On the second day after opening, the top clearings alone are slightly classic sweet and tasty. I think it had more acidity when I opened it just yesterday. When the brewer was in town for a tasting and sale, I bought a bottle because it was delicious and reasonably priced. Yesterday, I enjoyed it with carbonated soda, as recommended by the brewer, and straight. Both were delicious. And this evening, I tasted the top clear distillate. It is a multi-player sake that can be enjoyed in various ways and has a high cost performance. I can't believe it's been sitting here for almost a year and a half.

Slightly sweet, tasty, acidic, clean and crisp. For a moment, I thought it was slightly classic, but since it was made by Takachiyo Sake Brewery, it was perfectly modern. A 4-pack bottle is reasonably priced at 1,540 yen, and although it is alky, it is delicious and full of flavor. It reminded me of Atago's Matsusasara Oragara Nama. Ah, Takachiyo is wonderful. I envy the number of brands I can't catch up with.... But this year I was finally able to drink some of it.

It has 2 acidity, 1 umami, 1 sweetness, and finishes gently with bitterness. I went to the Mimuro Sake Fair at Asano Sake Shop once and tried 6 different kinds of sake, but the most impressive and tasty was this one I ordered separately.  Since then, I have had many other tasty sakes, but this one has become a milestone in my life. Thank you for the sake.

A modern sake with a sweet-sour flavor that is uniquely Japanese. When we visited Fushimi last year, we bought a bottle of one of the 18 varieties we tried at the Fushimi Sake Brewery Alley, and my wife liked the one that left the best impression on her. It has been left at room temperature for a year, so it looks like it was left in the stone, but my wife still enjoyed it, saying it was delicious and to her liking, forgetting that she had bought it based on her own preference. I'm glad to hear her say so.

Fairly clean, umami + slightly spicy mouthfeel. It has a basic sake-like feel.  Some time ago, my wife read an article about a packaged sake that the editor-in-chief of dancyu loves to drink, and we bought it when we came across a mini-pack at a discount price. I found out that it has an alcohol content of just under 15% and a sake alcohol content of +3.5, which is a very satisfactory specification.  Is it good? If you ask me, it's not bad, but it doesn't have that much sparkle either. However, I think it is the best if you like it. I think so. Or is it to put it in the bath and drink it lukewarm...?

As soon as the bottle was opened, it had a nice aroma with a "psshhhh" sound. The clear flavor, mild acidity, and a hint of sweetness were pleasant and went down my throat smoothly. It is a pity that I could have enjoyed it more if my nose had not been in the state of a faucet with a damaged seal on the faucet stem due to hay fever. I remember that the Shizenkou Fumiko Junmai I had previously had at a restaurant had a complex flavor, but this one had a very refined taste and I felt it had a solid foundation that allowed me to drink it with peace of mind. It was delicious.

Kaku-uchi at Sugawara Sake Brewery @ Hakata Along with Shigemasu, the most memorable was the third from the left, Kibotsuru Special Junmai Unfiltered Nama. Slightly dry, with a hint of delicious bitterness. The unfiltered draft is still very strong. It is delicious.

Kaku-uchi at Sake Shop Sugawara @ Hakata My wife and I had a total of 6 kinds of sake, but my favorite and most memorable was Shige Masu, the second one from the right. It was refreshingly delicious and had the refined taste of junodai.

Sake Bar Nomokka @ Imaizumi, Fukuoka This was a fairly average tasting junmai ginjo. Conversely, it was a typical beautiful sake, and I didn't really feel anything unique about it...I wanted a little more impact. I would have liked a little more impact. I don't know what to say to a top-class brewery in Ibaraki Prefecture, though. Sorry for those who like Morishima.

Sake Bar Nomokka @ Imaizumi, Fukuoka A sake unlike any of the other various takachiyos, but with the same aroma. This is an Omachi takachiyo that apparently hasn't been released since then. It has a sweet and sour taste, a unique aroma, but I don't dislike it. It has been stored in ice for less than 5 years, so I didn't detect any hiney aroma.

