The sweetness is restrained, balanced by umami and acidity, with a touch of bitterness that gives it a citrus-like flavor. The sharpness is outstanding.
It is good cold and refreshing, but at around 18°C (64°F), it is softer on the palate, and the umami is more spread out, which I like. It is also good heated, and at around 25°C (45°C) with some cold sake added, it has an indescribable flavor.
I prefer to drink chilled sake in a wine glass or a flat sake cup with a slightly higher temperature range.
