I picked it up unexpectedly because it popped differently from the label I knew. The aroma has an acidity like green apple or pineapple. I drank it cold. As is typical of nama-zake (?), there is a slight stimulation on the tongue. A bit of stimulation on the tongue. There is almost no sweetness. The bitterness is strong, but not unpleasant. It is not the type that envelopes the meal, but the type that accompanies the meal (it does not assimilate, but it does not go with the meal). I decided to try a brand that I don't usually see, so I looked it up on the Internet and found Shinmasa Cosmos at the store I visited. I had been wondering when I would be able to try it, so I was happy to pick it up. The moment I put it in my mouth, I felt the delicious sourness spreading like a sizzle. There is sweetness as well, but it kicks in right after the jouwer. Gorgeous! Day 2. The sweetness and umami are becoming clearer and more delicious. No wonder it is so popular, it is a very tasty sake.