During my recent trip to Kyushu, I had a chance to go to a brewery open house and was served 1, 3, 6, 7, 9, and a free-flowing sake and amazake, which I don't know what it was. I think I enjoyed the 3 light nigori, which is full of rice flavor, and the 9 awayura. Perhaps because it is within walking distance from Hakata Station, and perhaps because it was a warm sunny day ahead of the season, there were so many people in the not so spacious premises that it was hard to take the time to savor the sake....

A fruity, refreshing sake with a deliciously bitter acidity. This is a summer sake from Kubiki Shuzo, which I ended up missing out on at the Niigata Sake-no-jin in OSAKA and later regretted when I found out that it was not available in Osaka. When I visited Toyama, I found it on the line at Liquor Pocket Mizuhata and held out for a bottle of Haneya. Yum! It has a bit of an "alu" feeling in the throat, but I like it, this lingering aftertaste. I wonder if they will distribute it in Osaka as well, Kubiki Shuzo.

Good aroma. It has a mild, light taste, a classic type with a modern jacket, and when you put it in your mouth and taste it, it has a modern, clean, acidic taste, but it has a classic feel through the throat. I'm glad it didn't seem to go bad.

It was a classic flavor, slightly acidic, slightly sweet, quite tasty, and mild on the palate. We are heading to Hakata on the izakaya shinkansen in the early morning. I plan to visit the Kyushu National Museum and the Hananoka Sake Brewery tomorrow. I hope I can buy Hana-no-Kou... After dinner, I had a Junmai Daiginjo bonbon from Sogen for dessert. Yum! Ah, blissful moment, thank you, thank you, thank you.

Sorry, I mention this because it is not sake, but sake made by the Nakano Sake Brewery of Chiebijin. The ingredients are black tea, plum wine, brandy, and sugar, and that is exactly what it tastes like. Of course, it is delicious because it bears the name "Chiebijin. Brandy is also used, so it has a Western aroma, and the black tea and plum wine, well, there is no other way to describe it (laugh). I bought this at the brewery the winter before last, and the picture of the brewery is from that time. It has a low alcohol content, so it is healthy.

A clear, beautiful sake with a clean, uncluttered taste. It is a little light, medium to slightly dry. It was so cold, with snow flurries and a strong wind, that I was hesitant to drink even half a bottle of cold sake. First, we had sake ice cream and amazake in front of the station's waiting ticket gate. The amazake was so hot that even the store owner had to add a word of warning, and it was so thick that there was no convection, so it stayed hot to the end. It was not so sweet, and the ginger was deliciously warming. The ice cream in the extreme cold was still delicious. It was soft enough to be eaten with the miniature spoon provided, and not at all kinky or stiff. The soon-to-be-completed Miwa Lore Storehouse and the cedar barrels mentioned in the installation were visible. It was right in front of the second torii gate.

Good fruity aroma. The sweetness, flavor, and acidity are all in harmony, and the high quality of this beautiful sake is well balanced. It is delicious, Kamikawa Taisetsu, Midorigaoka Kura. Northern breweries, revive! written by Wama Tarumi and published by Sekaibunka-sha, I had read about how the Kamikawa Taisetsu Sake Brewery expanded its business in cooperation with local people in various parts of Hokkaido, starting from its origins to the Midorigaoka Brewery, Hekiun Brewery, and Goryonokura, so it was even better. What is this Project X-like development? It was a book worth reading.

It was purchased last summer at a Famima at Isahaya station. The aroma is not strong, and it is a classic sake. The taste is light, with a sweetness and umami that is not strong, followed by a sharp alcohol taste. The alcohol content is not that high, at 14 degrees. It must be a very well-made sake, since it is alkalo-sweetened and has added sugar and acidity. The tingling and numbing sensation on the tongue is also different from the gaseous sensation of other delicious sake.... If you like Showa-style hot sake + choko🍶, this might suit you. Not my cup of tea, though.

Tangy and gassy. Slightly sweet, umami, slightly acidic, with a nice sharpness. It reminds me of Kaze no Mori, perhaps because the raw material rice is dewy leaf wind. It has a deep flavor and thickness that only an unfiltered, unfiltered, raw sake can have. It is delicious.
