The rice used is Gohyakumangoku and Nihonbare. If I had to describe it in one word, I would say it's "Omnivorous Japanese Sake Partridge". It has an old-fashioned flavor and an aged feeling like a hiyaoroshi. Spicy and sweet in equal measure, with a long finish. It's a sake that should be served warm. By the way, it's "Hiyaoroshi", but it's shipped all year round.

I learned of the existence of this sake through non non's post. It was a little difficult to go there because you can only buy it at the direct sales place which is open only on weekdays.... It was a nice homey sake brewery 😊. It was limited to 100 bottles and they were the last 3 bottles. It's shwashy, sweet and sour. It may be a daiginjo, but it doesn't taste like yamahai and is easy to drink.

A local Osaka sake recommended and purchased by the owner of a liquor store. It is from a sake brewery in Takatsuki. The first sip is refreshing, followed by a robust sake-like flavor. The aftertaste is crisp and clean. I had it cold.

Osaka Prefecture. Takatsuki City. Kiyotsuru Sake Brewery Co. Kiyotsuru One Hundred and Sixty-Nine Year Old Sake Junmai Ginjo Nama Sake. A few weeks ago, when I had a weekday off, I decided to visit a nearby sake brewery in my spare time and went to Kiyotsuru. Last year I drank it at the Osaka Jizake Tenma Daijukai and it was one hundred and sixty-eight years old. This time, I bought a bottle of the now-only draft sake. By the way, Kiyotsuru, Kuninicho, and the Adachi Nojo brewery at Danchi Brewery can be easily visited by car. It is a narrow road that is difficult to enter by car, but if you enter the address in the picture in the navigation system, it looks like there is a parking lot. Kiyotsuru said that they have a brewery tour in February. I had a glass of cold sake. When poured into a glass, fine bubbles adhered to the glass. The color is clear and greenish yellow. The top aroma is slightly alcoholic and grain-like. The mouthfeel is fresh and thick. The taste is complex, with a hint of astringency, acidity, and graininess. It has a somewhat traditional flavor, but it is fresher than the fire-aged wines I have had before, so it is less classical and easier to drink. There's also a bit of spiciness on the palate, but the aftertaste is short. Ingredients: rice (domestic), rice malt (domestic) Rice polishing ratio:60 Alcohol content: 16%.

Opened August 15, 2024 Purchased at the brewery Very smooth, yet somehow juicy🍊. It has a gentle sweetness, but it also tastes like traditional sake... It's a good sake with history and novelty in the same bottle. It's a good sake to drink with food or in the evening 🍶.

The 10th Osaka Jizake Tenma Daijukai 2024②. Kiyotsuru's booth. This is another Osaka sake I've never had. Too many I've never had even though I'm a local 😅. I tasted some while asking bouken-san about various things about Kiyotsuru. I should learn from him 💦. Junmai Hiyoroshi I heard other people talking about it, and they said it was hiyaoroshi, but it had been aged for 2 to 3 years. It had a solid richness, and shouldn't it be labeled "matured sake" and sold as such? Certainly it is strange to have hiyaoroshi at this time of the year... Bouken-san said that hiyaoroshi is sold all year round at his brewery. Junmai Ginjo One Hundred and Sixty-Eight Year Old Sake. The pop-up says "Hana-ya" and bouken-san explained that the number of years increases with each year... It was classical, and the aftertaste was a little sharp and spicy... At this brewery, a boy of junior high school age was pouring sake into an inokuchi (cup) for tasting. Is he the heir to the brewery? The next brewer? 🤔

Tenma Taishukai 2024 ③. I got the order wrong💦. The one I was drinking before So no Sato was Kiyotsuru😅. I've been to the brewery to buy sake at the end of the year before last, but it was quite far from the station and hard after a night shift 🤣. Because it's only open on weekdays 🙄. As Shinjo-san has posted in the past, is it a child of the brewery? There was a person who looked like the brewery owner and a boy who looked like he was in junior high school serving customers. I drank Junmai Hiyoroshi It was aged for 3 years. It was quite colored and had a strong sense of maturity. Nemuchi-san said, "This is not hiyaoroshi! Nemuchi-san said 🤣. The brewery sells hiyaoroshi and arabashiri all year round, and depending on when you buy it, it may be fresh or matured 🤔. Junmai Ginjo, a sake that has been in business for 168 years! The number changes every year because the number of years since the establishment of the company is used as the name of the sake. I've had the 163 year old and the 166 year old in the past. It's supposed to be fruity, but every time I drink it, I don't feel much fruity... This time I felt a bit of maturity.

Sake from Tondasato, Takatsuki City, Osaka Prefecture Junmai Ginjo-shu named after the number of years since its establishment Nama sake seems to be limited in quantity Dry but with a touch of sweetness afterwards It has a very unique aroma. If I were to use an analogy, it would be like a Hakka-flavored candy drop. (Note: I let it sit for 2 days before drinking, and the unique aroma disappeared, and I started to taste sourness and fruity flavor. I prefer this one.
