This sake was created by the young successor of the brewery, who wanted to make a light and easy-to-drink sake. He was trained at Akebono Shuzo in Tenmei. Expectations are high 😊. It has a beautiful sweetness and is very easy to drink ❗️ It seems to go well with any meal and is a versatile player. I hope more and more young sake makers are getting involved and the sake market is expanding 😆.

[I like it, ferry 😆 ] I've had a couple of sake from Watarifune so far, and they're usually good 😋, with a nice balance of umami and bitterness from the gentle sweetness. I think Naminoe is a rare brand that you don't see much in Tokyo. I bought it for the first time, and I got the impression that it is moderately sweet and refreshing. The aroma in the background is a fresh melon candy type. It is more suitable for simmered dishes than sashimi👍.

I bought this at AEON Liquor when I went to AEON Katsuragawa with a friend. I was looking for something unusual for the parking fee 😁. I've had Fudo before, but this is the first time I've had Niiyu. It has a honey-like aroma. The flavor is beautiful and gorgeous, but it's a bit too refreshing for an unfiltered, unpasteurized sake. I would like a little more umami... I think it has a lot of rice flavor 🤔.

Good evening, first series here 💁 from Niiyu. Also known as Fudo Toi brand, this is a test brew of Niiyu's frog series 🐸🐸🐸🐸🐸 Rice is undisclosed🍶. As usual, from the aroma, there is a slight melon ginjo aroma, and the taste is like drinking sweet, fresh melon juice 🍈 There is not much acidity or fizz, so it has a fruit juice feel. The third drink at my favorite yakitori restaurant was Gizaemon Natsu-damon, which I had during a break in the drinking Shinsei. This is another summer sake from my favorite Mie sake that I was very curious about. The aroma is not so strong. It has an energetic taste with a tingling sensation when you put it in your mouth. It was a very tasty sake with a good balance of refreshing sweetness and bitterness ✨.

They use a yeast called "Kyo no Koto" which was jointly developed by Sasaki Shuzo and the Kyoto City Institute of Industrial Technology. If that's the case, why don't they write it on the label? It's quite floral, but banana-like. At the end, the sourness kills it. So far, I don't think I've had a bad bottle of Fuoh.

Although from the Fushimi brewery, this sake would definitely be better suited to those who prefer San-in sake! New brand Jyuseki🪨. Sake rice "Celebration" is also a first🌾. First day. Good balance of sweetness, umami and acidity✨ Second day. Umami is rich and ⤴️ quite thick. It was also delicious heated. I'm not sure if this is a Gekkeikan group company or not. It's an authentic Kyoto-style sake.

Soba Kaiseki at Tachiaigawa Yoshidaya. We opened a bottle of Shinmasa and wanted to drink some more, so we chose a sake from Kyoto with which we have little connection. It is a sake called "Jyuseki. It has a very elegant taste, which is a testament to the rice and water used in Kyoto. It has a soft texture, with a slight sweetness and umami spreading in the mouth, and even though I was drunk on the Shinmasa, the taste remained on my tongue. We paired it with soba noodles, which matched beautifully and complemented the new soba. It was very delicious! (^^)/

After drinking Shikishima about a month ago, I became interested in Fukumochi Sake Brewery (Tenga Nishiki) who helped me with Shikishima Sake Brewery! I looked up where they sold it and was surprised to find a special distributor near me 😲. I ended up buying three different kinds! It's like a muscat with a standing aroma! The first sip gives the impression of being rich, but the mouthfeel is clear. I didn't taste much sweetness. The rich taste is followed by the umami of the rice, which is also heavy and robust. There is a slight alcohol aftertaste. The bitterness is also moderate~! If I have a chance, I'd like to try the raw sake.

For my first Hiroshima sake in a while, I chose a new Seikagami sake, my first try 😀 . I knew the name, but it was my first time drinking it, so I was excited to open the bottle🍾 I've never tried it before, so I was very excited to try it! It's a mildly dry wine with a hint of sweetness, easy to pair with food, and I love it👍. I'm not sure what to make of this. I love it!
