The first sip of this sake has a refreshing fruitiness that continues to be delicious. An enjoyable sake. A nice fruity Sake that has a mild peach flavor and a good level of umami. A fine Sake to drink on its own or with food.

As it warms, more umami and full flavor flavors come out. Good, easy to drink sake. Paired well with unagi and also soft umeboshi

伊乎乃 辛口山廃 純米吟醸 原酒 Iono Karakuchi Yamahai Junmai Ginjo Genshu 精米歩合 55% Seimaibuai アルコール 17% alcohol 日本酒度 +7 Nihonshudo 酸度 1.5 Acidity Has a smooth Karakuchi flavor. If the label didn’t tell me, I would never guess that it’s a Yamahai or Junmai or even a Genshu. This Iono avoids the extreme flavors from each of those categories It DOES NOT have a chewy full flavor of a yamahai or Junmai. It does not have an overly sharp alcohol flavor like some Genshus It’s very well balanced! Delicious

Kamoshibito Kuheiji Usunigori Kamoshibito Kuheiji Usunigori Kurodasho grown Yamadanishiki Alcohol 16% Alcohol This is a perfect example of deliciousness. It has a slight uneasiness in the mouth, but it also has a stable feeling as it goes down the throat. Sourness, bitterness, umami, and a somewhat elegant taste. Tonight, I had it with sesame soba noodles.

小鼓 純米 無濾過 生原酒 Kitaizumi Junmai Muroka Nama Genshu 精米歩合 麹米 50% 掛米 70% Seimaibuai: Kouji-mai 50% Kake-mai 70% アルコール 17% Alcohol Fairly cloudy Initial flavor has a Pronounced acidity stings the back of my tongue. Umami sweetness lingers. This is very nice to drink by itself. Oh! Mixing the 澱 really brings out a much fuller flavor. Delicious! Pairs well with sashimi/sushi. Does not lose to Okra 朝付け. Can’t wait to try other sake from this 蔵。

I guess you could say it brings out the best in food. I'll have it. Sampled over two nights Initial flavor is slightly bitter and medium dry. A tangy finish with a mild sweetness that coats your mouth. Paired nicely with lemon butter salmon foil Yaki, pork & gyoja garlic but not as well with soft cheeses.

I took a sip and compared it with cheese and banana chips.... It goes well with ❣️ this-love ❤️ Sampled over two nights Definitely yogurt like flavor Paired nicely with pork & gyoja garlic and really well with soft cheeses But dominated lemon butter salmon foil Yaki. Will save some to try with pasta.

おたる島影 純米吟醸 Otaru Shimakage Junmai Ginjo 精米歩合 55% Seimaibuai アルコール 15% Alcohol Smooth and easy to drink like water. A good supporting actor with tempura soba and Ikura-don. A very pleasant sake with food but it does not have a strong personality on its own.

Koji flavor is also strong giving this a broad umami flavor that doesn’t lose to a garlicky 豚丼 Very pleasant and easy to drink despite being 17% alcohol. 気をつけて❣️ We are really glad to discover another excellent delicious Sake from Aichi-ken 💕

Same with Nisshin tataki The first bite reminds you of your old home, as if you are being told "welcome home". A sense of stability and security abounds. I had it with salted herring tataki.
