Bouken-san told me about it before, and I've become a fan of Watashibune's new sake 😚. But it's made with 100% short-stemmed Watashibune. I think this brand is as good as my favorite Genmai which I opened just before. The aroma is like a grape🍇, and in the mouth you can feel a very thin gas and a gentle sweetness. The aroma and taste are well integrated, and the transparent flavor fades out with a slight bitterness, which is brilliant 😆. Today I paired it with a yose-nabe with agaric broth, and the complex broth of the seafood and the flavor of this sake matched so strangely that I could really linger and eat and drink forever... It's still Monday, so I had to call it quits 😅.

When I go to this liquor store, I can't stop looking at different things. There are both hi-seasoned and draft Morishima's Omachi and Yamadanishiki, and there are several Nozomis... In the end, I narrowed it down to one bottle and chose this one. This is the first time I drink Koshinohomare at home. As for the rice, some stores say they use Takananishiki and others say Koshikagura, but which is it? Fresh, gassy and fruity. Juicy, like apple or pineapple. I was surprised at how delicious it was.

I have had a little Mutsu Hassen, but Mutsu Otokoyama is completely new to me! A while ago, I had the impression that Mutsu Hassen lost all its flavor after the second day, but recently it has been able to keep its flavor quite well. What do you think of Mutsu Otokoyama? The aroma is a botanical scent similar to that of grass or earth, but only slightly. But when you take a sip, you will be surprised! It has a gorgeous capsule-like aroma similar to that of Mutsu Hassen! I don't think I've ever experienced such an aroma with such a strong standing aroma! The taste is definitely less sweet, but has a good umami. The taste is certainly not too sweet, but it has a good umami flavor, and yet it has a gorgeous overtone. It is dry, but popular, like a "Sanjyo," "EXILE," or "Ishihara Gundan"? Something like that. Last weekend I was out of sake to go with oden, so I went to the local supermarket and bought a 300㎖ bottle for the sake. It has a sweet and refreshing taste. It's good at hiya, but it tastes even better when it's warmed up to human skin temperature to increase the sweetness. However, I thought it would be too clean to pair with oden. I chose this sake because I wanted to keep it light, but.... If I wanted to warm it up, I could have used a more robust Junmaishu or even Honjozo. I'm still learning💦.

On a trip to Shiga, I visited Hirai Shoten. The quaint appearance of the store and the display of products were a sight to behold. Today's bottle was the "Sake Brewer's 3003000 Year Old" (pictured left). The aroma is melon, apple, and pineapple, and the first sip is a punch. It has a mellow sweetness, but the acidity and bitterness make it crisp and refreshing. Delicious. Well, Shiga Prefecture was fun! I'm also looking forward to Kosetsu (I heard it's read as Fouche) on the right side of the photo 😄.
