Purchased on a business trip to Tokyo to try it. Almost a year later, I finally opened the bottle. It is sweet, with a hint of acidity, maybe the work of wine yeast. Finally, the rice flavor tastes like Koshihikari from Tango. Bats for sure. The 22nd year was brewed with Italian rice called Carnaroli, which I wanted to drink.

Kumamoto's local sake, Sanzanmura Slightly sweet ginjo aroma A light, sweet mouthfeel with a soft acidity. Like drinking fresh green apple juice I drank too much and my memory is fuzzy I'm not even sure of the notes I wrote at the time😅. Anyway, it's delicious! Sake brewed with sake rice grown by a pesticide-free method called "Koi Farming" in Sanzan Village! Using the carp farming method, carp are released into the rice paddies 🌾🌾 to get rid of pests. A few years ago, I drank Manbo from Kumamoto Kameman Shuzo, which was a sake made using the duck farming method🦆! There are many people in Kumamoto who practice natural farming methods 🫶.

I had never seen this brand before, so I couldn't resist buying it. This is a sake brewery in Shunan City, Yamaguchi. There are about 1,400 sake breweries in Japan, so it's no wonder that there are breweries and brands that I don't know (there are more than 1,000 here). Even if I were to drink one brand every day for the rest of my life, it would take me almost 30 years (^_^;) It's simply impossible. This was an aside. The moment you put it in your mouth, the aroma is distinctive. I wonder what it is, is it the aroma of rice? In total, the aroma is fluffy, the taste is tangy, and the sweetness is warm. I think it's delicious.

I'm here today for my department's farewell party! We had a beer, 2 mega highballs, and 4 bottles of warm water, and when they were all nicely tinted, we threw in some sake 🍶. Sasanogawa Junmai 58% 15%, 720ml, 1430 yen It is labeled Junmai but is 58% polished. The acidity is strong. This is what orthodox acidity is supposed to taste like. After the acidity comes an edgy dryness like a horse coming from behind. However, there seems to be some unique peculiarities, and depending on the day you drink it, it may bother you a little. Sasanokawa 35-year old sake, Junmai 60% 17%, 500ml, 5000 yen We went to a brewery in Koriyama, Fukushima Prefecture. It was a beautifully renovated and stylish space. There was a sign that said "Milan Sake Challenge", a double gold medal winner, which I don't know what it means. The sake was a dark color, almost black. It is rare to see such a color. Another Ishioka sake after Shiraga ❤️. This brewery is famous for Watafune and Taiheikai, but the main local sake is Fuchu Homare👍. By the way, yesterday's group consisted of 1 person in his 30s, 1 person in his 40s, 5 people in their 50s, and 2 people in their 60s, so it was fun to drink sake without worrying 😍! We drank 6 gos of Shiroshika, followed by a whole 4 gos bottle of this 😆. Fruity aroma of white grapes 😆. The taste goes down your throat with a grape-like sweetness and a white wine-like acidity. It's almost a white wine compared to the Shiraga we just had ❤️. The richness of the wine is so strong that I could enjoy it with menchikatsu ❤️.
