Today is Sake Day! So I opened the best sake in the house 😁. I saved it for a Junmai Daiginjo from Amami! Fresh and crisp with a gentle sweetness and umami! The gentle taste that seems to snuggle up to you is true 😊. Today is also the birthday of the president of Changshu Brewery! Congratulations 🎊

This one I drank today 😀. When I went to Ikebukuro for the first time in a while, I went to Masushin Shoten and wondered if they had Shinsei, but I couldn't find it at that time! Instead, I bought this one, the one I wanted 😁. Orangey citrusy aroma and freshness. Alcohol content is 16 degrees, but it seems stronger 🤔. It feels harsh at low temperatures, so I enjoyed the aroma and lingering flavor when it was closer to cold 😋.

Today I'm drinking alone at the wind diner 😀. I went to a sake event called Wakate no Yoake (Dawn of the Young) in Otemachi on Friday the 23rd, and when I mentioned that the Hiyayogoshi from Tobiran was the best sake there, they had just stocked it, so I was the first one to be allowed to try it! The flavor changes depending on the temperature, but when it is cooled down, it has a sweet and sour taste like a green apple and a long lingering umami flavor, making it a pleasant gem 🍏. At chilled, it's a little more tart and plum-like! The lingering calmness that only hiya oroshi can give is the best ❤.

When I went back to my parents' house, they bought a bottle of Miyazumi for me and my father. It's not often you find a yeast-free, sake yeast with a raw yeast yeast yeast! It has a light sweetness and acidity. It's easy to drink, with a lactic acidity, but also a sharp finish 😀. I'm sure it would be great warmed up too! I'm glad I got to try it because it's a limited production in the prefecture and I've been wanting to try it for a while now 😊.

It's been a long time coming, but here's a continuation of the Wind Diner Genshu Mai, I've been wanting to drink for a while, so I ordered it 😀. This is Yamada-Nishiki, with a sweet and umami flavor that really stands out 😊. It was the one that was gone before I knew it! Well, I'm going back to my hometown of Fukushima for summer vacation starting today, so I'm looking forward to enjoying some Fukushima sake✨.

The Wind Diner continued The sake seemed to have been aged from the raw sake, and while it retained the tingling sensation that only raw sake can have, it had a melon-like flavor that was less sweet and more subdued 🍈. It goes perfectly with fermented foods such as miso and cheese 😀.

Went to Kaze no Shokudo for a drink for the first time in a month 😀. They saved me a bottle of Niimasa Viridian because there was only a few bottles left 😁. It's sweet and sour, but very sweet. The label said it smelled of kiwi and mint, and if you ask me, I thought it had a slight minty flavor, but it was hard for me to tell lol. The mouth feel was very smooth and easy to drink 😊.

Today I opened a bottle of sexy ripe sake I bought at Kagataya liquor store 🙂. They say maturing the raw sake at the right temperature makes it sweeter 🤔. This time Hyakurakumon is dry with a sake strength of +15, but it doesn't taste harsh, it has a tingling sensation that remains fresh, but also has a mild sweetness. The aftertaste is bitter and dry! I think I could have felt a little more sexy with a sweet sake, but this one is a little less sexy 💋.

My fridge was ruined, so i bought a new one! When I close the freezer door, the fridge door opens by itself, so I'm at the end of my rope lol. 20+ year old thing I got used. Thanks for your help 🙇♂️ From 164L to 218L 😀. I️ opened a nice one to celebrate buying a new one. Daiginjo from Tokaimori, which won the gold medal at this year's National New Sake Competition! The guy at my favorite store bought it for me when he went on a tour of the brewery 👏✨. Gorgeous ginjo aroma! Pitchy, mildly sweet, and refreshing! The alcohol content is 16%, but it's easy to drink, yet you can feel its depth! The higher the temperature, the stronger the alcohol taste becomes, so we recommend serving it at a cooler temperature, such as Hanakaze or Ryoakaze 🙂. It goes well with cheese and meat dishes👍

I went to a liquor store in Mizonokuchi yesterday and they were really pushing the day date so I bought some 😁. I was looking forward to it because I've never had it before, including Musha Shugyo, so I opened the bottle this day 😀. It's so pithy and fresh! More pear than apple 🍐. I thought it would have a stronger rice flavor since it's made with Tojo Yamadanishiki, but it had a more subdued taste 😊.

I'm drinking at home today because of what I got 😀. Nikko Honor, which my senior at work bought for me on a trip to Nikko. Sea Urchin with Sea Urchin and Matsumae pickles from a series of small bottles of snacks given to me by a retiring junior employee who thanked me for my help. Nikko Homare is a light and dry sake, and I didn't like it on its own, but it goes really well with sea urchin! I felt again how nice it is to be able to enjoy something that you don't like 😊.

I forgot to drink and put it up💦. This is the second bottle of Shigemasu 🙂. It seems to be a limited edition made with Yame Gin-no-sato! It has a subtle sweetness and umami flavor, followed by a firm sharpness, so it's like a food sake that's easy to pair with many things 😊.

Continuation of brewing. The last sake we drank was Ten Rising Sun I ordered the shaved peach with mascarpone honey and asked for something to go with it 😀. It smelled and tasted so bananas! The creamy cheese and sweet honey went great with the melty shaved peaches 😊. I think I'm addicted to this combination😍.

I think it's more apple-y. The sourness comes first. The slight sweetness that comes after is melon? It's like a melon 🙂.

Continuation of brewing. The first Sawanoi (˙◁◁ )Pah! At first it has a gentle sweetness and umami flavor, but the alcohol content is high at 17%, so it's very dry! It went well with the fried and soaked hamo and eggplant.
