It is the first Kamikawa Taisetsu. I was attracted by the white koji and bought it.
The aroma is of citrus and lactic acid, with some caramel. In the aftertaste, there is a touch of vinegar.
So, of course, the sourness is dominant. There is also sweetness, but it is characterized by a sharp acidity.
The aftertaste is also sour. The umami is mixed in there.
Rather than being crisp, it is a very drinkable sake. It is surprising that it is low alcohol and white malt. It can be fully enjoyed alone.
