My second daughter's birthday is on February 5th. I have a great reason to drink Risshun Asa Shibori! It's freshly squeezed and juicy! I think it's not as sweet as last year's, but it's good 😆 It's thick, rough, and has a strong new sake character that recharged me with energy. Thank you very much for the food 😄.

It's Risshun and it's too cold 😱. I bought it after last year 😁. I heard this year's one is a little spicier. I don't feel the spiciness so much The aroma is soft and fluffy It has a nice sharpness. I almost finished it😅 It was delicious!

Rice used: Akebono from Okayama Prefecture, Gohyakumangoku from Niigata Prefecture, Yamadanishiki from Hyogo Prefecture This is a new product from a local liquor store. I thought it was a Toyama sake, but it turned out to be an Edo sake. The acidity is strong, and there is a refreshing summery flavor. The bitter and spicy aftertaste is also good. The overall balance is not bad. Sake from Tokyo is not to be underestimated ❗️

Akebono Shuzo's Akebono Seishun, well known for Tenmei. I drink Tenmei from time to time, but this label is new to me, so I opened the bottle 🎉. The aroma is gentle and subdued. It has a slight viscosity and seems to be quite sweet, but the bitterness soon develops. It then fades away leaving a complex umami taste. At 17 degrees alkalinity, the flavor is thick and robust from the first sip 👊. This Daiginjo is made from Yamada-Nishiki polished to 40%. We enjoyed this clear yet rich umami sake 😋.

Purely personal memorandum 4) At a restaurant I visited again (for the second time) at the beginning of the year. No notes, but just checking in because it was delicious 🙇. This was my second visit, this time for about 2 drinks. The first one is "Isei Seishun. I like the name as well as the taste, and I always order this sake if it is available: ☺️ And it's a new orikarami sake 🥰. As a self-proclaimed "Origara Mist," there is no way for me not to drink it. This special junmai sake is brewed with 100% Yume no Kaori, Fukushima's original rice for sake brewing, polished to 60% rice polishing ratio. This is a new challenge for the 10th anniversary of the release of the special junmai sake👍. Taste memory... 🍶. The aroma is soft but fresh. The taste comes in smoothly with a slight veil of tailings, and is refreshing with a gentle hint of sweetness, and finishes with a mix of sweetness and umami. The soft and clean impression of Ise Seishun is balanced by a sense of roundness and complexity, with the new sake nama sake enhancing the tones of taste and aroma and intertwining with the tailings. It was well chilled, but I thought it was soft fresh and delicious. A sake I would like to drink at home once in my lifetime 🍶. I originally liked this sake, but now I like it again: ☺️

Every year I look forward to the Risshun morning pressing... this year, I'm going to enjoy a bottle of TENRANZAN! When the bottle is opened, it has a pleasant fruity aroma...freshly pressed, lightly cloudy, and fresh because it is freshly pressed...the balance of sweet and bitter is unstable, with a certain sharpness...but the aftertaste is crisp! Delicious!

At the beginning of the New Year, I enjoy the local sake 🍶Tenranzan Hatsu Shibori (first pressing), which I received as a gift, and since it is an ale-added, honjozo sake, it is more of a food sake than a straight sake...fresh as it is raw...my favorite horse sashimi and oseki (New Year) as a snack.... Tomiikiku's local sake ministry️ popular at Haneya. This sake is available in supermarkets😊. The traditional method of production is the same as that of Haneya. Different tastes with different vectors 😋. This sake is characterized by sweetness and umami, not dryness. The common feature is a powdery taste like Kamishinko. It's not always available and not always cheap. I've been through it all along😅lol

We had a drink at Ise Jingu Shrine and Okage Yokocho. Okagesama Shiboritate Nama-nama Sake Alcohol content: 18 Ingredients : Rice, rice malt (all rice is domestically produced), brewers' alcohol Rice polishing ratio:50 It tastes deliciously crisp and lychee-like, as is typical of nama-shu. It has a good acidity and a pleasant alcoholic taste. I personally like it very much. It tastes similar to the Watanabe Sake Brewery Hidahomare Sake Rice Growing Study Group. Okagedasama Junmai Ginjo Kaminoho Ingredients : Rice (domestic), Rice malt (domestic) Rice:100% Kami no Ho produced in Mie Prefecture Rice polishing ratio:50 Light taste, tastes like white wine, and has a moderate astringent aftertaste.

Last weekend I was out of sake to go with oden, so I went to the local supermarket and bought a 300㎖ bottle for the sake. It has a sweet and refreshing taste. It's good at hiya, but it tastes even better when it's warmed up to human skin temperature to increase the sweetness. However, I thought it would be too clean to pair with oden. I chose this sake because I wanted to keep it light, but.... If I wanted to warm it up, I could have used a more robust Junmaishu or even Honjozo. I'm still learning💦.

On a trip to Shiga, I visited Hirai Shoten. The quaint appearance of the store and the display of products were a sight to behold. Today's bottle was the "Sake Brewer's 3003000 Year Old" (pictured left). The aroma is melon, apple, and pineapple, and the first sip is a punch. It has a mellow sweetness, but the acidity and bitterness make it crisp and refreshing. Delicious. Well, Shiga Prefecture was fun! I'm also looking forward to Kosetsu (I heard it's read as Fouche) on the right side of the photo 😄.
