MIYASAKA Junmai Ginjo Nakadori MIYASAKA Junmai Ginjo Nakadori Rice polishing ratio 55% Seimaibuai Alcohol 15% Alcohol Bright and lively flavor maybe a bit like green apples. Some bitterness but also some sweetness and umami. My wife says It starts with a mellow aroma, then there is a slight tangerine taste, and after that there is a very wrinkled sensation in the mouth, which gives the impression that this sake is alive!

男山 好都合二〇二三 Otokoyama Koutsugou 2023 アルコール 14% Alcohol This was fun. A 900ml bottle for less than ¥800, that’s a “can’t say No price “. Definitely a win-win situation. Otokoyama’s Year End Blend 2023. So I guess every bottle will have a different flavor. Our bottle was well balanced, not too sweet, not too bitter, not too dry. I guess that’s to be expected in a blend. It was good but maybe not exciting or spectacular or distinct. Paired nicely with Kamo Niku Nabe (Duck Stew).

Hakkaisan Rishu #591 Hakkaisan Rishu #591 Rice: 60% Yamadanishiki from Kuchiyoshikawa, Hyogo, 40% Miyama Nishiki from Nagano-ken Rice: 60% Yamadanishiki from Hyogo-ken, 40% Miyama Nishiki from Nagano-ken Alcohol 16.5% Alcohol Soft mouthfeel, fruity but not sweet . Smooth and elegant this is a great Sake to drink after dinner. Of course, we drank it with dinner too! The mouthfeel is fruity and grapefruity, but it also has an indigenous flavor that is very consistent.

ひらん 彩道 Hiran Saido 種 類 純米生酛 原材料 米(国産)・米麹(国産米) 容 量 1800ml/720ml アルコール 14度※ロットにより After all the other Sake I’m not sure how to evaluate this one. It’s kind of a dark horse It has a soft round umami. Not a dynamic Sake, but It will compliment food from the background but also will be nice to drink by itself. We would love to try it with shortcake, Nama cream, or strawberries. Maybe next time! 鳥海山 辛口純米 無濾過 生原酒 Chokaisan Karakuchi Junmai Muroka Nama Genshu 精米歩合 70% Seimaibuai アルコール 17% Alcohol 日本酒度 +10 Nihonshudo 酸度 1.8 Acidity アミノ酸 0.8 Amino Acids Dry and bitter but not harsh. This might sound strange but it has a kind of subtle dark chocolate flavor. Pairs really well with Zangi (Hokkaido style chicken karaage) and garlicky edamame.

八重垣 純米吟醸山田錦ひやおろし限定 Yaegaki Junmai Ginjo Yamadanishiki Hiyaoroshi Gentei 精米歩合 60% Seimaibuai アルコール 15% Alcohol Soft, smooth mouthfeel. Really easy to drink, as is. We were “sampling” this a bit too much; let’s try it with food! Mmmm. It pairs really well with sashimi & sushi (鮭, あわび, 鰤, マグロ, 中トロ). This Yaegaki ヤヱガキ even pairs nicely with ラ フランス pears but not so well with 柿の種 senbei.

醸し人九平次 純米大吟醸 自家栽培、山田錦100%使用 黒田庄に生まれて Kamoshibito Kuheiji Jika Saibai Yamadanishiki 100% Grown in Hyogo-Ken, Kuroda-Sho 精米具合 50% アルコール 16% 兵庫県産山田錦100%使用 Initially a little fruity flavored but has some sharp bitterness. Subsequent cups are full flavored deliciousness. I can’t stop drinking it. Holds up well even with a strong flavored sukiyaki. Definitely a savory Sake, the flavor lasts a while. I could drink this by itself without food. Delicious!

東洋美人 限定 純米吟醸 亀の尾 Touyou Bijin Gentei Junmai Ginjo Kame no O Much more mellow and softer than the Manazuru. It has a slight Koji fragrance and flavor. Lots of umami and a little tanginess and melon flavor. Matches well with salmon tataki (but sadly, not hotate sashimi) Pairs pretty good with persimmons.

Too strong for hotate sashimi. I think we will save some for tomorrow's sukiyaki. I think we will save some for tomorrow's sukiyaki. I think it goes well with rich dishes. For example, it might go well with oden or maybe cream pasta.

玉川 純米吟醸 みゃー5 Tamagawa Junmai Ginjo Mya-5 精米歩合 Seimaibuai 60% アルコール Alcohol 14% Round, mellow flavor. Kind of like white chocolate. It’s a solid Sake that can be drunk by itself. It’s an okay match with sashimi but an interesting match with roasted pecans. Also it’s not bad match with persimmon or adzuki manju.

常山 美山錦 Jozan Miyamanishiki Initial flavor is Sweet quickly followed by sharp tanginess. Subsequent glasses are flavorful with umami My wife says first impression was sparkly and fresh however having it with sushi and sashimi it become kind of numb. it doesn’t bother food but it does not improve with food. This Sake is good, but maybe it’s best to drink this by itself with a little bit of salty snacks
