After drinking Shikishima about a month ago, I became interested in Fukumochi Sake Brewery (Tenga Nishiki) who helped me with Shikishima Sake Brewery! I looked up where they sold it and was surprised to find a special distributor near me 😲. I ended up buying three different kinds! It's like a muscat with a standing aroma! The first sip gives the impression of being rich, but the mouthfeel is clear. I didn't taste much sweetness. The rich taste is followed by the umami of the rice, which is also heavy and robust. There is a slight alcohol aftertaste. The bitterness is also moderate~! If I have a chance, I'd like to try the raw sake.

This is my first time drinking Tenka Nishiki ✨This is delicious 😋It has a gentle sweetness, a good amount of gas, a moderate aroma, a subtle bitterness in the second half, and a nice sharpness👍. Today I had a seafood bowl with spring sea urchin from Okhotsk, scallops from Eruption Bay, and Miyagi Miyagi salmon! Ahhhh, delicious! ‼️

I've been wanting to try some nigori sake lately 😆. I saw it in the store yesterday, went to buy it today, and was supposed to open it tomorrow... but I couldn't wait, so I opened it today and drank it 😅! There are many nigorizakes out there, but this one is Junmai! It has a nice crackle and a nice "umami and gentle sweetness" of the rice 😻🎉. Originally I was thinking of the 3x Domu from the same brewery, but I was so taken with the Junmai that I decided to go with this one. I'm not sure if I'd be able to do that, but I'm sure I'd be able to do it.

Sake filled only with Domuro-roasted rice. Slightly effervescent. It has a rich sweetness, but the alcohol taste is a little strong at the end.... The official online store of Endo Sake Brewery is formatted like a mail order site for health foods and supplements 🤣. Maybe it tastes better at higher temperatures? Nutty and caramel type sweetness comes out.

Bouken-san told me about it before, and I've become a fan of Watashibune's new sake 😚. But it's made with 100% short-stemmed Watashibune. I think this brand is as good as my favorite Genmai which I opened just before. The aroma is like a grape🍇, and in the mouth you can feel a very thin gas and a gentle sweetness. The aroma and taste are well integrated, and the transparent flavor fades out with a slight bitterness, which is brilliant 😆. Today I paired it with a yose-nabe with agaric broth, and the complex broth of the seafood and the flavor of this sake matched so strangely that I could really linger and eat and drink forever... It's still Monday, so I had to call it quits 😅.

Nara's summer sake❣️ This is a summer version of Hyakurakumon, a famous sake of Gosho along with Kaze no Mori and Shinomine, made with rice outside the standard range and labeled on the back 😋. It looks cool and smells like melon 🍈. Refreshing, mellow, mildly dry ❣️. It has a nice sharpness and is easy to drink 😋😋. This one was given to me in return for sake I sent to my boss, and it's my first Fukuoka Prefecture sake! I didn't know what to choose when it came to Fukuoka sake, so I'm very grateful to be able to drink it in this form! It is a well-balanced and delicious sake. The most wonderful thing about this sake is that it is fire-aged, so it is hard to lose this flavor. It tastes great even after a few days. Although there is sweetness, it does not bother you too much because the main flavor is umami. What is this feeling of being able to drink without getting tired of it? It is not so much sourness, bitterness, or astringency, and it is strange that it is smooth but somehow deep and earthy. Actually, I forgot to post this post after drinking it, but I had this one for New Year's Day. This kind of aromatic and light sake was definitely a good match for Japanese dishes like Osechi. My first Fukuoka sake was a simple and good sake.

Hiduyoshi received as a souvenir from a New Year's party I have an image that Hideshiyoshi tastes better a few days after opening the bottle, and this one is no exception! It tasted hard and so-so right after opening the bottle, but after 3-4 days, the impression changed completely. From the flat taste of the past, a clear acidity has opened up along with a savoriness that comes in a jolt, and the dry base has been covered by the savoriness and acidity. This was also purchased at Oka Sake Shoten, the same place as Unjaku. The aroma is mild but unique. The rice used is Omachi from Okayama Prefecture. It has a dark mouthfeel and a bit of maturity, but as the days go by, it becomes more rounded and changes to a level where even those who are not good at it can go. However, even though it has become more rounded and easier to drink, the sweetness and strength of the Omachi can still be clearly seen, so there will be different tastes. For me, it's a very interesting sake! The first day I opened the bottle, I thought it might be too peculiar to pair with a meal. However, from the second day onwards, while maintaining its richness, it gradually becomes lighter and lighter, and is not bad as a food sake. If you roll it around in your mouth, it is a nicely aged sake, but if you drink it with gusto, you can drink it without worrying too much. Still, I want to enjoy the aged feeling of this kind of sake, so drinking it a little bit every day is good for me.
