硬く甘口お酒。 だがアルコール度数19もあり、冷やで口にすると甘味とアルコールの切れが、衝突し複雑な味わいになるのがある意味面白い。 とは言うもの、冷やと燗は向いておらず 思いっきり冷やすのが良い。ロックで飲む事がオススメ。 もともと濃く深い味わいなので、氷の3欠片程度で全く薄くならなずスムースに。あの衝突が仲良し旨口に変化しとても美味しい。

Kumamoto's local sake, Sanzanmura Slightly sweet ginjo aroma A light, sweet mouthfeel with a soft acidity. Like drinking fresh green apple juice I drank too much and my memory is fuzzy I'm not even sure of the notes I wrote at the time😅. Anyway, it's delicious! Sake brewed with sake rice grown by a pesticide-free method called "Koi Farming" in Sanzan Village! Using the carp farming method, carp are released into the rice paddies 🌾🌾 to get rid of pests. A few years ago, I drank Manbo from Kumamoto Kameman Shuzo, which was a sake made using the duck farming method🦆! There are many people in Kumamoto who practice natural farming methods 🫶.

☀️ Masamune hunters go today🍶. Today we visited the Tottori & Okayama Antenna Shops, a place of relaxation for Masamune hunters 📡. As soon as I arrived there, I started looking for Masamune and found it 🤩. It's sake 🍶. It has a crisp, Hakka-like aroma. It is also very refreshing on the throat. The umami of the rice is subdued, and then there is a subdued sweetness and an equally subdued acidity. Overall, it has a light and simple taste 😙. It is probably best suited as a food sake 🍶. The Hakka flavor, combined with the oiliness of the food, seems to help the oil from the food to be washed away quickly 😁. Nice Masamune👍

The 800 check-in is the H27BY (2015 brewing year) Sanko Masamune from which Toji Takagaki retired 😆. We were lucky to get it 😊. This is the only sake from Mr. Takagaki but we are holding Takagaki festival 😅🍶. When opened in the fridge, it smells slightly like a soy sauce warehouse (there was a soy sauce warehouse in my neighborhood when I was a kid) or Shaoxing sake. It's a dry and light sake when cold. Sanko is still a warmed sake, so I'd recommend heating it up 🍶. The top aroma is the aromatic aroma of a freshly heated sake. When heated, it does not have a matured aroma. In the mouth, you first feel sharp acidity and spiciness. The acidity is not as strong as that of Sanko Tenpyo's Namahashi or Yamahai, but it is quite good. There is a slight sweetness and a beautiful umami that does not make you feel the rice polishing ratio of 72%. This is a perfect food sake 🍶😊. I don't know if this is the original taste since it is an old sake, but it was deeply delicious 😌. After retiring, he returned to farm near his hometown, but unfortunately, he died in a field accident last year 🥲. I learned of his death when I saw a relative of his on Instagram late last May with a picture of H27BY "Katsumasa" to inform me of his passing. A toast to Mr. Katsumasa Takagaki 😌🍶. The fourth picture is a sake from the brewery where Mr. Takagaki worked in the past.

Rooster Yoemon from Kawamura Sake Brewery in Hanamaki City, Iwate Prefecture. This sake is famous for its sour taste, which is rare in Iwate Prefecture. I drank it for the first time at a store in Hanamaki and was surprised by the sourness. It seemed to be quite a challenge since Iwate is generally known for its sweet and tasty sake. Even so, I heard that the owner stubbornly continued to make sour sake. (^○^) Nowadays, with the Shinsai boom, Yoemon's sour sake is also selling well, especially outside of the prefecture. KATSURAGAWA, which had been laid up for about a year and a half. It's too early to tell, but I'm looking forward to a summer sake on the rocks, and this time I'll have a glass of the standard warmed sake 🍶. When I opened the bottle and poured it, the aroma was freshly cooked and fluffy, like rice cakes or rice. It is a four-step glutinous rice brewing process. The mouthfeel is smooth like Gunma sake, but gradually a gentle and deep sweetness like sugar or spuds spreads gradually. When heated, it has a full-bodied, rice-like flavor. The sweetness is not too strong, but rather relaxing. Perfect for enjoying in the colder months. The sweetness itself is more subdued than the normal type, but on the other hand, you can fully enjoy the cleanliness that is typical of Gunma sake, which is a good balance!

As the summer is drawing to a close (the heat is still on), I opened a bottle of "Katsuragawa" sake on the rocks, which I was looking forward to drinking again this year! And the back of the bottle is falling apart due to condensation again😇. When we opened the bottle and poured it, the aroma was sweet and fluffy, typical of "Katsuragawa". It is a bit sour and comes in through the nose as if it is cold on the rocks. The mouthfeel has a pettiness by default, but on the rocks it is smooth and silky. It has a fluffy aroma like sweet rice crackers and a syrupy sweetness of shaved ice. As the ice melts, it becomes lighter and more enjoyable ✨. The lingering finish has a slightly tangy, spicy acidity and a tropical fruitiness, and the smart finish keeps the saké going! While listening to the chirping of autumn insects 🍶. I think it's time to open a bottle of "Akagisan" summer sake!

I remember the last time I drank Miyaganbai, it was delicious 🤔. I knew there was a sake collaboration between my neighborhood liquor store and the Kanmei Brewery, but I put it off thinking I could always buy it. But it's plum season and I finally bought it (almost, coyly). Oyusaki Quartet I heard that the name "Uguisaki" is a play on Osaki, where the cold plum trees are located, or plum blossoms and bush warblers (Uguisu), and many other things! At first, you can taste a little sourness. It's just a little bit sour, but it's not too much. The sweetness is soft and lingers on the tongue. Maybe a little more refreshing than the Miyakanume I had before (not sure I remember that 😆). Fresh, fruity and a little different from the gentle sweetness of rice. It is also beautiful and delicious 😋. On the second day, it seems a little more sour. And sweetness too. As an added bonus, here's a picture of the plums

I bought it at Aeon while I went to see a movie today. It's the first time for me to drink it. This is 900ml, isn't it? I thought the shape of the bottle was different. The taste is quite strong, but the aftertaste is refreshing. I think it's a delicious sake ☺️. It's good even if it's heated up☺️.

Purchased at a liquor store in Nakazaki-cho after an event at Ogimachi Park with Nemuchi The design looks like something you'd find in a bottle at an izakaya 😅. Normally I wouldn't pass it up, but I thought it looked unusual and bought it. It's been a year since it was made, but I don't feel it's aged too long. It is light, refreshing and easy to drink.

Type: junmai daiginjo, rice polishing rate: 50%, alc.: 16% Floral aroma, vanilla, marshmallow and a little bit of savoury aroma. Flavor feels dry with sharp acidity and bitterness of alcohol. Earthy flavor lingers for a while. Not too good not too bad. Decent price here in Europe.

I've never seen this brand before. It's mostly consumed in Niigata Prefecture, so it's not sold outside the prefecture. I was lucky enough to drink it 😄. It's chilled but very juicy, and it's a true trendy combination of sweetness and refreshment. I drank it at the end of a drinking party, so there wasn't much left of the knob, but it's a very powerful drink that works well on its own. I'd really like to taste it at home, so if I find it somewhere else, I'll definitely buy it 😙. But I drank too much yesterday 😨
