The second day in Aizu, we went to Sake-na Tenmi for a drink. I made a reservation in advance because I heard it was recommended by Mr. Muro. Incidentally, I was chatting with two women who were sitting next to me at the counter at the sake bar where I had been drinking the day before, and I found out that both of them worked at Tenjiki, which made me realize how interesting the relationship between sake is 😊. The first glass was Mine no Yuki Junmai 🍶. The aroma on the nose is slightly sweet and calm. It is a bit ripe on the palate, but full-bodied, sweet and delicious. It was quite delicious 🍶. The third picture is of the Mine-no-snow brewery in Kitakata. I had a short chat with the sales clerk, who told me that Mine-no-Snow was the first brewery in Japan to make mead, and that they have recently been making a mead made by fermenting honey with sake yeast.

The aftertaste is also refreshing and sharp with a nice sweetness. I think it is especially good when heated. I have now completed a round of the 70-odd breweries in Hyogo Prefecture (and have 300 reports to my name)! It took me two years to complete this feat. It was a long but enjoyable journey. I will continue to enjoy Hyogo sake (and Fukui sake as well) slowly and carefully, and hope to one day become an evangelist for good Hyogo sake...

Today I am Beian Daikoku Anniversary😇. This sake is a project with Hata Sake Shop and the sake brewery 😀. I saw the brewery's installment and even though I didn't know which brewer's sake it was, I pre-ordered it 🤣. Rafa papa has already written about the detailed taste, so I'll skip it, but anyway, it was a very round sake with no curd at all😇. I guess when you let it sit in the snow slowly, it becomes such a round and beautiful sake😇. It was delicious 😀.

Junmai Daiginjo that is not like Yamada Nishiki. The sweetness is moderate. It takes some time for the flavors to develop.
