The fourth restaurant we visited in Saijo, Fukubito Shuzo. We were served Junmai Ginjo, which is probably a standard item. It was refreshing, slightly tasty, and slightly sweet. There are many beautiful sake in Japan. I have been trying to complete the list, yes. The brewery is located in the back of the sake brewery street, and the brewer was alone, perhaps because there were only a few visitors, or perhaps it was the wrong time of day. There was a space for display and explanation, and a quiet space for tasting and selling sake.

The Kamotsuru Sake Brewery is the third brewery we visited in Saijo, the sake capital of Japan. The Kamotsuru Gold, with its round, solid silhouette and low center of gravity, stands out on the shelves of the supermarket. We were served this brand, which is only sold at six special distributors nationwide and here. Akane Hiroshima Nishiki (Junmai), a classic type. Ai: Omachi (special junmai) Somewhat classic, clean and tasty acidity. More acidic than Akane. Orange Hachitan 35 (Junmai Ginjo) Clean, weak character, easy to drink. Ugui Yamadanishiki (Junmai Daiginjo) Soft and sweet, with a unique junmai mouthfeel, but the price is 2.5 times higher than the others, which is a bottleneck. Many of them are labeled 100 yen per cup, except for the premium priced ones, which are very reasonable. Mini rice fields at the entrance of the building, Akiromann, Hiroshima's resident rice, and Yamadanishiki are grown, reminding us that Yamadanishiki grows tall, I knew it. There were many, but not all, of the brands we tasted, and we felt that this brewery is one of the largest and best-funded in Saijo. The fourth one, "Ao Saae," which I was attracted to because of the words "raw sake," was a mature sake with a bit of a peculiar taste, but lacking in characteristics.

Next White Botan Sake Brewery. We had two kinds of Horoiyoi Walking Coupon. Daiginjo-Ichi no Shizuku: Deliciously refreshing and slightly heavy. Junmai Ginjyo Nama Storage: Medium-bodied with a refreshing acidity. The Kamotsuru brewery is located next to the Hakubutan chimney. The breweries and sites of the various sake brewing companies in this area were all in a jumble, and it was quite impressive. I thought that this area had a lot to offer for calling itself the "Sake Capital of Japan.

I went on a trip to Saijo, the sake capital of Japan. First, Saijotsuru Brewery. (2) Aizan: Fruity acidity, lighter than Omachi. (3) Yumachi (limited edition for the first brewery opening): rich, powerful sake. Neither is light, but punchy. It was the first sake, so of course it was delicious! (lol) (Since it was the first sake, I would have liked to have had some other unfiltered junmai if I had more energy left after visiting other places, but in reality, I ran out of time...and that was the end of it.

Ama-uma-saaan(Sweet, delicious and acidic)! Very well balanced! Nothing to say. If you see it, you must drink it. The mouthfeel is mellow, not too light and not too heavy, and it finishes softly. It may not be suitable for those who prefer dry sake. When I visited Fukuoka in early spring, I went to the Hana-no-Kou Sake Brewery to get a bottle of Hana-no-Kou instead of San-do. This is the one I brought back from among the many varieties of Wakanoha at a sake shop in Yanagawa. When I came home from work, the kitchen was not cleaned, my sons didn't seem to come down at all, and I was thinking, "I don't want to cook rice, wash dishes, and think about dinner myself on Father's Day! When I got home, my second son made a main dish and miso soup. So I left it to him so that I could put out the garbage tomorrow morning, and vacuumed a little. I was vacuuming a little so I could put out the garbage tomorrow morning.

The aroma is mild, the flavor and acidity come through nicely, and it is a delicious sake that finishes crisp and clean. Takehaha by Kazuma Sake Brewery was brewed at Yoshida Sake Brewery in Tedorigawa as part of the first phase of Makuake's "Stop Noto's Sake" project. This is one of the bottles we ordered from Wajima, along with the second batch of raw sake. I had read in a book about the Kamikawa Taisetsu Brewery that "Yumasaru-shu" means "sake that makes you drink a lot," and while there is nothing spectacular or outstanding about this Takeha original recipe reproduction, there is something about it that captures and holds your attention. It is simply delicious. It is simply delicious.

This double-named bottle was brewed under the supervision of the brewer at Yukawa Sake Brewery using rice saved from the Shirafuji Sake Brewery. The aroma is quite strong. It had a slightly yellowish color, a refreshing acidity, a moderate sweetness, and a slight bitterness, and was a delicious sake with a slightly thick mouthfeel. The collaboration sake with Kaze no Mori's Aburanaga Shuzo was a draft, so I enjoyed it without much time to drink, but the one I received from a local liquor store in Wajima earlier was a fire-aged sake, so I let it sit for a long time. We could not let it stay for two summers even though it was indoors, so we have now opened the bottle. Some of the breweries that were affected by the Noto Peninsula earthquake have reopened on their own, others are brewing with the cooperation of breweries in the prefecture, but we have not seen any sake from the Shirafuji Brewery, so it appears that they are still in the process of reopening. We hope to see them again.

It was a fresh sake with a fruity aroma, a clean and light mouthfeel, a slightly sweet taste, and a bitter finish. It was a new sake only available at the opening of the brewery, but after five months in the refrigerator, we enjoyed it as a refreshing sake that is also suitable for summer. It's a pity that Umenoyado has restructured its sake lineup to focus more on liqueurs. It's too bad, because it's such a delicious sake. I guess it hurts that Kaze no Mori and Shinomine are so close to each other...

