It is said to be an irregular sake. The toji-san overfilled it with 4-stage rice or something😅. The "Raku" on the label represents the over-filled rice, and the blue color represents the pale face of the toji-san. Gutsy, but quite sweet and sour. It is much sweeter than other Raku no sei I've had, but I also feel its character. The rice is from the terraced rice fields of Hida. Tonight, we will finally enjoy a very tasty "Shiuchu" and another brand "Hiroki" spring sake from the same brewery 🤗. This is the first time I've heard of a brewing method called "sanki amazakamoto". It is said to be a technique to bring out the flavor of the rice. I've been making my way to restaurants with good service lately. Today they served me a fresh aged sake. Today is February 6. This is my first Kinkame. My first impression was that it was very good! Next, it has a strong umakuchi taste. The acidity at the end is good, just like Yamadataro. It is like a light kijoshu, and it is delicious. Shiga is nice.

I had wanted to drink it for a long time, but the timing was never quite right... The manager said it was his favorite drink in the restaurant! It is a pale yellow color with silver tints and a hint of green. It has a spicy top note with a hint of alcohol, but the aroma is very refreshing, perhaps because of the acidity. When you drink it, the slightly carbonated texture on the tongue is pleasant. There is not much noticeable aroma, but the acidity gives it a refreshing mouthfeel. It may not have much sweetness to begin with, but the acidity helps to make it dry. Despite its dryness, it has a strong flavor, which is probably due to the strong umami that can be tasted from start to finish. Dry sake is usually considered "spicy," but perhaps because of the strong umami, it does not feel too spicy. Interestingly, it is a sake that does not have much bitterness, which may be why it is so light and easy to drink despite its 17% alcohol content. This is seriously very, very good! I wouldn't say it's for everyone, but I think it's a must-try for sake drinkers who like umami!

The fifth sake was Yamagata Masamune Junmai Gin The fifth cup was Yamagata Masamune Junmai Ginzoku Gekidaku. It is made from Yamada-Nishiki, Omachi, and It is a limited-edition shipment of a well-balanced blend of Yamada-Nishiki, Omachi, and Dewa-Tsanbai junmai ginjo. It is a blend of Yamada Nishiki, Omachi, and Dewa Tsannin Junmai Ginjo in good balance. It is very thick, but has a nice sharpness. It is a dry sake that is thick, but has a nice sharpness and is very refreshing to drink. It is a dry sake that can be drunk very refreshingly. It is a sake named after a place in Gosho City, Nara Prefecture, where Chiyo Sake Brewery is located. Like Kushira, Gosho is a town with many difficult-to-read place names. For example, Bunze, Iuka, and Saragi. Gosho is a nice and peaceful place nestled in the bosom of the Katsuragi and Kongo mountains. Aburanaga-san of Kaze no Mori is also a sake brewer in Gosho. I guess it's a good place for sake brewing😋. It's been a while since I've had a Kushira, but it's dry and full of rice flavor. It's delicious 😆. I would like everyone to try it along with Chiyo's other brand "Shinomine" 👍.

Shinomine's terroir brand Kushira✨. I bought two kinds of Shinomine's summer sake, so I have no choice but to give you a first look🤣. The aroma is slightly sweet.
