Yamadanishiki grown by contract farmers in the town of Ounan-cho, Shimane Prefecture, where the brewery is located, is used to brew this beer. It is bottle-fired once to seal in the gorgeous aroma and flavor derived from the yeast. It is a pure rice sake with a natural flavor that expresses the softness of the ultra-soft water, the mellow flavor of Yamadanishiki, and the natural sweetness and flavor of the rice without any embellishment. It has been a while since I have had this sake, but I have been drinking it slowly.
I had a glass at my usual bar. It was delicious.