The bottle was opened with the sound of gas escaping. The fruity aroma is moderate, and the middle to light, refreshing taste is followed moderately by the aroma of sweet-tart acidity and rice. The sweet, delicious acidity and rice aroma linger modestly in the mouth. I have had Tsuchida at a sake festival at Takashimaya, but this is the first Gunma sake that I bought and drank at home. Recently, I've been drinking fire-brewed sake stored in a cool dark place before it gets too hot, but now and then I need to cut back on the amount of raw sake I drink.

I saw it in a flyer at the supermarket and ran out to buy it, but was a little disappointed to find that it was never out of stock after I purchased it. However, I did not see any reviews of Junmai Ginjo, but only of Junmai or Junmai Daiginjo sake, which is a mystery. There was none of the rich sweetness that is often seen in reviews of junmai, and it was a fairly standard, classic sake, neither dark nor light, sweet nor spicy, but rather a medium saké. As a junmai ginjo, it has a clear taste with no cloying flavors, as expected.

It is a casual sake with a refreshing sweet and sour taste. I bought a bottle at the Niigata prefecture antenna store in KITTE Osaka at my son's request. It has a moderate alcohol content of 8%, a refreshing aftertaste, and a junmai (65% polished rice) ratio, which is good, of course, for a major Niigata sake brewer. However, there are many inexpensive chu-hi and happoshu available on the market, so I think it would be tough to compete with them...

This was the first kijoshu I drank at home. It was a completely different sake from Isshaku Suisei's X-factor. The aroma is quite classic. It has a rich mouthfeel with a yellowish color. However, after a year and a half of storage at room temperature, albeit in a cool and dark place, I think it has lost some of its flavor.... It is now renewed as Chiebijin Kijoshu with kanji characters, and won the gold medal in the premier lukewarm category of the heated sake contest.

My first impression was that it was a refreshing type with a sour taste and not sweet, but once I got used to it, I found it to be less so. The aroma was weak and classic, and although it was a low-alcohol type at 12°C, I felt the alu flavor quite well. When I checked the Masumi website, I found that it had been on the market for 9 years, and that they announced the end of sales in late summer of last year.... Although it was brewed with the aim of becoming a next-generation standard, it seems that it was not accepted by the market. It is a pity because I think the concept is good.

Elegant sparkling with sweet and sour taste. It is a very ordinary, but impeccably beautiful sake. It was a good wine that I could drink easily. When I visited Fukuoka in early spring, I went to Omuta on the second day and rented a car to visit the brewery. We arrived at the brewery a little after 11:00 a.m., stopping at a roadside station along the way. At the Hanakairo (store) attached to the brewery, there was one customer who had already purchased two bottles of sansho and only one bottle of sansho remained! Wow! Fortunately, there is a SANDO store within easy reach of my house, so I decided to buy a local brand, Hana-no-Kou (fragrance of cherry blossoms). My wife, who usually criticizes me for the pressure of the refrigerator on the draft sake, could not pass up the opportunity to buy three bottles of sake: a draft of Yuki-hana, a fire-brewed Sakura-hana, and a bottle of Umeshu. We were supposed to open them at the inn, but we changed our minds and decided to drink them in their proper form, so we packed them carefully and brought them home. I brought it back home with great care, including packing. As an added bonus, I got a commemorative 200 check-in.

It is a good major product that can be purchased at convenience stores. It is a type that finishes with bitterness. When it comes back to room temperature, it has a bad smell and is not so good. The amount is not enough to open a bottle, but it's good for when you want to drink a lot. It is an aluminum can, so it is easy to recycle. I have never seen returnable bottles other than Ippodo, so it is hard for me to buy returnable bottles.

Usuberini-san for the previous year, which was ordered by mail order after other stores started carrying 06BY. Although the aroma has some sake-like characteristics, it has a mellow mouthfeel, acidity, fruity, slightly sweet and umami, and a deep flavor that is a whole lot. It has a very strong throat feeling. The taste may be different when it is freshly made. I would like to visit Kimura Sake Brewery in Higashinari-ku someday. I missed out on buying it at the Niigata Sake-no-jin OSAKA, and there are not many mail-order stores that carry it, so I ordered it because the one I had registered as my favorite was running low.

The color is slightly yellowish, and it seems to have become a little peculiar after a year of storage. However, I got a similar impression from the unfiltered, unfiltered, raw Yamadanishiki that I received at the brewery, so it may have nothing to do with preservation. Special Junmai Slightly classic but fruity, Hurray for unfiltered raw. I rather like this one. Hatsushibori: Slightly peculiar and unique, also very good. I can't stop drinking unfiltered draft. My wife's impression was the opposite: she liked the Hatsu Shibori Junmai Ginjo more and thought the Special Junmai was peculiar.

My son found something interesting and bought it. He kept looking for it in the Cheerio vending machine and finally found it. It tasted like a cider with a refreshing fruity aroma and a delicious rice flavor. The quality of the cider is not as good as that of non-alcoholic beer, but I think it is quite good in that it gives a new awareness to people who have only an image of sake as hot sake served in a sake cup and a tokkuri (wooden cup and sake bottle). I think it's a good idea. Since it is made at Cheerio Chubu's Komaki factory, we chose Aichi Prefecture as the production area.
