At a New Year's party with my uncle, we were treated to a special product from Azumaya in Adachi-ku, Tokyo.
It was a very elegant sake with a melon-like aroma and flavor and a well-balanced fresh acidity. ☺️
I know it's a little early, but I'm going to make a reservation for the end of the year 😅😅.

It is very dry and comes on the palate with a thump from the moment you drink it!
The spiciness lingers in the mouth and the alcohol leaves the nose.
I drank it with oden. The gentle taste and the crisp sake went well together again.

The 8th SAKE festival in Yurakucho.
They use a device that freezes the product as soon as it is squeezed. The name of the machine is liquid freezing machine "Frozen sleep" 💤.
I heard they also use it for Otter Festival and Toyo Bijin 🤔.
It's sake 🍶.
It is nigori, so the flavor of rice is strong. But it's milder than other nigori so it's easy to drink 😊.
I didn't understand the greatness of frozen sleep.... I might have to compare the non-frozen version to find out 😆.
I wish it would be more popular 🤗

The aroma is clean and dry, and the taste is strong!
I think it is better to drink it lukewarm because it has more sweetness and umami. But I prefer it cold because the umami is stronger when drunk cold. I usually drink a lot of dry sake, so maybe it feels a little sweet?
