Good evening, it's Shamrock, a parallel world from Manazuru in our first series ☘️☘️☘️. Not a Yotsuba, but I'm opening this bottle to pray for Japan's 🇯🇵 soccer team to win tonight✨ It has a sweetness that is typical of rice, lactic yogurt and acidity, and is delicious 🐴🐴🐴🐴, but it has a high alcohol spiciness on the back end that makes it very drinkable. I had a puku puku brew the other day. I think it is similar to the junmai sake I drank the other day from Pukupuku Brewing (that one is Koshihikari) 🤗. I heated it up to lukewarm to try it out and it doubled in flavor 😋.

At Hankyu Department Store I had a chance to drink all kinds of sake. The nigori was also delicious. They also gave us a 1:1 blend of nigori and junmai. It was also delicious. The one that caught my attention was the Junmai sake "P&A (Panda)", Junmai sake "P&A (Panda)". It's black and white, so I guess it's 🐼😁. It is said that lactic acid is not used in the yeast stocking but is substituted with citric acid produced from white and black malted rice and fermented slowly at low temperature. It is refreshing and light to drink. Pleasant acidity and a clean aftertaste, but it was a bit unusual.

We bought it at Shiramizu Sake Shop in Takaramachi, Kasuga City, Fukuoka Prefecture. The owner was very kind and explained a lot about sake, and when I told him I prefer fruity sake, he recommended this sake. When I asked him about the meaning of "oishu", he told me that it means to store new sake at a low temperature for a long time. It was a good learning experience. It stung me because I like it sweet. Downhill Sake Story Event 3) From the Itami Laematsu Sake Brewery, established in 1688, we drank "Laematsu" Itamigo Special Honjozo, a highly prestigious sake for the Shogun. It has the flavor of honjozo and a smooth throat. It is also good as heated sake. A joint sake brewing song was performed. The song was sung in slightly different tunes at each brewery. It was a nice touch. The symbol of Kobe, the Port Tower🗼, is closed for renovation work.

This was the first time I drank Abe-kan at home. The one I drank in the past was a special sake with a special kijoshu spec, so I don't think it was any different from the first time I drank it. It is dry with a strong gassy and acidic taste. It is not that sweet, but it is easy to drink because of the sourness. I don't think I've ever seen Abe-kan sold anywhere but Edion Namba.

I opened a bottle of "Kitayuki Junmai Ginjo" from Sado Island, Niigata, which I was told about at an izakaya I often visit! It has a sweet aroma from the moment it is poured, and when you take it into your mouth, the sweet and umami flavors quickly run out, leaving you with a gentle, smooth, and clear image of the after-flavor! Whether it is the water or the brewing method, I am addicted to this clear aftertaste! With only one month left in this year, I'm getting drunk and thinking that it's time to narrow down the bottle of 2022 that I will choose 🍶.

A gift of Tokyo's local sake. The aroma is old-fashioned, with a hint of cemedine...the mouthfeel is full of the flavor of rice. As the label on the back of the bottle says, it is a new sake, so it is fresh, but it has a rough taste, maybe a little dry. I wonder if it is good as a mealtime sake... I'm sipping it with albacore tempura and fish yukke as a side dish.

National Sake Fair 2025 Day 2 ㉚ Gifu ⑥ Oda Sake Brewery in Takayama City I remember drinking vacuum-packed sake at the Japanese Sake Festival. Annual shipment is 700 koku. They say they are the originator of many Onikoroshi sake breweries in Japan. I think the real brand name is Hida-boast. It's under the umbrella of Hidagura Corporation, a sake brewery revitalization company. Polishing ratio 58%, Hidahomare 18-19%, Sake degree +10, Acidity 1.9 Amino acidity 1.9, 901 yeast, 1754 yen. It tasted sharp and dry 😅.
