The third bottle was a Junmai Daiginjo light nigori unfiltered raw sake made from 80% Gohyakumangoku rice!
What is that? Is the remaining 20% the same Yamadanishiki as last year? I had my doubts, but I opened the bottle immediately!
Perhaps because it is Gohyakumangoku, it is even more refreshing than Koshihikari and So no Mai! I like the balance of refreshing acidity, a hint of sweetness, and a bitter aftertaste, making it a summery sake! The second bottle was Junmai Daiginjo Usunigori Unfiltered Nama-shu made from So-no-Mai, Chiba Prefecture's preferred rice for sake brewing!
Compared to the Koshihikari, which had a strong sweetness, this bottle had a crisp acidity and umami flavor!

The first one is a junmai sake made with Koshihikari rice!
Every year, Koshihikari is the first to sell out!
Perhaps it is because it is made with rice that has been polished to 90%, but it has a delicious sweetness and flavor with little cloying taste.
When I opened the bottle a little after taking it out of the refrigerator, the lid popped off! The shuwashu and sweet flavor are superb! KumakichiSake Mirai sold out immediately last year due to its new product and small production.
Production increased this year? Beautiful sake is now much easier to buy!
I enjoyed the rich, sweet, ripe melon-like sweetness, yet refreshing at the end.

This unfiltered sake made with Omachi has the sweet flavor of Omachi and the fresh, crisp taste of unfiltered sake, which is typical of Kangiku!
TRUE RED was also available until the year before last, but I don't think I saw it last year!

Kawanakajima Genmai Junmai Ginjo Omachi Shiboritate Unfiltered Nama-shu
Kawanakajima Genmai has a completely different taste even though they are the same brand, but the junmai ginjo made with omachi has a sweet and delicious taste that I like!
I can taste minerals in Nagano sake, and Kawanakajima Genmai is one of the best! KumakichiA bottle of Kawanakajima Genmai, which I always buy when I find it.

I have the impression that most of them are junmai ginjo specs, but the special junmai is also a tasty one!

Tasake PREMIUM Sake Komachi Yamahai Junmai Ginjo
The PREMIUM series of Junmai Daiginjo specs sell for 11,000 yen, but this one is a Junmai Ginjo✕ Yamahai✕Sakekomachi priced at about 2,500 yen!
Like the image on the label, the first sip was deliciously gorgeous & sweet! This is a tasake (rice wine), but I got the impression that the modern flavor was even more polished! KumakichiA special bottle of my favorite Sou no Mai by Kangiku, polished to 29%.
Sangiku Silver Lining
A bottle of our favorite rice for sake brewing from Chiba Prefecture, So-no-Mai, polished to such a high level that there is no reason why it can't be delicious!
The sweet-ripe apple-like flavor and beautiful acidity make it a bottle that you will never get tired of!

Kangiku Meikozo OCEAN99 Kukai
This is also one of Sangiku's refreshing types, but it has a juicy sweet flavor and a refreshing sharpness that is superb!
It is a bottle that can be drunk even in the hot daytime of early summer. KumakichiI was able to buy a bottle of this new product released in 2025 from my favorite company, Kangiku, so I opened the bottle immediately.
Kangiku Meizo Hazy Moon-2025 Junmai Daiginjo Oorigarami
A bottle made from Fukuoka Prefecture's Jugemu rice suitable for sake brewing!
The father is Yamada-Nishiki and the mother is Yume-Ichikyo, a crossbreed of sake rice that is commonly grown in the Kyushu region.
The taste was well-balanced with a beautiful sweetness, a refreshingly smooth acidity, and a moderate bitterness!
Among the Kangiku series, I had the impression that the lingering acidity was particularly enjoyable for a long time! It is so delicious that we hope it will become an annual staple! KumakichiMy favorite Aiyama season is almost over.
Since I can't miss Kangiku's Aizan 50 every year, I opened a bottle as soon as I bought it!
This year, I was under the impression that it had a refreshingly hard taste, but it was delicious and enjoyable!

I personally think that the 300ml is easier to understand and tastier, as was the case with the Kuroryu Autumn Sake I drank the year before last. It is often said that the taste is a little different between 1 sho (1800ml) and 4 gou (720ml), but even 300ml can have a distinctly different taste. I have never bought it in 1-sho bottles, so I don't know, maybe it's just a coincidence. KumakichiWe had a chance to have NEXT5's sake in a row, so we also opened a bottle of Yuki no Bijin's new sake!

The aroma is melon at first, and then pineapple.
I thought it would be a bit of a sizzle since it was directly pumped, but it was very moist and I honestly couldn't tell much of the directly pumped flavor. But it was delicious, so it was all right!
I think Toyo Bijin's sense of balance lies in the fact that it is sweet but not just a juice, which is typical of sake.
For some reason, many people have the impression that this kind of sake is harsh, but Toyo Bijin does not have that impression at all!
I am always amazed that Toyo Bijin can offer such a great taste for such a low price of 1,650 yen. Personally, I always find it more useful as a sake that is sure to be enjoyed with others than by myself. KumakichiKawanakajima Genmai's Aizan, released once a year, was ready to drink this year!
When I see on SNS that it is on sale, I go to two liquor stores that carry it, and this time I was able to buy one of the last two bottles!
I was able to enjoy the sweetness, acidity, umami, bitterness, and drinkable flavor that is typical of Aizan! AAJIThe one I was able to obtain was a freshly squeezed, unfiltered, raw sake of Miyamanishiki. It had a soft aroma and taste. I would like to try Aizan's Genmai someday 😀. KumakichiI've been hard at work since the beginning of the year, and although I've been drinking sake, I haven't been able to post anything, so I'm posting this all together.
The fourth bottle is Yamamoto No. 6 Yeast
This is another annual bottle! Yamamoto Shuzo brewed this one using yeast No. 6, and it was pleasant to drink with a clear and transparent flavor and acidity! KumakichiI've been hard at work since the beginning of the year, and although I've been drinking sake, I haven't been able to post anything, so I'm posting this all together.
The second bottle is Kuroryu Doroguchi.
This one is a must have every year!
I love the taste of Kuroryu, which has a deliciously clean taste, but it also tastes as if it has a tender, sweet flavor.
I heard a rumor that it was sold out, but when I found it, it was a must-buy! ma-ki-Hello, Kumakichi.
