It is slightly fluty. It is crisp and easy to drink.
I can't choose either Miyakanume or Yushisaki!
It is a local sake, but I drank it for the first time.
It had a soft mouthfeel, followed by a bitter taste and a nice sharpness.
I learned from the label that it is called "Osaki.
According to the explanation by the brewery, this sake is made by growing Miyamanishiki, Aikoku, and Hiyori rice in the company's own rice fields in Osaki, which is undergoing reconstruction.
I remember the last time I drank Miyaganbai, it was delicious 🤔.
I knew there was a sake collaboration between my neighborhood liquor store and the Kanmei Brewery, but I put it off thinking I could always buy it.
But it's plum season and I finally bought it (almost, coyly).
Oyusaki Quartet
I heard that the name "Uguisaki" is a play on Osaki, where the cold plum trees are located, or plum blossoms and bush warblers (Uguisu), and many other things!
At first, you can taste a little sourness.
It's just a little bit sour, but it's not too much.
The sweetness is soft and lingers on the tongue.
Maybe a little more refreshing than the Miyakanume I had before (not sure I remember that 😆).
Fresh, fruity and a little different from the gentle sweetness of rice.
It is also beautiful and delicious 😋.
On the second day, it seems a little more sour.

Miyamanishiki 55% Koji, Manamusume 65% Kake
The aroma is rather subdued, but it has a clean, fruity aroma of white peaches, pears and apples.
The taste is juicy and sweet like honey apple, just like drinking fruit juice!
The alcohol content is a little strong, but it is easy to drink with a pleasant, refreshing aftertaste.
It is as beautiful and delicious as one would expect from Miyakanbai.
