Yumeko" is a rice suitable for sake brewing that was bred at the Fukushima Prefectural Agricultural Experiment Station with Hachitan-Nishiki No. 1 as the mother and Dewa-Sanzan as the father, and after 10 years of selection of superior individuals, it made its debut. It is a large-grained, soft rice with a large heart white that easily absorbs and melts water, and is highly suited for sake brewing.
Tenmei Yume no Aroma 40" is made with "Yume no Aroma" from Aizu Sakashita, the local area, and brewed with our own yeast NATSUKI and Utsukushima Dream Yeast F701. Both of these yeasts won gold medals in the Junmai Daiginjo category at the Fukushima Prefecture Spring Competition, and the Utsukushima Yume Yeast brewed with NATSUKI won the prefectural governor's award.
The aroma is fresh and mild, the mouthfeel is smooth and mild, and the juicy, pleasantly voluminous taste with the delicious flavor of rice has a soft, feminine image. The aroma, delicate flavor, mouthfeel, and sharpness of the aftertaste are well-balanced and full-bodied, giving it a different appeal from the standard Tenmei.
