Acidic and tasty. It has a yellowish color and a slightly classic, refreshing taste. My son won this bottle from a 1,000 yen gacha at a brewery opening in the fall of the year before last. The two dried fish included in the package were, of course, in his stomach long ago. The junmai we drank at the brewery opening last fall was "clear, refreshing, slightly acidic, and good," so I wonder if it has deteriorated by being kept at room temperature for a year. As well as the fresh sake in the refrigerator, we should drink the fire-aged sake while it is still tasty. The photo shows the entrance decoration at the opening of the brewery the year before last and the scene from last year's Osaka Pro Wrestling match. Too bad the weather was not so good last year... I read the label on the back of the bottle carefully and found that it is supposed to be served at room temperature or lukewarm, so I warmed it up on the second day. I usually don't like heated sake, but this sake seemed to be better suited for this purpose than for chilled sake. It seems that junmai without red plum is also suitable for chilled drinking.
