Although it is treated as a regular sake with al-soze and a rice polishing ratio of 68%, it was priced at a little over 1,000 yen. It was an amazing sake in many ways, with a tag that even included the lot number.

After drinking so much yesterday, we are opening the house inventory today. It is a fire-brewed sake, which is rare in the Houjun Mukashi series. Unlike the various types of nama-shu, it is a bit more mature, or rather, less assertive. It is fruity and acidic, with not so strong sweetness and bitterness, and it is grapefruit-like in the way it finishes with bitterness. The fruitiness is not as strong as in the raw sake, and it is refreshing. It's hard to narrow down the list because the Houjun Mukashi Hiragana series and the 59 series focusing on sake rice are also coming out, but they are both delicious, so I think there will be a repeat. Takachiyo banzai!

The commemorative 100th check-in was the first at Kangiku Meikozo. It was hard to find it in liquor stores in Osaka, and I finally came across it at a bar. It was delicious! I wish I could buy it at a store.

The first Jyushiro 2. It is richer than the Junmai Ginjo next door, and has more umami, acidity, and cleanness. I wonder if the difference is due to the fact that the junmai is unfiltered. As I mentioned for Kameizumi, one of the set ran out, so it became Kisoji. I have some in the fridge that I haven't opened yet, but this is the second time I've tried Yukawa Sake Brewery, following Kinmon-Nishiki, and this one tastes better. I also bought a bottle of Okunoto Shirakiku in Wajima, which was brewed by Yukawa Shuzo with rice from Shirafuji Sake Brewery and supervision by the brewery, so I am looking forward to this one.

We received the standard set. The junmai ginjo unfiltered raw sake was gone, so a different one was included in the middle of the set. The first one was Junmai Daiginjo-Hyogo-Yamada-Nishiki, which had a basic taste, as expected of Yamada-Nishiki, and as expected of jun-dai, with a good flavor and a sense of alcohol, no complaints. But the raw smell of the set was not suitable for the entrée. Next, Kisoji Natsu Junmai Ginjo Namaishu (pure rice ginjo sake), with a refreshing acidity and sweetness, this was delicious. I wonder if they are combining similar types of sake? Junmai Ginjo Nama Nama Sake Takaike 63, slightly dry, fruity and clean. It is not as good as Jun Dai, but it is also delicious. In general, Kameizumi's level is high. I hope Takashimaya will carry more than just Junmai Ginjo CEL-24 as a standard item.

Oh no, it says it must be consumed by the end of May (-_-;) I don't drink that much Kaze no Mori, nor have I drunk it recently, but I feel that the difference in yeast is somehow apparent in the difference in taste. It's kind of familiar, like a standard for good sake. Yummy yummy, I finally finished this week's work and can welcome the weekend, so I opened a special Kaze no Mori, combined with tomorrow's Father's Day. Ha, thank you for being able to drink delicious sake.

Classic sake. Slightly light taste with acidity and umami. Like the previous "Kamikai," this was one of the items purchased during the spring Tokaido Sake Brewery Tour. It was more assertive than Jinkai, with less aroma, but a stronger flavor and alcohol taste when swallowed down in the mouth. If I had to say, I think I prefer Shinkai. I would put Shiki aside as a separate category.

Fruity, clean acidity, gassy and tangy. It is modern and delicious, and the umami comes later. Although it is unfiltered, it is not "rich" and does not assert itself too strongly. Since summer sake Kabutomushi has started to appear on the market, I decided it was time to open a bottle. It is a stable Sengoku and can be enjoyed with no worries. It is delicious, and I am thankful that I can enjoy drinking sake like this today. And since I am tasting sake one by one, I can't go on with my meal. Oh well, I did it all myself.

It is labeled "Koshiki Namaoto," so it tastes like that type of sake. However, it is brewed by Sho Shiki, so it is also a Sho Shiki sake. I can only describe it as "classic and modern," or perhaps, "quintessential Sho Shiki," sorry. I usually prefer modern and glamorous, but this is delicious.
