When I go to this liquor store, I can't stop looking at different things. There are both hi-seasoned and draft Morishima's Omachi and Yamadanishiki, and there are several Nozomis... In the end, I narrowed it down to one bottle and chose this one. This is the first time I drink Koshinohomare at home. As for the rice, some stores say they use Takananishiki and others say Koshikagura, but which is it? Fresh, gassy and fruity. Juicy, like apple or pineapple. I was surprised at how delicious it was.

This Sake is bright and flavorful. There is a sweetness followed by the tartness of grapefruit. There is also a hint of banana. The acidity gives this a short and clean finish. Brilliant! 😁
Junmai-Ginjo sake with 50% polishing ratio This sake is brewed by blending Kyokai 1801 and the original ginjo yeast, Kyokai 901. It has a fruity, gorgeous aroma and a pleasant sweetness that spreads in the mouth. Delicious! The label is said to have been designed with a snowflake "Grandpa Sujimaki" of the famous mountain, Yoneyama, which announces the rice planting season in Kashiwazaki, on a label with a texture of textiles associated with the hemp and silk textiles that are famous in Echigo. Stylish!

Tonight, our first in the series, Aizu Otokoyama Kai from Fukushima Aizu ✨. First of all, the specs are 100% Fukunoka with Jungin polish and 16% alcohol. The aroma is clear with a hint of pineapple and a mojito-like flavor in the second half. The attack is soft and sweet just like the aroma, but soon the acidity and bitterness overtake it and it has a nice crisp finish 👍 It is perfect as a mealtime drink and is very easy to drink without feeling too much alcohol 😋.

Otokoyama Brewery is located in Aizumisato-cho, Onuma-gun, Fukushima Prefecture, which is different from Kaito Otokoyama. The brewery was dormant for a while, but has restarted again. It is a fresh, raw ogara-mi sake. It is slightly carbonated and tastes great with the bitterness of the oli.

I have had a little Mutsu Hassen, but Mutsu Otokoyama is completely new to me! A while ago, I had the impression that Mutsu Hassen lost all its flavor after the second day, but recently it has been able to keep its flavor quite well. What do you think of Mutsu Otokoyama? The aroma is a botanical scent similar to that of grass or earth, but only slightly. But when you take a sip, you will be surprised! It has a gorgeous capsule-like aroma similar to that of Mutsu Hassen! I don't think I've ever experienced such an aroma with such a strong standing aroma! The taste is definitely less sweet, but has a good umami. The taste is certainly not too sweet, but it has a good umami flavor, and yet it has a gorgeous overtone. It is dry, but popular, like a "Sanjyo," "EXILE," or "Ishihara Gundan"? Something like that. I don't know if the aroma has calmed down or if the taste has mellowed, but it is easier to drink and tastes even better from the second day! It's definitely dry, this one! It has a gorgeous ginjo aroma and a sharp dry taste! This is the kind of delicious sake that goes down so smoothly that you find yourself drinking it all up.

Sweet and dry drink comparison 🍶✨✨✨. I went to Urahasen last year. This year I'm going to Uraotosan😁😁. Dry and refreshing It is a good place to enjoy a meal. Personally Urahasen for sake alone 🍶. For pairing, I'd go for Ura Otokoyama I guess 😊🍶🍶.

Immediately after opening the bottle, it was dry and dry, perhaps due to the 17% alcohol content. I drank it last year and enjoyed it so much I bought it again. Personally, it is my favorite new sake along with "Akagisan"✨. When you open the bottle and pour it, the aroma is crisp and gorgeous, like pears. The mouthfeel is light and immediately afterwards there is a solid gassy feeling. It's as shwashy as a carbonated beverage! Dry and clean on the palate, with pear and green apple flavors that are gorgeous and fresh. There is a hint of sweetness, so it is not only dry, but also well balanced. The astringent taste comes in the last half of the bottle and finishes it all off, so it is a delicious wine with a perfect ending! The sun is setting later and later, and we can feel the approach of spring. It's still early, but I'm looking forward to this year's spring sakes!

