This is the first Sogen brewed after the earthquake. I was deeply moved by the experience of searching for and buying Sogen right after I got hooked on sake and the earthquake. The fresh mouthfeel and flavor of the sake is typical of nama-shu, and the strength of the rice (not only umami, but also sweetness) is well expressed. However, there is no heaviness at all, and it goes in smoothly. There is a slight tingling at the end, perhaps due to the alcohol or the freshness of the wine. It has a wonderful umami that seems to enhance any meal. 4.50

Juicy fruity sake with a good balance of white wine-like sweetness and acidity with a good amount of sake-like umami. It is very drinkable, but it is light and low in alcohol throughout (which is nice considering the alcohol content). I thought it was a white malted rice sake. Like the other day's Higashi Tsuru, I wonder if white malted rice sake suits my palate. I didn't know they made such a modern sake in Niigata! (I like it better than Niimasa) 4.75

(Left photo) (I can hardly tell the difference as I don't have a good taste buds. First impression: gorgeously fruity! The mouthfeel is sweet and sour like berries, which is typical of Niimasa. A little woodiness or umami and bitterness in the aftertaste. I think the S is a little more umami than the S. If anything, I prefer the S, or is the S enough? 4.50

The richness of the aroma and the impression of strong umami are contrasted by the smoothness of the mouthfeel. It has a strong umami flavor, but it also has a gorgeousness that fills the mouth that was not apparent on the nose. As the temperature rises, it becomes even sweeter and more fruity and can be enjoyed on its own, but it is also extremely well-balanced and does not interfere with meals at all, making it an excellent mid-meal sake. The first Katsushikoma was a hard-to-find sake that lived up to its name! 4.75

Oh, it's so sweet! The morning coolness I drank last year did not taste so good, but this is a sweet and juicy type that I like! It has a strong flavor, but it is not heavy at all, and the price is the best! Continuation of brewing. The last sake we drank was Ten Rising Sun I ordered the shaved peach with mascarpone honey and asked for something to go with it 😀. It smelled and tasted so bananas! The creamy cheese and sweet honey went great with the melty shaved peaches 😊. I think I'm addicted to this combination😍.

Continuation of brewing. Like an apple🍎 or a melon🍈. Which one or both? I've been curious about this one for a while, so I ordered it 😀. The label said juicy like an apple, fruity like a melon. I think it's more apple-y. The sourness comes first. The slight sweetness that comes after is melon? It's like a melon 🙂.

Continuation of brewing. The first Sawanoi (˙◁◁ )Pah! At first it has a gentle sweetness and umami flavor, but the alcohol content is high at 17%, so it's very dry! It went well with the fried and soaked hamo and eggplant.

Continuation of brewing. I had it served with the one that goes with the pickled firefly squid and cream cheese with sakataki 😀. Yes, correct 🙆💮. Dry, refreshing and sharp! I'm an arafaholic who used to not be able to eat saketo or offshore pickles, but I find them delicious 🙂.

First brew in a month! Well, I've been coming once a month, so I guess that's about it. As a reward for working 6 days in a row, I ordered a set of sake snacks today and am drinking it slowly 😁. The first glass of sparkling Taka was recommended to me, and since I was in a hurry and wanted to refresh myself, I went ahead and ordered it 😀. The nigori flavor, bitterness and gasiness were pleasant and great for the first drink 𓂃◌𓈒𓐍 It went well with the yuba sashimi and I was ready to drink more and more 😁.

Here's the rest of what I drank last week. I've been drinking it and writing it down, but after a week, my impressions are questionable lol. It has a gentle ginjo aroma, light on the palate and easy to drink 😀.

Last Saturday I went to the 2nd anniversary celebration of Komae's brewery 😀. It started at 9pm and I was already drinking elsewhere, so I could only have a few drinks, but I had a great time! I toasted with a sparkling Sanzenzori! It was lighter and more refreshing than the Hato Masamune we drank yesterday! (The timeline is strange lol)

Here's the one I forgot to put up before💦. The picture is so bad you can't see it at all, but the dragon on the label is really cool✨. Citrusy aroma and refreshing flavor. Finishes with a nice kick. Hiroshima, or is it Hachitan-Nishiki's character 😀.
