It starts with a veil of sourness
After that, the full range of bitter-sweetness is revealed.
The last part is a grapefruit-like bitter sourness
fades out with a bitter-sour finish.

One of the two bottles we decided on after communicating with the 🍶 sake brewer. This is one of the two bottles I decided to drink. It is delicious.

Good aroma
Mild on the palate
Light sweetness and acidity
The deep umami follows.
There is a little bit of alcohol taste and a little bit of sibilance on the tongue.
It goes well with snacks.
By the way, I paired it with Chanja and Ume crystals.
His wife, who loves Omachi, tasted it at a sake event and bought it.
She said there is no special distributor in her area.
The aroma is sweet and pineapple-like.
The mouthfeel is gentle, and after the acidity spreads in the mouth, the delicious and complex flavor of rice peculiar to Omachi spreads.
The lingering aftertaste is very pleasant on the nose.
There are many 17° sakes that I like because of the pleasant aftertaste, but it is difficult to drink a lot of them because I get drunk easily😅.

At Niigata-kan. They challenged the concept of a dry junmai sake that can also be enjoyed for its flavor. It is said to be a very dry sake brewed with junmai rice that makes use of medium-hard water for brewing, with a basic sake degree of 15 degrees or higher. It was indeed very dry.
