I've been making my way to restaurants with good service lately. Today they served me a fresh aged sake. Today is February 6. This is my first Kinkame. My first impression was that it was very good! Next, it has a strong umakuchi taste. The acidity at the end is good, just like Yamadataro. It is like a light kijoshu, and it is delicious. Shiga is nice.

Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

I saw it for the first time at a department store tasting sale, so I bought it. It's not listed on the label, but according to the brewer's description, it's unfiltered undiluted sake. It says "light nigori" but it's not cloudy at all (laughs). It's refreshing and easy to drink. The acidity in the second half is impressive.

Tonight, we have a little quirky one for you 💁. Mitsurensei 15th Anniversary Special Sake 5 Years Aged Shiga Watabune Rokugou ✨ H29BY=2017BY and from 2022.7 when shipped, it's aged 5 years, but it's now aged 6 years with +1 year in our house😅. I'll try it as an after-dinner drink after dinner 🍶. It's colorless and clear when you pour it into the cup. The aroma is completely old and matured, with hints of dried grapes, brandy, chocolate, and cacao...it's just mellow. The taste is also bitter with bitter chocolate sweetness, followed by alcohol 😋. Six years of aging is no joke 😎.

I will drop a second one this evening. This is the second of the three stars limited edition extravaganza✨ This time it's the Arcburg strain, reprint yellow yeast. The aroma is not flashy at all, it's a traditional sake with a graininess and beaniness, but the taste is a complete turnaround, with bitterness and sourness from biting the peel of citrus fruits, and it's quite dry with the alcohol running down the nose, perfect for a mealtime sake 😋. The dryness of the reissued yellow malted rice is not a date: ‼️

June 3, 2023 At Japanese Sake Satou in Matsuyama, Japan. I took a new employee to my favorite restaurant to drinking sake. The last and seventh drink of the day was Koei Kiku Tsukishita Muyori. It is a mellow, sweet and delicious sake, easy to drink easy to drink without feeling the alcohol content. It is easy to drink without feeling alcohol content. It was delicious with grilled sea eel and I enjoyed it with grilled sea eel and tanzaku yam.

When the bottle is opened, bam! As expected...it's a fresh and fruity aroma...and the mouthfeel is fresh, sweet, and bitter...with a hint of sourness. I'm sipping it with seared sea bream, sea bream, and seared Spanish mackerel as snacks...a little...sweet...but delicious...(^^)

After eating the roll cake, you feel the sourness and this is delicious. I want to drink it thick and sweet and sip it little by little. If you add ice, you get sourness and bitterness. The first challenge for the first Bodai yeast sake is the sake from Nara, the birthplace of Bodai yeast 🕺🏻. Takacho 🦅❗️ from Aburicho Sake Brewery, well known for Kaze no Mori 🕺🏻. I got this one because it's only available in April! The label is so cool 👍! I thought it might be a bit peculiar since it's made from the Muromachi period, but it's not as sour as I thought it would be, and it's full-bodied and tasty while also giving off a unique flavor😳. I was expecting it to be a bit peculiar, but it was not as acidic as I thought it would be, and it was delicious with a unique flavor and richness 😳. It is rated -34 on the sake scale, but it is not too sweet and can be drunk easily 😋. Different from Kaze no Mori, this one was delicious too! I think I'll try another Bodai Hashimoto Sake 😋!

Today, I'm going to have a pure blue. I mean, I went to Tomikunishiki yesterday to buy the Galaxy label. Unfortunately, it was sold out for mail order😭. Basically, I'm the kind of person who thinks that shipping costs are less than the cost of gasoline, so I thought I'd go and drive an hour or so to get there, but I didn't realize how popular the Galaxy Label was. I had no choice but to buy this Ikarashi Tokubetsu Junmai. It's sweet but delicious ☺️. I think I'll mail order it properly next year. I should have bought either Kamesen's SEL or Gohashi, which I saw at the liquor store on my way home.

I went to buy sake for my annual plum wine yesterday and found this. It's a sake made by reviving the oldest sake rice called Shiratama (test brewed sake). It tastes like Tomikunishiki, full and mellow... very delicious☺️. I love it after all. It's so delicious 😆.

This was one of the bottles I bought at the recent New Sake Festival. I was going to miss it this year, but it was on sale so I bought it. It was cold and had a little bit of cemedine smell in the mouth...and then a spicy taste. It doesn't leave much of a aftertaste either. Delicious.

Sake received at the Sake World Summit. This sake is brewed with Ginbukiyo sake produced in Shiga Prefecture. The acidity and umami of the sake are well intertwined with each other. Purchased 👀 at Sazanami Sake Shop in front of the station during a day trip to Hikone. Beautiful, corner space and friendly staff. It was a nice store 😙. Since I was there, I chose Kazuhiro, a sake I had never had before from Shiga. It was full, slightly sweet, had a delicious rice flavor, and was very drinkable 😋. Paired with sweet ayu fish from Lake Biwa, it was delicious. ❤️ It is indeed a sake from Shiga, a rice-producing region 😇
