Today, I'm going to have a pure blue. I mean, I went to Tomikunishiki yesterday to buy the Galaxy label. Unfortunately, it was sold out for mail order😭. Basically, I'm the kind of person who thinks that shipping costs are less than the cost of gasoline, so I thought I'd go and drive an hour or so to get there, but I didn't realize how popular the Galaxy Label was. I had no choice but to buy this Ikarashi Tokubetsu Junmai. It's sweet but delicious ☺️. I think I'll mail order it properly next year. I should have bought either Kamesen's SEL or Gohashi, which I saw at the liquor store on my way home.

I went to buy sake for my annual plum wine yesterday and found this. It's a sake made by reviving the oldest sake rice called Shiratama (test brewed sake). It tastes like Tomikunishiki, full and mellow... very delicious☺️. I love it after all. It's so delicious 😆.

This was one of the bottles I bought at the recent New Sake Festival. I was going to miss it this year, but it was on sale so I bought it. It was cold and had a little bit of cemedine smell in the mouth...and then a spicy taste. It doesn't leave much of a aftertaste either. Delicious.

Mini tastings, still to come💦. It's a drinking comparison of the Kamikai... 💦. Junmai Ginbuki Hiyoshi Oroshi Akatombo Shiga Prefecture, Ginfukiyuki 60% polished rice, 15 degrees. The aroma is fruity and the taste is classic. The taste is somewhere between modern and classic. Junmai Ginjo il tuono d'autunno (autumn thunder) Shiga Prefecture, Ginbuki 55% polished rice, 16%. Fruity and sweet, this is a perfect modern type. Fully matured Junmai Ikinatsu Koshi Sanma A blend of 80% 2016 Yamahai Yamadanishiki and 20% 2019 Koshihikari 70% polished rice 17%. I was too scared to drink this one as is🤣. It was sweet and delicious when heated! It had a classic flavor.

Tonight, we will finally enjoy a very tasty "Shiuchu" and another brand "Hiroki" spring sake from the same brewery 🤗. This is the first time I've heard of a brewing method called "sanki amazakamoto". It is said to be a technique to bring out the flavor of the rice. The aroma and taste are gentle and slightly lactic, but there is none of the wildness of the traditional sake, and the sweetness and umami of the rice spreads throughout the mouth, making it easy to drink and delicious 😋😋😋😋😋. I've been curious about Re:vive Kuga from Heiroku Brewery, but I've never had it before. I drank "layer" but this is my first time to try "Re:vive". I wanted to make sake, but I don't have a sake license, so I mixed germinated brown rice with sake and made it as a craft sake. (Brown rice is considered rice and is sake, germinated brown rice is craft sake, I didn't know that 🧐) Gentle sweetness, moderate acidity. Fresh and delicious 😋. Not schwashy, but fresh? Beautiful and tasty, but maybe it's my imagination, a bit subtly different from so called sake? (Can't describe it 🤣) Well, it's good because it tastes good 😆. It's the kind of thing that goes down smoothly.

It is a sake named after a place in Gosho City, Nara Prefecture, where Chiyo Sake Brewery is located. Like Kushira, Gosho is a town with many difficult-to-read place names. For example, Bunze, Iuka, and Saragi. Gosho is a nice and peaceful place nestled in the bosom of the Katsuragi and Kongo mountains. Aburanaga-san of Kaze no Mori is also a sake brewer in Gosho. I guess it's a good place for sake brewing😋. It's been a while since I've had a Kushira, but it's dry and full of rice flavor. It's delicious 😆. I would like everyone to try it along with Chiyo's other brand "Shinomine" 👍.

Shinomine's terroir brand Kushira✨. I bought two kinds of Shinomine's summer sake, so I have no choice but to give you a first look🤣. The aroma is slightly sweet. It is said to be an irregular sake. The toji-san overfilled it with 4-stage rice or something😅. The "Raku" on the label represents the over-filled rice, and the blue color represents the pale face of the toji-san. Gutsy, but quite sweet and sour. It is much sweeter than other Raku no sei I've had, but I also feel its character. The rice is from the terraced rice fields of Hida. I can't seem to name the rice, but I wonder if it is Hidahomare or some other rice that is only available in Gifu. I heard that if you mention the name of the rice, you will get complaints like Kamerei did in Hiroshima, but if you don't mention the name, it's OK.

Japanese Sake Fest @ Osaka Bay Tower (・ω・`) The effect of oak barrels, or something quite close to whiskey, but the mellowness and acidity of sake is also alive! I know it's just my imagination, but I feel it's similar to the whiskey akashi. Of course, if I didn't know any better, I wouldn't have thought so. I also had a bottle of Junmai Namae in the heated sake corner, but my memory is a little fuzzy on whether or not my brain was getting the alcohol when I got here! I do remember that it was meant to be heated, but that's about it.
