Tangy whey flavor. A little tingling effervescence while sipping but no bubbles in the Choko.
Secondary flavor is a little bitter, in a good way.
Finish is a bit alcohol heavy, but this mellows out with the second or third choko.
Pretty good with まぐろ叩き丼 but really good with バームクーヘン with whipped cream and strawberries.

Dominated the flavor of 帆立刺身
Possibly too strong for マグロ、シャケ
あん肝 味付け玉といくら paired better with this full flavored sake.
Definitely approach this sake like a Sherry or Port.

Overall The flavor is delicious. We love Kuheiji, so we are biased.
The initial flavor had a sudden Koji / yeasty flavor but the flavor mellowed in subsequent sips with a lip-smacking umami richness.
This Kuheiji develops some citrus flavors as it approached room temperature

The first sip reminds one of a mild fruitiness like banana or melon. The sweetness of koji goes well with white rice. Sushi, onigiri, chazuke (rice with green tea), etc. would be good.
Thick mouth feel, really sticks to your teeth & tongue
Flavor is like melon or unripe banana.
Rather sweet as we approach the bottom of the bottle.
Goes well with fresh peach slices and Nagano Purple grapes.

It has been a long time since I have had this sake, but it is as stable as if I had returned to my old home. It goes well with cream cheese with bonito flakes on it.
Dry, with crisp tangy grassy finish and a bit of an alcohol flavored punch.
Good pairing with sashimi