I drank it at a tasting and bought it because it tasted better than the sake labeled by Machida Sake Brewery. It is high quality for about 1,500 yen. It seems they use a sake rice called Maikaze, but they don't know if they will be able to produce it next year. I hope they will sell it again next year...

Tomiikiku's local sake ministry️ popular at Haneya. This sake is available in supermarkets😊. The traditional method of production is the same as that of Haneya. Different tastes with different vectors 😋. This sake is characterized by sweetness and umami, not dryness. The common feature is a powdery taste like Kamishinko. It's not always available and not always cheap. I've been through it all along😅lol

Nagano sake is delicious 🍶, and my favorite Shinshu Kamerei and Hitogokochi are my favorites. .... Fruity aroma, sweetness of rice, good bitterness in the aftertaste, and a nice sharpness! Nothing to say about it, roast pork and local edamame (edamame is in season) to go with it. .... Next time, I'd like to pair it with Shinshu soba noodles...

I love ❤️ Shinshu Kamerei, which was sleeping in the fridge! The mouthfeel is sweet! However, the aftertaste is exquisitely bitter and sharp! This is it! Akebono Shuzo's Akebono Seishun, well known for Tenmei. I drink Tenmei from time to time, but this label is new to me, so I opened the bottle 🎉. The aroma is gentle and subdued. It has a slight viscosity and seems to be quite sweet, but the bitterness soon develops. It then fades away leaving a complex umami taste. At 17 degrees alkalinity, the flavor is thick and robust from the first sip 👊. This Daiginjo is made from Yamada-Nishiki polished to 40%. We enjoyed this clear yet rich umami sake 😋.

I drank it before I took the picture 😆. It's a special junmai that is usually hi-ire (hi-ire), but this is the 10th anniversary of its release, and it was released as orikarami. New sake is good after all. It has a freshness that is typical of nama-zake. It has a subtle chirichiri-feeling, which may or may not be fizzy. It is a little light at 14 degrees Celsius. It has a sweetness, but when you swallow it, it has a bitter and dry aftertaste. New sake will be released more and more from now on. Akebono Shuzo's "Tenmei" is my favorite Japanese sake‼️, so I can't wait for the newest one...

Tonight, we have a little quirky one for you 💁. Mitsurensei 15th Anniversary Special Sake 5 Years Aged Shiga Watabune Rokugou ✨ H29BY=2017BY and from 2022.7 when shipped, it's aged 5 years, but it's now aged 6 years with +1 year in our house😅. I'll try it as an after-dinner drink after dinner 🍶. It's colorless and clear when you pour it into the cup. The aroma is completely old and matured, with hints of dried grapes, brandy, chocolate, and cacao...it's just mellow. The taste is also bitter with bitter chocolate sweetness, followed by alcohol 😋. Six years of aging is no joke 😎.

I will drop a second one this evening. This is the second of the three stars limited edition extravaganza✨ This time it's the Arcburg strain, reprint yellow yeast. The aroma is not flashy at all, it's a traditional sake with a graininess and beaniness, but the taste is a complete turnaround, with bitterness and sourness from biting the peel of citrus fruits, and it's quite dry with the alcohol running down the nose, perfect for a mealtime sake 😋. The dryness of the reissued yellow malted rice is not a date: ‼️

Every year I look forward to the Risshun morning pressing... this year, I'm going to enjoy a bottle of TENRANZAN! When the bottle is opened, it has a pleasant fruity aroma...freshly pressed, lightly cloudy, and fresh because it is freshly pressed...the balance of sweet and bitter is unstable, with a certain sharpness...but the aftertaste is crisp! Delicious!

At the beginning of the New Year, I enjoy the local sake 🍶Tenranzan Hatsu Shibori (first pressing), which I received as a gift, and since it is an ale-added, honjozo sake, it is more of a food sake than a straight sake...fresh as it is raw...my favorite horse sashimi and oseki (New Year) as a snack.... Enjoying the New Year's Day with my favorite horse sashimi and oshibushi....
