I had it at room temperature. Classic sake type. The aroma is traditional and not so strong. Since it is a jun-dai sold at convenience stores, it has the feel of a traditional sake, or the royal road of sake. The mouthfeel is moderately rich, neither sweet nor spicy, with a clear flavor that has been polished and honed. If it is a 4-gouple bottle, the label in this color is made from Sako Nishiki, a sake rice produced in Shimane Prefecture, but there is no indication of the raw material rice used.

I had been taking good care of it, and it was almost time for the new brewing year to come out, so I quickly opened the bottle. The aroma was fruity! It's so good! Most people would find it hard to believe that this is made from rice. Enjoy the aroma. Levety and delicious! It has a somewhat thick mouthfeel, acidity sweetness, and then an alu feeling. When it finishes, a hint of bitterness peeks out. Saiya Sake Brewery is wonderful! It is astonishing that this sake brewery does not even reach the top 5 of saketime in Akita Prefecture! We are just thankful for the delicious sake. Thank you for the sake.

It has a gentle mouthfeel, not too strong aroma, mild acidity, and a hint of sweetness without being harsh. The label says that the sake degree is +4.9, but it does not seem so dry. The umami flavor still prevails. It is a food sake that can be drunk with a meal. According to the Mioya Sake Brewery website, it is a year-round product and is also sold overseas. This sake was also ordered from Okuda, a sake boutique in Wajima, and we enjoyed it. Thanks for the food.

I bought this at Costco when it was on sale. I'm sorry I left it for a year because it can be stored at room temperature. The color seems to have darkened a bit. The slight bubbling is still present, but not to the point of spewing, and after the sound of pressure release, the fine bubbles just gush out for a while and then subside. The label also says that there are individual differences. It was a delicious sparkling sake, not too sweet, but with a good acidity and a nice sharpness. It is not sake-like in a good sense, and I think it is suitable for a variety of people. It is corked with a crown, so it is necessary to open it considering that it will be consumed on the same day it is opened, but the low alcohol content of 8 degrees still makes it a low hurdle. Thanks for the treat.

It is light, refreshing, and has a light, tasty acidity. It is a delicious sake, just as Mr. Tsuruno says on the label. Recently, I have started to see the second Makuake brand on the e-commerce sites of some liquor stores here, and I wonder if it is difficult to sell two bottles for 6,600 yen. If you can still get your hands on a bottle, we hope you will drink it along with the first one and help the Noto sake brewery to revive its business. A little while ago, a collaboration sake between Kamikawa Taisetsu Shuzo and Hiyoshi Shuzo of Kinpyo Shirakoma was also released. Thank you for allowing me to enjoy drinking sake like this today.

The aroma on the nose is fruity, light yet moderately rich. There is a punch of tangy acidity on the tongue, and it disappears quietly. It is a great pleasure for me to be able to drink Jun Dai at a reasonable price. I missed out on Hatsumu, Spring, Summer, and Autumn because I didn't have enough room in my refrigerator, but I hope to complete the collection someday. I have only had Sake Mirai and Omachi, which I tasted at Yamanaka Sake store, and I'm really torn...

Kagoshima Tenpyo. First comes the umami, followed by the acidity. It has a moderate richness and a complex flavor that is not overly polished, which is typical of junmai. It is not often seen, and I bought this one at Sumiyoshi Shuhan in Fukuoka, so I wonder where I will find it next...

It was a delicious sake with a fairly classic aroma, a clean throat, and a delicious taste that finished off with an alu feel. I have never had a sake other than Kurogu, but I remember Kurogu was very tasty with a refreshing sweet and sour taste. It is said to be a challenge series brewed with No. 9 yeast and Kyushu (Fukuoka) Yamadanishiki, but now it is off the official website except for Jun Dai, so maybe it was not so well received by the traditional fans of Garden no Uguisu. Mellow classic. As the label says, it has a Sake meter value of +2, so it doesn't seem too spicy. Slightly tasty, with a hint of acidity. It is a local sake from Okayama, so it is made from 100% Bizen Omachi. Bought locally when I went to Nichio in early spring to eat oyster mushrooms. It is a small fire-brewed bottle, and it is very difficult to find a good one in a souvenir store.

