I bought this at AEON Liquor when I went to AEON Katsuragawa with a friend. I was looking for something unusual for the parking fee 😁. I've had Fudo before, but this is the first time I've had Niiyu. It has a honey-like aroma. The flavor is beautiful and gorgeous, but it's a bit too refreshing for an unfiltered, unpasteurized sake. I would like a little more umami... Good evening, first series here 💁 from Niiyu. Also known as Fudo Toi brand, this is a test brew of Niiyu's frog series 🐸🐸🐸🐸🐸 Rice is undisclosed🍶. As usual, from the aroma, there is a slight melon ginjo aroma, and the taste is like drinking sweet, fresh melon juice 🍈 There is not much acidity or fizz, so it has a fruit juice feel. The third drink at my favorite yakitori restaurant was Gizaemon Natsu-damon, which I had during a break in the drinking Shinsei. This is another summer sake from my favorite Mie sake that I was very curious about. The aroma is not so strong. It has an energetic taste with a tingling sensation when you put it in your mouth. After drinking Shikishima about a month ago, I became interested in Fukumochi Sake Brewery (Tenga Nishiki) who helped me with Shikishima Sake Brewery! I looked up where they sold it and was surprised to find a special distributor near me 😲. I ended up buying three different kinds! It's like a muscat with a standing aroma! The first sip gives the impression of being rich, but the mouthfeel is clear. I didn't taste much sweetness. The rich taste is followed by the umami of the rice, which is also heavy and robust. There is a slight alcohol aftertaste. The bitterness is also moderate~! If I have a chance, I'd like to try the raw sake.

Soba Kaiseki at Tachiaigawa Yoshidaya. We opened a bottle of Shinmasa and wanted to drink some more, so we chose a sake from Kyoto with which we have little connection. It is a sake called "Jyuseki. It has a very elegant taste, which is a testament to the rice and water used in Kyoto. It has a soft texture, with a slight sweetness and umami spreading in the mouth, and even though I was drunk on the Shinmasa, the taste remained on my tongue.
