@Osawa of Sake Rice used is unknown Not fruity at all. It is not light and dry, and has aged well. The taste is a mellow type with a strong umami. The aftertaste is surprisingly refreshing for a Daiginjo. It is what is called "the sake of sake.

I stopped by Hashimoto Sake Brewery on my way to Yamanaka Onsen last year. The store is a bit like a museum, and you can learn a lot from the easy-to-understand explanations about the rice polishing ratio and the process of making sake. I was not able to taste the sake because I was the handle keeper, but the president recommended a lot of sake and my family was getting drunk (sweat). I drank it cold, but it was still dry. When I heated it up, it became soft, mellow, and easy to drink. The color is quite amber, so the polish may be shallow. Personally, I think drinking it at room temperature or hot is the right way to go. I like to drink sweet sake cold, but I'm starting to think it would be nice to drink dry sake hot ( ˘ω˘ ).

Second souvenir from KazKaz. It is a brand name planned and sold by 7 sake stores in Aomori. Rice used is 100% Hanasoui. The top-tasting aroma is a calm ginjo aroma. The mouthfeel is slightly sweet with a strong umami flavor. The aftertaste is reminiscent of classical sake, and is quickly cut by a refreshing acidity and bitterness. Three staggering drunks strolling to the next restaurant🐾🐈🐾 We drank only our favorites at the first restaurant, so the second one was Aomori sake (๑🍶๑🍶🍶´-) Yum! Fruity! I decided to go to ❣️ because I had never had it before and because of the words "fruity". Exactly! Aomori means scallops 🥰. This is the first time I actually ate them there 🎶. It tastes gentler than the ones I make myself ☺️ I'll use it as a reference for the next time I make it.

Purchased at Kintetsu Department Store event, Sake Tour. I compared it with Junmai Ginjo and was impressed with this one, so I bought it. Fresh and citrusy? It is sweet at the beginning, but the sweetness and umami come in the second half of the bottle. I have to admit that I've only seen Hyo Hyohi at department store events. Apparently, the brewery that makes the sake is in Awa City, which is different from the address on the label.

My parents-in-law gave me this sake as a souvenir from Tanba Sasayama. It's a completely unknown brand, so I was very nervous when I opened the bottle. Maybe it's because we've been drinking a lot of autumn sake lately, but it's surprisingly refreshing 😳 You can drink it easily without getting stuck. It has a faint sourness and a spiciness that comes afterwards, and then it goes away quickly. It's a sake made with clean water that goes well with all kinds of food. We enjoyed it with pork kimchi and horse mackerel sashimi. I want to drink it carefully, but it will probably be gone in two days☺️.
