Shiboritate Nama-narashu (freshly squeezed raw sake) I thought it might be a bit harsh because it is a nama sake, but it is easy to drink and has a refreshing taste. It opened up a new world for me. It was a good drink at a price in the 300 yen range.

Bouken-san told me about it before, and I've become a fan of Watashibune's new sake 😚. But it's made with 100% short-stemmed Watashibune. I think this brand is as good as my favorite Genmai which I opened just before. The aroma is like a grape🍇, and in the mouth you can feel a very thin gas and a gentle sweetness. The aroma and taste are well integrated, and the transparent flavor fades out with a slight bitterness, which is brilliant 😆. Today I paired it with a yose-nabe with agaric broth, and the complex broth of the seafood and the flavor of this sake matched so strangely that I could really linger and eat and drink forever... It's still Monday, so I had to call it quits 😅.

I have had a little Mutsu Hassen, but Mutsu Otokoyama is completely new to me! A while ago, I had the impression that Mutsu Hassen lost all its flavor after the second day, but recently it has been able to keep its flavor quite well. What do you think of Mutsu Otokoyama? The aroma is a botanical scent similar to that of grass or earth, but only slightly. But when you take a sip, you will be surprised! It has a gorgeous capsule-like aroma similar to that of Mutsu Hassen! I don't think I've ever experienced such an aroma with such a strong standing aroma! The taste is definitely less sweet, but has a good umami. The taste is certainly not too sweet, but it has a good umami flavor, and yet it has a gorgeous overtone. It is dry, but popular, like a "Sanjyo," "EXILE," or "Ishihara Gundan"? Something like that. I don't know if the aroma has calmed down or if the taste has mellowed, but it is easier to drink and tastes even better from the second day! It's definitely dry, this one! It has a gorgeous ginjo aroma and a sharp dry taste! This is the kind of delicious sake that goes down so smoothly that you find yourself drinking it all up.

As understood from the label, it is an original label of Hotel Epinar Nasu that probably exists in Nasu Kogen. The aroma is like a picture of green apples🍏. I drank it with cold sake, but it was a little sweet and very refreshing. It is easy to drink because there is no spiciness of alcohol. There is no strong impact on the palate, but it is a delicious sake😄. It goes well with sushi🍣👍. I also really liked the match with yuba😋

The rice used is Gohyakumangoku and Nihonbare. If I had to describe it in one word, I would say it's "Omnivorous Japanese Sake Partridge". It has an old-fashioned flavor and an aged feeling like a hiyaoroshi. Spicy and sweet in equal measure, with a long finish. It's a sake that should be served warm. By the way, it's "Hiyaoroshi", but it's shipped all year round.

I learned of the existence of this sake through non non's post. It was a little difficult to go there because you can only buy it at the direct sales place which is open only on weekdays.... It was a nice homey sake brewery 😊. It was limited to 100 bottles and they were the last 3 bottles. It's shwashy, sweet and sour. It may be a daiginjo, but it doesn't taste like yamahai and is easy to drink.

Akebono Shuzo's Akebono Seishun, well known for Tenmei. I drink Tenmei from time to time, but this label is new to me, so I opened the bottle 🎉. The aroma is gentle and subdued. It has a slight viscosity and seems to be quite sweet, but the bitterness soon develops. It then fades away leaving a complex umami taste. At 17 degrees alkalinity, the flavor is thick and robust from the first sip 👊. This Daiginjo is made from Yamada-Nishiki polished to 40%. We enjoyed this clear yet rich umami sake 😋.

It is fresh and tasty with a good amount of sweetness for its sake strength, but the slight bitterness tightens it up. It goes well with meals and is also delicious on its own. This is one of the bottles I harvested in Chitose on the way to work. This one might be the main one! It went well with sagari with sundiner sauce, squid ring salad, and stew.

At home. It is the first Kanagawa and the first Tensei. The aroma is slightly fruity. The characteristic is the softness when you put it in your mouth. It's so tasteless and odorless that you think it's water for a moment, but it makes your mouth swell up. The smell of Cemedine in the nose and throat is clear. It's the first time I've ever felt such a sensation.
