It's been a long time since I've had a YENOMI. I bought it at "Sake no Yamamoto" in Minami.
Mimuro Sugi Dio Abita" Junmai Ginjo Unfiltered Harajuku (Yamada Nishiki) [Imanishi Shuzo, Nara].
It has a refreshing acidity on the palate. By the time it reaches the mid-palate, the umami in the back of the mouth quietly asserts itself. The acidity and umami are in excellent balance.
It has a crispness that leaves only a dull, echoing aftertaste, and the taste quickly dissipates.
It seems to go well with anything you eat, strong or light.
