, taste, and aroma each repeating sine waves at different speeds. Our Dokkusu-aged sake maintains a temperature range that does not become overheated, and the addition of seasonal temperature changes creates more complex ripening waves, which over time create a mellow, soothing, and unique flavor. Can we classify this as an old sake...?
Tasted like Shaoxing wine, but not as harsh as Shaoxing wine, and it was delicious!
However, I would rather drink it occasionally than as an everyday drink.