Mellow. Fruity but mild aroma. It has a slightly refreshingly acidic taste with a well-cornered flavor and throat. Seasonal raw sake that does not often appear on the official Choryu Sake Brewery web site. It is more often found on the pages of the stores where it is sold. The individual brand name is "Momijitsutakkamu," which is one of the 72 Houshi. The Asano Sake Shop's installation says "Fucho-oh," so I wonder if it is that one as a product. It tastes like a sweet, refreshing sake that goes down easy. Those of you who know the commercial "Naahoruho-do, yoi-saake, chooooooooooooooooooooooooo...", we are both old enough to have enjoyed the sake. Thank you for the delicious sake!

Izakaya Shinkansen @ Tsurugi. I imagined it would be thick, robust, and mildly sweet like a noble wine because it is a kijoshu, but it was not. It was a delicious sake with a clean sweet and sour taste and a light nigori (light reddish-brown) taste that still had a delicious rice flavor, just like amazake. If it had not been made with kijoshu, the rice flavor would have been less pronounced. The sake was served in the Fukui area, near the Kuroryu Sake Brewery, which opened up the world of sake for me. (Laughs) In addition, I will be going to the Toyama City area where Manjusen and Haneya are located, thank you very much. Thank God for sake. Thanks for the food.

Sake with beautiful acidity. The sweetness comes afterwards and lingers. It is not persistent, but it is not sharp. Fruity and delicious. This sake was brewed at the Mori Sake Brewery in Nagasaki, a long way from home. Since there is no description other than "all Yamada-Nishiki" and "needs to be kept cool," we do not know the rice polishing ratio or the degree of fire-refining. According to the SAKE Street Online store, it is 50% polished rice, junmai.

It has a refreshing sweet and sour taste, with a unique aroma due to the 807 and low rice polishing. It is a very different sake from the clear, watery sake or the refined, polished, and pure sake of the jun-dai class. Aizan is sweeter than the Shirakiku Collaboration Jun Dai from Okunoto the other day. Different.... As expected from Kaze no Mori, this is a sake not to be missed along with the nearby Chiyo (Shinomine). I am thinking of opening a bottle of Takachiyo's 59 Aizan next to compare. If you want to compare Aizan, there is also Maruishi's Niwolf (lol). I didn't know that Kaze no Mori is also written on the bottom of the bottle.

One of the bottles ordered from Okuda, a sake boutique in Wajima City. It is delicious, bitter, refreshing, and light. It is different in that it is made with the original ultra-hard water from the Aburacho Sake Brewery and Kanazawa yeast, but it has more of the Kaze no Mori character than the sake made with the original recipe. So why not just go with Kaze no Mori, which is only half the price? But that's not the point. But that's the main purpose of brewing this sake, so we will enjoy it while hoping for the recovery of sake breweries in the Noto Peninsula.

I also went to Toyoshuku's store at the Kintetsu Namba station, but I don't think they had any memorable sake.... Well, you get the idea, right?

The second edition of Noto's Sake to Stop Sake, brewed by the Shirafuji Sake Brewery in Wajima and the Aburacho Sake Brewery in Kaze no Mori, we thought it would be better to buy it from a liquor store in Wajima rather than get it directly on Makuake, so we ordered it from Sake Boutique Okuda. It has a very slight yellowish color and gasiness. It has a rather clean mouthfeel and acidity. It is fruity, but not too sweet, and has a moderate umami. As I drank it, fine bubbles gradually started to appear, and I realized that it had been brewed at Yucho. I had wanted this Shirafuji and Yucho sake since I heard about the matching of the second batch, so I bought it when I thought I would run out if I didn't buy it soon, but on the very day it arrived, Sake Boutique Okuda was flooded on the floor. It is not a quantity that I can buy immediately, but I will order again when the time comes. I will continue to pay attention to the Shirafuji, Nakajima, and Hiyoshi Sake Breweries so that they can all make a recovery. By the way, you were fire-brewed sake....
