Sorry, I mention this because it is not sake, but sake made by the Nakano Sake Brewery of Chiebijin.
The ingredients are black tea, plum wine, brandy, and sugar, and that is exactly what it tastes like.
Of course, it is delicious because it bears the name "Chiebijin. Brandy is also used, so it has a Western aroma, and the black tea and plum wine, well, there is no other way to describe it (laugh).
I bought this at the brewery the winter before last, and the picture of the brewery is from that time. It has a low alcohol content, so it is healthy.

It was so cold, with snow flurries and a strong wind, that I was hesitant to drink even half a bottle of cold sake. First, we had sake ice cream and amazake in front of the station's waiting ticket gate.
The amazake was so hot that even the store owner had to add a word of warning, and it was so thick that there was no convection, so it stayed hot to the end. It was not so sweet, and the ginger was deliciously warming. The ice cream in the extreme cold was still delicious. Northern breweries, revive! written by Wama Tarumi and published by Sekaibunka-sha, I had read about how the Kamikawa Taisetsu Sake Brewery expanded its business in cooperation with local people in various parts of Hokkaido, starting from its origins to the Midorigaoka Brewery, Hekiun Brewery, and Goryonokura, so it was even better.
What is this Project X-like development? It was a book worth reading.
It was purchased last summer at a Famima at Isahaya station.
The aroma is not strong, and it is a classic sake.
The taste is light, with a sweetness and umami that is not strong, followed by a sharp alcohol taste. The alcohol content is not that high, at 14 degrees. It must be a very well-made sake, since it is alkalo-sweetened and has added sugar and acidity. The tingling and numbing sensation on the tongue is also different from the gaseous sensation of other delicious sake.... If you like Showa-style hot sake + choko🍶, this might suit you. Not my cup of tea, though.
Tangy and gassy. Slightly sweet, umami, slightly acidic, with a nice sharpness. It reminds me of Kaze no Mori, perhaps because the raw material rice is dewy leaf wind. It has a deep flavor and thickness that only an unfiltered, unfiltered, raw sake can have.

Last year at the same store, I got a reduced-price bottle of arabashiri in the summer and thought it would be an extension of the same bottle that I had enjoyed with freshly squeezed winter sake, but the Suzumisake was mainly sour, with no sweetness or richness, just the refreshing summer type.

As I thought last year when I had it for the first time, it is not as sweet and tasty as the image, but quite refreshing.
O-TYPE Zero Ray
Delicious acidity. And gasiness, fruity. The mouthfeel is medium to slightly thick and a little peculiar. It is not the type of watery sake that goes down smoothly, but the type that you want to savor slowly. It is not a sake, but some other kind of delicious drink. It is a stable Shin Takatsukiyo that even gives you the feeling that it is not a sake, but some other delicious drink.
This sake had also been sitting in the refrigerator for a year, and the new year's sales started with the A-TYPE, so I prepared two 4-Gou bottles, made some free space, and opened a bottle. The label says "Do not overturn", but it had been in the vegetable room for a year. It was fine.
Without a sake cellar, it's not easy to open a bottle of raw sake, but I finished sharing it easily, so I may do it again. My wife will be angry at me, though, saying the fridge is too small. I'll do my best to reduce it.

I bought a bottle of the Co-op's private brand sake "Niji no Banquet," which was on the Co-op's year-end and New Year's leaflet, to try out the freshly squeezed sake that is popular every year.
The label says that because it is freshly squeezed, the fruity aroma and fresh raw taste are exceptional, but, to be honest, I don't think I will buy it next year. The price was reasonable at a little over 1,000 yen, but since it was on the shelf, I doubted if it was even fresh sake. If it's unpasteurized, shouldn't it be refrigerated? There is no indication that it needs to be refrigerated, and I am not sure about this sake.
After a night, the alkaline taste became stronger and the acidity was a little bit lowered. Takana pickles went so well with it that it made me laugh.
Slightly gassy. Unlike Hiragana Takachiyo, it is not so sweet and refreshing, but since it is unfiltered, it is a tasty sake with a somewhat strong flavor.
If we had to choose between modern and classic, it would clearly be the modern type, but the sweetness and fruity flavor is moderate, so I think it would be a good match for people with various tastes.

I read the label on the back of the bottle carefully and found that it is supposed to be served at room temperature or lukewarm, so I warmed it up on the second day. I usually don't like heated sake, but this sake seemed to be better suited for this purpose than for chilled sake. It seems that junmai without red plum is also suitable for chilled drinking.
