Tonight, we will finally enjoy a very tasty "Shiuchu" and another brand "Hiroki" spring sake from the same brewery 🤗. This is the first time I've heard of a brewing method called "sanki amazakamoto". It is said to be a technique to bring out the flavor of the rice. The aroma and taste are gentle and slightly lactic, but there is none of the wildness of the traditional sake, and the sweetness and umami of the rice spreads throughout the mouth, making it easy to drink and delicious 😋😋😋😋😋. This brewery is of a very high level, including Purple Space👍.
